AUTHENTIC LEBANESE FATTOUSH

Authentic Lebanese Fattoush image

Fattoush is a Lebanese salad, good for hot weather. This recipe uses two unusual ingredients: sumac and purslane. Sumac, usually sold ground, is ground red berries and used in Middle Eastern, particularly Lebanese, cooking. Purslane is succulent with a lemony flavor, and makes a nice salad green. I find them at farmer's markets.

Time 20m

Number Of Ingredients 18

2 loaves pita bread
Extra virgin olive oil
Kosher salt
2 tsp sumac, divided, more as needed
1 heart of Romaine lettuce, chopped
1 English cucumber, cut in half, seeds scraped, then chopped or sliced into half moons
5 Roma tomatoes, chopped
5 green onions (both white and green parts), chopped
5 radishes, stems removed, thinly sliced
2 cups chopped fresh parsley leaves, stems removed
1 cup chopped fresh mint leaves (optional)
Juice of 1 lemon or 1 1/2 limes
1/3 cup extra virgin olive oil
1 to 2 tablespoons pomegranate molasses, optional
Salt and pepper
1 tsp sumac
1/4 tsp ground cinnamon
scant 1/4 tsp ground allspice

Using a pair of tongs, transfer the fried pita chips to a plate lined with paper towel to drain. Season with salt, pepper and sumac.
  • In a large mixing bowl, combine the chopped lettuce, cucumber, tomatoes, green onions with the sliced radish and parsley.
  • To make the dressing, in a small bowl, whisk together the lemon or lime juice, olive oil, pomegranate molasses (if using), salt, pepper and spices.
  • Pour toss lightly. Finally, add the pita chips, and more sumac if you like, and toss one more time. Transfer to small serving bowls or plates. Enjoy!

SPRING GREEN FATTOUSH

Spring green fattoush image

Savour all the flavours of spring in every bite with this elegant, seasonal salad

Provided by Good Food team

Categories     Lunch, Side dish, Starter

Time 50m

Yield Serves 6-8 as a starter or side

Number Of Ingredients 10

500g broad beans , frozen or fresh
1 cucumber
3 wholemeal pitta breads
zest and juice 1 lemon
4 tbsp olive oil
1 tsp caster sugar
20g bunch mint , smaller leaves picked, rest very roughly chopped
20g bunch flat-leaf parsley , very roughly chopped
small bunch chives , snipped
170g feta cheese , crumbled

Steps:

  • First get all the ingredients ready. Bring a pan of water to the boil, add the beans and boil for 2-3 mins until just tender. Drain, rinse with cold water to cool, then drain again. Pod the beans from their skins into a large mixing bowl, discard the skins. Halve cucumber lengthways, scrap out the seeds using a teaspoon, then slice into half-moons and throw in with the beans. Split the pittas so you have 6 thin circles of bread, then toast.
  • Whisk together lemon zest, juice, olive oil and sugar with plenty of seasoning. Pour over the beans and cucumber, add all the herbs and toss together. Tear the toasted pitta into pieces and add this to the salad with the crumbled feta. Toss together very gently - hands are best - then pile onto a platter to serve.

GREEN FATOUSH

Green Fatoush image

Provided by Nigella Lawson : Food Network

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 10

1/4 cup finely sliced scallions
2 long green chiles, seeded and cut into very fine rounds
1 head cos or romaine lettuce
1 lime, zested and juice
1 tablespoon extra-virgin olive oil
Kosher salt
2 pita breads
1 ripe avocado
1/4 cup chopped fresh cilantro leaves
1/4 cup chopped fresh mint leaves

Steps:

  • Preheat oven to 450 degrees F.
  • Put the scallions and chile slices into a bowl.
  • Discard the outer leaves of the lettuce and then tear it into pieces, adding to the bowl. Whisk the lime zest and juice and oil in a small bowl or jug and add a sprinkling of salt.
  • Open the pita breads up lengthways so that you have 4 very thin halves, and lay them on a baking sheet. Toast them in the oven for about 5 minutes to give them a bit of crunch; they will turn a golden brown color, but keep an eye on them as they might burn. Take the pita breads out and leave them to cool.
  • Halve the avocado, remove the stone and then using a spoon, scoop pieces of avocado out onto the bowl of lettuce. Dress the salad with the lime and oil dressing and add most of the chopped herbs before tossing with your hands to combine. Snip with scissors or break the crispy pita bread with your hands into rough triangles, and add most of the pieces to the salad and toss again before decanting to a serving bowl or platter. Scatter with remaining herbs and toasted pita.

FATTOUSH

Fattoush image

Fattoush is a Levantine salad made with fried pita and seasonal vegetables, such as lettuce, cucumber and tomato. The special flavor of fattoush comes from the dressing, which contains sumac and pomegranate molasses. With just the right amount of zestiness, this salad is the perfect addition to any Middle Eastern or Mediterranean meal, especially during grilling season.

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 16

3 pieces pita bread
1/3 cup extra-virgin olive oil
1 head romaine, chopped
6 radishes, thinly sliced
3 green onions, chopped
2 Persian cucumbers, diced
1 medium or 1/2 large red onion, diced (see Cook's Note)
1 red bell pepper, diced (see Cook's Note)

1 cup fresh mint leaves, chopped
1 cup fresh flat-leaf parsley leaves and tender stems, chopped
3 tablespoons lemon juice
2 tablespoons pomegranate molasses
1 tablespoon ground sumac
2 cloves garlic, minced
Kosher salt

Steps:

  • Cut the pita bread into 1 1/2-inch strips, then rotate 90 degrees and cut again so you end up with small pieces.
  • Heat 3 tablespoons of the olive oil in a large skillet over medium heat. Fry the pita until golden brown and crispy, 5 to 7 minutes. Transfer the fried pita to a plate lined with a paper towel to absorb any excess oil and set aside.
  • Place the romaine, radishes, green onions, cucumbers, red onions, peppers, tomatoes, mint and parsley in a large bowl, then gently toss together.
  • Whisk together the remaining olive oil, lemon juice, pomegranate molasses, sumac, garlic and 1 teaspoon salt in a small bowl. Drizzle the dressing over the salad and gently toss until evenly combined.
  • Add the fried pita and gently toss the salad one more time. Taste and add more salt, if needed.

GREEN BEAN, SHELL BEAN, AND SWEET ONION FATTOUSH

Green Bean, Shell Bean, and Sweet Onion Fattoush image

Fattoush is a refreshing Middle Eastern bread-and-vegetable salad. You can blanch all of the beans in the same pot: first the green beans, then the shell beans (but not the other way around, since shell beans release a lot of starch). This recipe appears in our cookbook "Martha Stewart's Vegetables" (Clarkson Potter).

Provided by Martha Stewart

Categories     Bread Recipes

Time 55m

Number Of Ingredients 11

Kosher salt and freshly ground pepper
1/2 pound green beans or haricots verts, trimmed
3/4 cup shelled fresh shell beans, such as lima or cranberry
3 pitas (each 6 inches)
Extra-virgin olive oil, for brushing
1/2 large Vidalia onion, chopped
1 English cucumber, quartered and cut into 1-inch pieces
4 ounces feta, crumbled
1/2 cup coarsely chopped fresh mint, plus more for garnish
1/3 cup coarsely chopped fresh flat-leaf parsley
Lemon-Garlic Vinaigrette

Steps:

  • Prepare an ice bath. Simmer green beans in a pot of salted boiling water until crisp-tender and bright green, about 1 minute. Transfer beans to ice bath, reserving pot of water; let beans cool, then remove and pat dry. Place in a large bowl.
  • Return water to a boil. Simmer shell beans until just tender, 18 to 20 minutes. Transfer to ice bath; let cool, then drain and pat dry. Combine with green beans.
  • Heat a grill (or grill pan) to medium. Split each pita in half. Brush both sides of pita halves with oil; season with salt and pepper. Grill pitas, turning once, until golden and crisp, about 1 minute a side. Let cool, then tear into 1-inch pieces.
  • Add onion, cucumber, feta, herbs, and pita to beans; drizzle with 1/2 cup vinaigrette and toss well to combine. Season with salt and pepper; garnish with mint. Let stand at least 10 minutes and up to 1 hour before serving.

  • 2. Cut the Lebanese breads into strips and then cut into bite-sized squares. Spread out on a large baking tray lined with baking paper. Drizzle over the oil then use your hands to spread the oil across the squares. Place in the oven and cook for 10 minutes or until golden. I love to take these to the edge – darkly crisp and brown.
  • 3. Place a frypan over medium heat. Add the oil and once hot, add the capsicum, garlic and leek. Cook for around 5 minutes or until soft. Add the coriander seeds, cumin and Aleppo pepper flakes. Cook for another minute or until fragrant.
  • 4. Scrape into a baking dish (about 25cm diameter) and add the spinach, cavolo nero and peas. Stir gently to incorporate. Scatter over the feta. Gently indent the mixture in four spots, like you are making little divots, and carefully crack an egg into each indent.

2015-09-13 I love this Fatoush recipe because it is a great way to serve a green salad with a difference. The simple addition of some herbs, chillies and lime brings this salad to life.
