1 (1 1/8 ounce) package hidden valley fiesta ranch dip mix
1 pint light sour cream
1 (4 ounce) can diced green chilies, drained
1 (4 1/4 ounce) can chopped black olives, drained
1/2 cup finely shredded cheddar cheese
chips, vegetables or cracker

Steps:

  • Combine dip mix with sour cream.
  • Stir in chiles, olives and cheese.
  • Serve with chips, vegetables or crackers.

This green chile dip is creamy and delicious. It is made with two kinds of cheese, spices and mild green chiles. Green Chile Dip is a great appetizer to bring to a party and you can whip it up fast when you have unexpected company.

16 oz cream cheese (softened)
8 oz sharp cheddar
2- 4.5 oz cans mild chopped green chiles
1/2 tsp garlic powder
1/4 tsp cumin
1/4 tsp salt
1/4 tsp black pepper

Steps:

  • In a large bowl, combine the cream cheese, 1 cup cheddar cheese, green chiles, and all spices in a large bowl. Mix thoroughly until everything is combined.
  • Spread in a pie pan or shallow baking dish and top with the remaining cheese.
  • Bake at 350˚F for 20 minutes or until the dip is heated through and cheese is melted.

Super easy dip, everyone will love. You control the heat. I have used it for vegetables and chips, I have even used it on chicken and fish. I got this recipe from friends in NM where I worked, years ago and have just re-discovered it. It is as big a hit now as it was then.

1 pkg ranch dip seasoning
3 frozen hatch green chilis
16 oz sour cream

Steps:

  • 1. Thaw green chilis, and clean if they are not already cleaned. You can use the seeds if you want more heat or remove. Finely chop.
  • 2. Mix the seasoning mix with the sour cream and add the chopped green chilis.
  • 3. This needs to set for about an hour, to allow the flavors to blend.
