- In a large bowl, beat eggs on medium-high speed for 3 minutes or until light and lemon-colored. Combine the flour, baking powder and salt; gradually add to eggs and mix well. Stir in the cheeses and chiles. , Pour into a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before serving.,

I found this recipe on a trip to Southern California. Since then, this versatile dish has become one of my family's favorites. I serve it as a special breakfast, for brunch or even Sunday night supper. Sausage or ham goes well with this snappy dish...and don't forget some corn muffins!

- In a large bowl, beat eggs well. Stir in next five ingredients. Add green chiles. Pour into a greased 8-in. square baking pan. Bake at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Serve immediately.

GREEN CHILE CHICKEN HAND PIES
These Green Chile Chicken Hand Pies are perfect for a casual chicken dinner or even a party appetizer. Crispy dough stuffed with flavorful shredded chicken filling. They're so good I'm making extra to stock up!

Steps:
- Preheat the oven to 400 degrees.
- Place the shredded chicken, cheese, peppers and chile sauce in a large bowl and mix to combine.
- Roll out one sheet of the puff pastry on a cutting board dusted with a little flour until you have a 13″ x 13″ square.
- Cut the puff pastry into 4 equal squares.
- Fill each square with about 1/2 cup of the chicken filling.
- Brush the edges of each square with egg wash. Take the 2 top corners and fold them down to meet in the middle, and then do the same with the bottom corners so that all four corners meet together in the middle. Seal the edges together well and then brush the top with egg wash.
- Repeat with the other 3 squares and place on a baking sheet.
- Follow the same instructions for the other sheet of puff pastry so that you have 8 hand pies total.
- Bake for 25 minutes until browned on top, remove from the oven and let cool for 2-3 minutes before serving.

CHILI EGG PUFF
I snagged this wonderful dish from Missouri's Innkeepers book. I used 8 ounces mixed cheddar and Monterey Jack and 8 ounces of Monterey Jack. I baked it about 45 minutes.

- Butter a 9 x 13 x 2 inch glass baking dish with 1 tablespoon butter. Mix remaining ingredients together in large mixing bowl. Pour in baking dish, then bake uncovered at 400 for 15 minutes. Reduce heat to 350 degrees and bake for another 30 minutes, until slightly browned. Cut into squares. Top it off with salsa or guacamole and serve with mimosas!

- Preheat oven to 350 degrees F. Lightly brush the inside of four large ramekins with some of the butter and set the ramekins on a sheet pan.In a small bowl, combine flour baking powder, salt and white pepper.In a larger bowl, beat the eggs well; add green chilies and juice, cottage cheese, and remaining butter. Stir well to combine. Add flour mixture and gently stir until flour is incorporated. Fold in most of the cheese, leaving a bit to sprinkle on top.Pour mixture equally in ramekins and sprinkle with remaining cheese. Bake for about 40 minutes until well puffed and browned. GREEN CHILE-CHEESE PUFF ADAPTED FROM THE GOURMET COOKBOOK

Steps:
- Wash and dry green chiles. Place under a pre-heated broiler about 2 inches from the element. Watch carefully. Turn frequently until all sides are charred and beginning to blister, about 5 minutes. Transfer the roasted chiles to a bowl, cover tightly with plastic wrap and let them steam until cool enough to handle. Peel, cut off the stems and remove and discard seeds. Chop roughly into about 1/2 inch pieces.
- Preheat oven to 350 degrees F.
- Oil a large pie plate. (The original recipe called for a 9-inch dish. Mine overflowed so I used a 12-inch stoneware pan.)
- In a small bowl, whisk together dry ingredients and set aside.
- In the bowl of a stand mixer, beat eggs with the whisk attachment at high speed until doubled (about 3 minutes). (If using a hand mixer, this will take about 12 minutes.)
- Add cooled butter, cottage cheese and grated cheese. Beat well.
- Stir in chiles. Pour into oiled pie plate.
- Bake until top is puffed and golden brown and a wooden pick inserted in the center comes out clean, 30-35 minutes.
