GREEN GODDESS SALAD DRESSING

Green Goddess Salad Dressing image

This classic salad dressing includes mayonnaise, anchovies, vinegar, green onion, garlic, parsley, tarragon and chives. It can be prepared in a blender or food processor and is good served as a dressing for steamed artichokes, a seafood salad, or as a sauce over broiled fish. (If you don't have fresh tarragon, you can use 1/4 teaspoon dried, instead.)

CHEF JOHN'S GREEN GODDESS DRESSING

Chef John's Green Goddess Dressing image

This creamy, herby, addictively delicious sauce is not only my favorite salad dressing, but is one of my favorite dips as well. You can of course tweak the acidity with more or less lemon, as well as play with the salt and pepper, but please do not change the trio of herbs. The way the parsley and chive play against the sweet tarragon makes this unlike any other herb dressing.

GREEN GODDESS DRESSING

Green Goddess Dressing image

Green Goddess is a California classic. It makes a great dip for crudités and a wonderful dressing for robust lettuces like romaine hearts, but it's too thick and intense for delicate spring mixes. Although I've made the anchovies optional, I recommend them because they add depth to the flavor. If salt is an issue for you, leave them out.

Provided by Martha Rose Shulman

Categories     easy, quick, condiments

Time 15m

Yield Makes a little more than 1 1/2 cups

Number Of Ingredients 12

1 cup parsley leaves
1 cup packed watercress or spinach leaves, stemmed
2 tablespoons tarragon leaves, rinsed
3 tablespoons minced chives
1 garlic clove, roughly chopped
2 anchovy fillets, preferably salt-packed
3 tablespoons fresh lemon juice
1 tablespoon plus 1 teaspoon Champagne vinegar or sherry vinegar
1/2 cup canola oil or grapeseed oil
1/2 cup mayonnaise, preferably homemade (see note)
Kosher salt
freshly ground pepper

Steps:

  • In a blender, combine the parsley, watercress or spinach, tarragon, chives, garlic, anchovies, lemon juice, vinegar and canola or grapeseed oil. Blend until smooth, about two minutes. Add the mayonnaise, and blend again until smooth. Season to taste with salt and pepper.

SUNNY'S SPICY GREEN GODDESS BURGER

Sunny's Spicy Green Goddess Burger image

Provided by Sunny Anderson

Categories     main-dish

Time 2h25m

Yield 4 burgers

Number Of Ingredients 16

1 1/2 pounds ground chuck (80% meat, 20% fat)
1 1/2 teaspoons kosher salt
1 teaspoon ground cumin
Freshly ground black pepper
1 cup jalapeño jelly
1/4 cup fresh cilantro, roughly chopped
1/4 cup fresh dill, roughly chopped
1/4 cup fresh mint, roughly chopped
1/4 cup fresh Italian parsley, roughly chopped
2 scallions, white and green parts, finely chopped
1 jalapeño, finely chopped, seeds included
4 hamburger buns, warmed in foil over the indirect heat of the grill for 15 minutes
4 slices pepper jack cheese
Lime wedges, for spritzing
4 handfuls jalapeño-flavored kettle chips
2 avocados, mashed and seasoned with salt

Steps:

  • For the patty. In a large bowl, add the beef and gently break it up so it isn't in one big lump. High over the top, sprinkle the salt, cumin and a few nice grinds of black pepper. With your less dominant hand, make a claw or pitchfork and fold the beef over itself while turning the bowl with your other hand. The goal is to blend but not over-mix the beef. Divide into 4 equal parts and make into balls. Cover and let them rest at room temperature for 2 hours.
  • For the glaze. In a medium bowl, add the jelly, cilantro, dill, mint, parsley, scallions and jalapeno. Stir to combine.
  • To grill and glaze. Heat the grill to 400 degrees F.
  • Press or form each ball of beef into a patty slightly larger than the circumference of the buns. Place over the direct heat of the grill and cook until they release, about 4 minutes. Flip the burgers, move to the indirect heat of the grill and immediately top each with a nice spoonful of the glaze. Continue to cook until desired doneness.
  • For serving: To build the burgers, start on the bottom buns and build up. Place the cheese, grilled and glazed patty, a spritz of lime and a handful of chips on each. Smear equal amounts of avocado on the inside of each top bun. Top the burgers and serve.

GREEN GODDESS DRESSING RECIPE

Green Goddess Dressing Recipe image

This classic West Coast dressing serves double duty as a thick and creamy dip for crudités or a flavorful dressing for robust lettuces and main dish salads. The addition of anchovies or anchovy paste is close to the original, but you can leave it out of the recipe and still create a delicious (and green) herb-filled dressing. This recipe is easy to make and stores up to a week in the refrigerator, so blend a batch on the weekend and use throughout the week. Drizzle Green Goddess Dressing over grilled chicken, seafood, or steak, dress a potato salad or stir into hot rice or pasta.

Provided by Nick Wallace

Categories     Salad

Time 10m

Yield Serves 8

Number Of Ingredients 10

2 teaspoons anchovy paste (or 3 canned anchovy fillets)
1 small garlic clove, minced (about 1 tsp.)
3/4 cup mayonnaise
3/4 cup sour cream
1/2 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh tarragon
3 tablespoons chopped fresh chives
2 tablespoons fresh lemon juice (from 1 lemon)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper, plus more for garnish

Steps:

  • Place all ingredients in a blender or food processor, and process until smooth, 30 to 45 seconds. Garnish with extra black pepper, if desired. Serve as a dip, or toss with salad greens. The dressing will last a week if stored in an airtight container in the refrigerator.

  • Soak cashews in very hot water for 15-20 minutes, then drain. This step is optional if you have a powerful blender (we find raw cashews blend well in high-speed blenders).
  • To a small blender, add all ingredients and blend on high for 1-2 minutes or until smooth and creamy.
  • Taste and adjust flavor as needed, adding more salt to taste, lemon juice for acidity, or herbs for more herbal flavor. Coconut aminos enhance umami flavor / saltiness. If too thick, add slightly more water. If too thin or strong, add more cashews.
  • Enjoy on salads, in bowls, or as a dip for raw or roasted veggies. Best when fresh. Store leftovers in a sealed container in the fridge up to 3-4 days. Not freezer friendly.
