- In a small bowl, mix the first 7 ingredients until blended. Spread over half the bread slices. Top with tomato and remaining bread., Brush outsides of sandwiches with melted butter. In a large cast-iron or other heavy skillet, toast sandwiches in batches over medium-low heat until golden brown and heated through, 3-4 minutes on each side.

- 1. PREPARE INGREDIENTS FOR ASSEMBLY:
- 2. COOK BEEF PATTIES: Season and seperate the ground beef into 4 patties and cook to your preference. Remove from heat, cover to keep warm and set aside.
- 3. SAUTE ONIONS AND GREEN CHILIS: Heat 2 Tbsp. butter in skillet and sauté onions until slightly browned; add chopped green chilies and cook for @ 2 more minutes on medium-low heat. Remove to a bowl and set aside.the rest of the ingredients.
- 4. PREPARE THE BREAD: Butter both sides of the 1 inch thick slices of bread and toast on a griddle.
- 5. ASSEMBLE: Spread one side of each piece of bread with mayo. Layer ingredients: 1 slice of toasted bread, mayo side up 1 slice of cheddar cheese One beef patty Sautéed onions and green chilis The other beef patty 1 slice of Monterrey Jack cheese The other slice of toasted bread, mayo side down Repeat assembly for the other sandwich.
- 6. TO MELT THE CHEESES: Place the sandwich back on the griddle and cook for @ 2 minutes; flip the sandwich and cook for another 2 minutes until cheeses are melted.

- In a large bowl, combine the ground chicken, green chiles, green onion, jalapeno, chili powder, cumin, garlic powder, and salt. Divide and shape into 4 patties.
- Meanwhile, preheat the grill to medium and prepare any desired burger toppings.
- Lightly brush the grill with canola oil. Grill the burgers for 5 minutes, flip, then grill for an additional 3-5 minutes, until cooked through. During the last few minutes of cooking, top the burgers with pepper jack cheese and let melt. If desired, toast the buns on the grill as well.

- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9 inch square baking dish (or similar size) with cooking spray.
- Make a deep cut into the side of each chicken breast half to form a pocket or 'purse'. Stuff 1/4 cup of cheese and about 1 tablespoon of the chilies onto each one. Close, and secure with a toothpick so that the cheese does not escape while in the oven. Place the stuffed chicken into the baking dish. Season with Fajita seasoning, and then sprinkle the remaining cheese and chilies over the top.

- Breadcrumb Topping:.
- In a small mixing bowl, combine the melted butter, bread crumbs, and garlic. Season to taste with salt. Set aside.
- Green Chili Crema:.
- In a medium saucepan, heat the cream and add the chiles, tomatillo, and garlic. Simmer gently for 2-4 minutes and then remove from the heat. Let cool.
- Pour mixture into a blender and liquefy. Add the green onion and liquefy. Season with salt to taste.
- Pour the crema through a single mesh strainer or sieve. The crema should be very smooth.
- Mac & Cheese:.
- Coat an 8- to 10-cup capacity, ovenproof casserole with vegetable spray or a dab of butter; or coat six 1½-cup capacity stoneware ramekins.
- Bring a large pot of water to a rapid boil, add 1 teaspoons of salt, return to a boil, and add the pasta. Cook until still al dente (but not until until fully tender).
- Remove the pasta pot from the stove and carefully drain in a large colander. Run cold water over the pasta to cool it to room temperature.
- Add pasta to a large mixing bowl. Add the cheddar, queso Asadero, and Parmesan and toss. Set aside.
- In a medium saucepan, melt the butter. Add the onions and peppers and saute until just beginning to soften.
- Add the corn and stir to coat with butter. Stir in the flour and cook without browning for two minutes.
- Slowly pour in the Green Chile Crema and whisk constantly while bring the sauce to a simmer. Simmer, whisking continuously, for 2 minutes. Season to taste with salt and pepper.
- Pour the sauce over the pasta and cheeses in the bowl. With a large spatula, fold to combine.
- Spoon into the prepared casserole, mounding slightly at the center. Sprinkle on the breadcrumb topping.
- Bake at 350º 30-40 minutes for a large casserole (or 10-15 minutes for individual ramekins), or until heated through and just bubbling. (High heat or excessively long cooking time may curdle the cheeses.).
- Broil for a minute or two to finish browning the top.

- Prep all of your ingredients for assembly.
- Heat up a cast iron griddle or skillet over medium low heat.
- Place a touch of butter on the hot griddle. It should sizzle and melt. Place one slice of bread on the griddle to soak up the butter. Repeat with the other slice of bread.
- On top of one slice of bread place the sharp cheddar, onion, green chile, cilantro, and avocado. On the other slice place the mild cheddar and turkey. Top with the second slice of bread, buttered side out.
- When the cheese starts to melt, place the bread with the turkey (buttered side out) on top of the other slice.
- Turn the heat up to medium and grill the sandwich on both sides until the bread is toasted and cheese is melted.
