Make the dressing in a food processor if you like, but it won't be as smooth or have that bright green hue you get when you do it in a blender.

1/4 cup basil leaves
1/4 cup parsley leaves with tender stems
1/4 cup tarragon leaves
1/4 cup mayonnaise
1/4 cup sour cream
1 tsp. finely grated lemon zest
2 Tbsp. plus 1 tsp. fresh lemon juice
2 Tbsp. extra-virgin olive oil, plus more for drizzling
1 (5-oz.) can tuna in water, drained
1 celery stalk, finely chopped
1 small shallot, finely chopped
1 garlic clove, finely grated
Kosher salt, freshly ground pepper
1/2 cup coarsely chopped mixed tender herbs (such as celery leaves, basil, parsley, and/or dill)
2 English muffins, split, lightly toasted

Steps:

  • Purée basil, parsley, tarragon, mayonnaise, sour cream, lemon zest, 2 Tbsp. lemon juice, and 2 Tbsp. oil in a blender until very smooth and pale green. Transfer dressing to a medium bowl and add tuna. Using a fork, break up tuna and incorporate into dressing. Mix in celery, shallot, and garlic; season with salt and lots of pepper.
  • Toss chopped mixed herbs with remaining 1 tsp. lemon juice in a small bowl. Drizzle with a little oil, season with salt and pepper, and toss again.
  • Build sandwiches with English muffins, tuna salad (you may have a bit extra), and herb salad.

This creamy, herby, addictively delicious sauce is not only my favorite salad dressing, but is one of my favorite dips as well. You can of course tweak the acidity with more or less lemon, as well as play with the salt and pepper, but please do not change the trio of herbs. The way the parsley and chive play against the sweet tarragon makes this unlike any other herb dressing.

Green goddess tuna salad with crispy chickpeas image

I love how robust this salad is. It can sit happily for a few hours - something important for those who are traversing back to the office and need a salad that will still be edible come lunchtime. The dressing recipe makes a little more than you need and will keep for up to one week so you can add green goddess to all manner of things from your breakfast eggs to some grilled protein at dinner.

200g tinned chickpeas, rinsed and strained
2 tbsp olive oil
1 tbsp rosemary leaves, finely chopped
250g tinned tuna, strained from oil
½ small bunch cavolo nero, finely sliced (about 2 cups)
¼ cup dill fronds
½ cup smoked almonds, roughly chopped
Green goddess dressing
1 cup mayonnaise
zest and juice of 1 lemon
¼ cup flat-leaf parsley
¼ cup basil leaves
1 celery stalk, finely chopped
2 tbsp olive oil
2 garlic cloves, chopped

Steps:

  • 1. Preheat the oven to 190C fan-forced (210C conventional). Add the chickpeas, olive oil and rosemary to a baking tray and roast until golden and crisp, about 25 minutes. You want the chickpeas to take on quite a bit of colour and look almost burnt - this means they stay nice and crisp and crunchy in your salad. 2. While the chickpeas are cooking, make your green goddess dressing by blitzing together all the ingredients in a blender. 3. Combine the tuna, cavolo nero, dill and almonds in a large bowl. Add enough dressing just to coat - you want the leaves to be coated, but not drowning. 4. Add the toasted chickpeas, season generously with salt and pepper and serve.

1 lb extra lean ground beef
1 (1 ounce) package taco seasoning mix
7 1/4 ounces packages nacho cheese flavored tortilla chips
1 head iceberg lettuce, in bite-sized pieces
7 1/2 ounces cans kidney beans, drained
2 medium tomatoes, diced
3 green onions, sliced
2 cups shredded Mexican blend cheese
1/4 cup green goddess salad dressing (secret ingredient!)

Steps:

  • Heat skillet to Med-Hi heat with small amount of oil; saute ground beef; brown, and drain well.
  • Add taco seasoning mix and follow directions of package.
  • Cool (Maybe be refrigerated for later use).
  • To assemble: Crush chips into bite-size pieces and add to salad bowl along with the meat,cheese, beans, tomatoes, lettuce, and green onions.
  • Pour dressing over all and toss to combine.
  • Serve immediately.
  • Note: May substitute 2 cups cooked cubed chicken, for beef; sprinkle taco seasoning over chicken and toss to coat.

3/4 cup prepared or homemade mayonnaise
1/4 cup sour cream
2 tablespoons thinly sliced fresh chives
2 tablespoons minced flat-leaf parsley
1-1/2 teaspoons minced fresh tarragon leaves
3/4 teaspoon finely chopped fresh basil
1 tablespoon minced shallots
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon kosher salt plus more
Freshly ground black pepper

Steps:

  • Combine the anchovies, mayonnaise, sour cream, chives, parsley, tarragon, basil, shallots, lemon juice, and the 1/4-teaspoon of salt in a blender. Puree to make a smooth dressing. Season to taste with salt and pepper. Use immediately or store, covered, in the refrigerator, for up to 2 days.
