This casserole is also great when made with fresh long green chiles. Makes a wonderful brunch dish, but we also have it for lunch quite often.

2 (7 ounce) cans whole green chile peppers, drained
1 ½ cups shredded Cheddar cheese, divided
⅓ cup milk
4 eggs, lightly beaten
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x12 inch baking dish.
  • Line the bottom of dish with green chiles. Sprinkle with 1/2 cup shredded cheese. Repeat layers twice more. In a medium bowl, whisk together milk and eggs. Season with salt and pepper. Pour egg mixture over chiles and cheese.
  • Bake in preheated oven for 25 to 30 minutes, or until filling is set. Let stand 5 to 10 minutes before serving.

2 large sweet onions, halved and thinly sliced
4 tablespoons packed brown sugar, divided
1 tablespoon paprika
1-1/2 teaspoons salt
1 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon pepper
1 boneless beef chuck roast (about 3 pounds)
2 tablespoons canola oil
1 can (28 ounces) green enchilada sauce
Mashed potatoes, optional

Steps:

  • Place onions and 3 tablespoons brown sugar in a 5- or 6-qt. slow cooker. Combine remaining brown sugar and the next 6 ingredients; coat beef with mixture., In a large skillet, heat oil over medium-high heat; brown beef, 1-2 minutes on each side. Transfer to slow cooker; pour enchilada sauce over beef. Cook, covered, on low until beef is tender, 7-9 hours. Remove beef; shred meat with 2 forks. Return to slow cooker; heat through. If desired, serve over potatoes.

This is a recipe that's a real winner with the kids! A baked, cheesy casserole with ground beef, corn tortillas and green chile peppers in chicken soup.

1 pound ground beef
8 (6 inch) corn tortillas
1 small onion, diced
1 pound processed cheese food, shredded
1 (4 ounce) can green chile peppers, chopped
1 (10.75 ounce) can condensed cream of chicken soup
½ cup milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a medium sized casserole dish.
  • In a medium skillet over medium heat, cook the ground beef until evenly browned; drain fat.
  • Place half of the tortillas on the bottom of the prepared casserole dish and spread with half of the onion, cheese, ground beef and chiles. Layer with the remaining tortillas, onion, half of the remaining cheese, ground beef and chiles.
  • In a medium bowl, dilute the soup with milk and pour over the top of the casserole. Bake in the preheated oven for 30 minutes. Sprinkle with the remaining cheese and bake for another 5 to 10 minutes, or until the cheese has melted.

Green Chilies and Beef Bake Over Greens image

Anyone who has lived in Memphis and eaten at Pancho's may recognize this. This is my version of their Pancho Verde. It was my favorite thing there and once I moved away I tried to recreate it. The dressing for this recipe is good on tacos as well just a salad. When making the salad to put this casserole on, keep it simple. It's purpose is to catch the delicious drippings from the casserole and the dressing.

THE CASSEROLE
1 pound(s) ground beef
1/2 cup(s) chopped onion
1/2 teaspoon(s) ground cumin
1/2 teaspoon(s) dried oregano leaves
- salt and pepper
2 can(s) whole green chilies, full size 14 oz cans
1 1/2 cup(s) grated monterey jack and colby cheese
THE DRESSING
2/3 cup(s) light oil
1/3 cup(s) white vinegar
1/2 teaspoon(s) dried oregano
1/3 cup(s) sugar
1/4 cup(s) yellow mustard
1/2 teaspoon(s) dried oregano leaves
1/2 teaspoon(s) celery seeds
SALAD GREENS
- your favorite lettuce greens, tomato, radishes, avocado

Steps:

  • Place all of the dressing ingredients in a jar and shake until sugar is dissolved. Can be made ahead and stored in the refrigerator. It's great on just a salad or tacos. You'll have more than you need for this recipe.
  • Preheat oven to 350
  • Brown and break up the ground beef. Add the onions towards the end and saute until tender.
  • Drain the excess fat.
  • Add cumin, oregano and salt and pepper. Stir on low heat for a minute to release the flavor of the spices and remove from the heat.
  • Arrange 1 can of the green chilies in a layer in the bottom of an oven proof dish.
  • Spoon the ground beef over the chilies.
  • Layer the second can of chilies over the beef.
  • Sprinkle with the cheese.
  • Bake at 350 for approximately 30 minutes until the cheese is all melted.
  • Arrange salad ingredients on a plate or shallow bowl and top with a generous helping of the casserole. Drizzle with the dressing. The heat from the casserole will slightly wilt the greens.
