THAI GREEN CURRY

Thai Green Curry image

Recipe video above. This is how to make a really great QUICK green curry by pimping up curry in a jar, OR using a homemade green curry paste! Don't skip frying off the curry paste, this makes all the difference. See Spiciness info in Note 1 (remember, Green Curry is supposed to be spicy!)

Provided by Nagi

Categories     Mains

Time 35m

Number Of Ingredients 21

4 - 6 tbsp Thai Green Curry Paste (Maesri best) OR ((Note 1))
1 quantity homemade green curry paste ((Note 1))
2 large garlic cloves (, minced)
2 tsp fresh ginger (, finely grated)
1 tbsp lemongrass paste ((Note 2))
2 tbsp vegetable oil
1 cup (250ml) chicken or vegetable broth, low sodium
400 g/14oz coconut milk (, full fat (Note 4))
1 - 3 tsp fish sauce *
1 - 3 tsp white sugar *
1/8 tsp salt *
6 kaffir lime leaves (, torn in half (Note 5))
350 g/12 oz chicken thigh (, skinless boneless, sliced (Note 6))
2 Japanese eggplants, (, small, 1cm / 2/5" slices (Note 7))
1 1/2 cups snow peas (, small, trimmed)
16 Thai basil leaves ((Note 8))
Juice of 1/2 lime (, to taste)
Crispy fried Asian shallots (, high recommended (Note 9))
Thai basil or cilantro/coriander (, recommended)
Green or red chillies slices (, optional)
Steamed jasmine rice

Steps:

  • Heat oil in a heavy based skillet or pot over medium high heat.
  • Add curry paste (and garlic, ginger and lemongrass Extras, if using) and cook for 2 to 3 minutes until it mostly "dries out" - see video. Don't breath in the fumes!!
  • Add chicken broth and coconut milk, mix to dissolve paste.
  • Curry in a jar seasonings: Add 1 tsp fish sauce, 1 tsp sugar, no salt.
  • Homemade curry paste seasonings: Add 3 tsp fish sauce, 3 tsp sugar, 1/8 tsp salt.
  • Add kaffir lime leaves. Mix then bring to simmer.
  • Add chicken, stir then lower heat to medium so it's bubbling gently. Cook 7 minutes.
  • Add eggplants, cook 5 minutes until soft.
  • Taste sauce. Add fish sauce or salt for more saltiness, sugar for sweetness.
  • Add snow peas, cook 2 minutes until a bit softened, then stir through basil and lime juice. Sauce should have reduced but will still be a be on the thin side, not thick - that's how it's should be. DO NOT keep simmering - sauce will darken.
  • Serve curry over jasmine rice with garnishes of choice.

THAI GREEN CURRY WITH BEEF AND EGGPLANT

Thai Green Curry With Beef and Eggplant image

This Thai green curry recipe features beef with eggplant and red bell pepper, but it could also be made with chicken.

Provided by Darlene Schmidt

Categories     Dinner

Time 40m

Yield 4

Number Of Ingredients 20

1 to 2 medium-size steaks
1 can good-quality coconut milk
Optional: 1/2 eggplant (cut into bite-size chunks)
1 red bell pepper (cut into bite-size pieces)
1/3 cup fresh Thai basil (or sweet basil)
1/2 cup good-tasting chicken (or beef stock )
For the Green Curry Paste:
1 stalk of fresh lemongrass (minced, or 3 tablespoons frozen prepared lemongrass )
1 to 3 green chilies (sliced)
1 shallot (sliced, or 1/4 cup diced purple onion)
4 to 5 cloves garlic
1 thumb-size piece galangal (or ginger, sliced)
1 cup fresh coriander/cilantro, (chopped, leaves & stems)
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground white pepper
3 tablespoon fish sauce
1 teaspoon shrimp paste (available by the jar at Asian food stores)
1 teaspoon brown sugar
1 tablespoon lime juice

Steps:

  • Place all green curry paste ingredients together in a food processor, blender, chopper, or pestle and mortar. Add up to 1/4 can of the coconut milk, enough to help blend ingredients (reserve the rest for later).
  • Process (or pound) well to create an aromatic Thai green curry paste. If you don't have a food processor or chopper, try using a blender, or finely mince all ingredients by hand and stir together well.
  • Heat a wok or deep-frying pan over medium-high heat.
  • Add 2 to 3 tablespoons oil and swirl around, then add the green curry paste. Stir-fry briefly to release the fragrance (1 minute), then add the beef.
  • Stir-fry briefly to cover the meat in spices (1 to 2 minutes).
  • Add the stock and bring to a boil. Stir and reduce heat to medium or medium-low. Simmer 6 to 10 minutes.
  • Set aside 1/4 cup coconut milk, reserving it for use later (the thick cream is best). Add the rest of the coconut milk to the curry, plus the eggplant (if using).
  • Stir everything together, cover, and simmer 7 to 8 minutes, or until eggplant is tender enough to pierce with a fork.
  • Add the bell pepper. Cover and simmer 2 to 3 minutes, or until everything is well cooked.
  • Remove from heat and gently stir in the 1/4 cup reserved coconut milk . Taste-test, adding more fish sauce if not salty or flavorful enough.
  • Add more lime juice if too salty or sweet for your taste. Add more sugar if not sweet enough. More chili can also be added.
  • Portion out the green curry onto serving plates or bowls.
  • Sprinkle with a generous amount of fresh basil and serve with plenty of Thai jasmine-scented rice .

GREEN CURRY PORK TENDERLOIN

Green Curry Pork Tenderloin image

Categories     Pork     Marinate     Dinner     Lime     Pork Tenderloin     Curry     Grill     Grill/Barbecue     Advance Prep Required     Bon Appétit     Dairy Free     Peanut Free     Tree Nut Free

Yield Makes 8 servings

Number Of Ingredients 24

Pork and marinade:
1/2 cup reduced-sodium soy sauce
1/4 cup fresh orange juice
2 tablespoons pure maple syrup
2 tablespoons toasted sesame oil
2 pork tenderloins (about 2 1/4 pounds total)
Cumin-spiced pumpkin seeds:
1 tablespoon vegetable oil
3/4 cup shelled pumpkin seeds (pepitas)
1/2 teaspoon cumin seeds
1 tablespoon sugar
1 tablespoon fresh lime juice
Kosher salt
Curry sauce and assembly:
3 tablespoons vegetable oil, divided
1 small shallot, chopped
1 garlic clove, chopped
1/4 cup green Thai curry paste
1 teaspoon finely grated lime zest
1 14-ounce can unsweetened coconut milk
1/4 cup fresh cilantro leaves
1 tablespoon fresh lime juice
1 tablespoon (packed) light brown sugar
Kosher salt, freshly ground pepper

Steps:

  • For pork and marinade:
  • Combine soy sauce, orange juice, maple syrup, and sesame oil in a large resealable plastic bag. Add pork and seal bag. Chill, turning occasionally, at least 8 hours or up to 1 day.
  • For cumin-spiced pumpkin seeds:
  • Heat oil in a large skillet over medium-high heat. Add pumpkin seeds and toast, shaking pan often, until seeds are brown, about 4 minutes. Add cumin seeds, then gradually add sugar, then lime juice, tossing constantly to coat seeds with melted sugar and juice. Transfer pumpkin seed mixture to a foil-lined baking sheet; spread out and let cool. Season with salt.
  • For curry sauce and assembly:
  • Heat 1 tablespoon oil in a medium saucepan over medium heat.
  • Add shallot and garlic and cook, stirring often, until softened, about 3 minutes. Add curry paste and lime zest and cook, stirring constantly, until fragrant, about 1 minute. Add coconut milk and bring just to a boil, stirring and scraping up any browned bits from bottom of pan; reduce heat and simmer, stirring occasionally, until mixture is reduced by half, 10-15 minutes. Remove from heat and let cool.
  • Transfer coconut milk mixture to a blender. Add cilantro, lime juice, brown sugar, and 2 tablespoons water and blend until smooth. With motor running, drizzle in remaining 2 tablespoons oil and blend until creamy. Season curry sauce with salt and pepper, return to pan, and cover to keep warm.
  • Prepare grill for medium-high heat. Remove pork from marinade; pat dry. Grill pork, turning often, until an instant-read thermometer inserted into the center registers 140°F, 15-20 minutes. Let rest 10 minutes.
  • Slice pork and serve with curry sauce and cumin-spiced pumpkin seeds.
  • DO AHEAD: Cumin-spiced pumpkin seeds and curry sauce can be made 1 day ahead. Store pumpkin seeds airtight at room temperature. Cover and chill curry sauce.

1 lb Thai apple eggplants (see cooks' note, below)
2 tablespoons to 1/4 cup vegetable oil
1/4 to 1/2 cup Thai red curry paste
1 1/2 lb pork tenderloin, halved lengthwise, then sliced crosswise 1/4 inch thick
1/3 cup julienne strips peeled fresh or frozen grachai (lesser galangal or wild ginger; thawed if frozen) or drained bottled grachai, rinsed, or ginger
