This is a super-easy weeknight recipe with Mexican flair. Server with Spanish rice, refried beans, and warm tortillas!

4 boneless, skinless chicken breasts
1 ½ cups shredded pepperjack cheese
1 (4 ounce) can diced green chile peppers, drained
1 tablespoon dry fajita seasoning

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9 inch square baking dish (or similar size) with cooking spray.
  • Make a deep cut into the side of each chicken breast half to form a pocket or 'purse'. Stuff 1/4 cup of cheese and about 1 tablespoon of the chilies onto each one. Close, and secure with a toothpick so that the cheese does not escape while in the oven. Place the stuffed chicken into the baking dish. Season with Fajita seasoning, and then sprinkle the remaining cheese and chilies over the top.
  • Bake uncovered for 30 minutes in the preheated oven, until the chicken juices run clear, and cheese is melted and lightly browned.

1 (16 ounce) package elbow macaroni
3 cups heavy whipping cream
2 cups shredded Mexican cheese blend
2 cups shredded pepper Jack cheese
2 (4 ounce) cans chopped green chilies
½ cup Greek yogurt
3 tablespoons all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking pan with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
  • Combine heavy cream, Mexican cheese, pepper Jack cheese, green chiles, Greek yogurt, flour, salt, and black pepper in a large bowl. Add the cooked macaroni and stir well. Pour into the prepared baking pan.
  • Bake in the preheated oven until cheeses are melted, about 20 minutes. Turn on the oven's broiler. Broil until cheese on top is nicely browned, about 5 minutes more.

I wish I could take credit for this one, but it's a winning recipe from the HEB Central Market recipe contest for hatch green chilies. Now it may be a little difficult to describe this dish and by looking at it, it may be a little difficult to imagine how it all comes together, but trust me: This is incredibly delicious.

1 lb elbow macaroni
2 tablespoons butter
3/4 cup chicken broth
8 tomatillos, husked and chopped
6 New Mexico green chilies, roasted, peeled, seeded and chopped (Hatch preferred, can use Anaheim)
1 medium white onion, chopped
2 garlic cloves, minced
1/2 cup cilantro leaf, loosely packed
1 teaspoon salt
1 tablespoon vegetable oil
1 1/2 cups half-and-half
2 cups monterey jack cheese, shredded
1 cup white cheddar cheese, shredded
4 ounces cream cheese, cubed
2 cups cooked chicken breasts, shredded (rotisserie chicken works fine)
3/4 cup tortilla chips, crushed
2 tablespoons butter, melted
1/2 cup pecans, chopped
2 cups monterey jack cheese, grated

Steps:

  • Cook pasta until al dente and drain. Butter 12-inch cast iron skillet.
  • Heat broth with tomatillos and Hatch chiles and cook for 10 minutes. Transfer to food processor and pulse. Add onion, garlic, cilantro and salt.
  • Heat oil in saucepan. Add tomatillo mixture and cook over medium-low heat for six minutes. Stir in half and half and cheeses until heated through. Toss in pasta and chicken and place in cast iron skillet.
  • Mix last four ingredients for topping and spread over pasta mixture. Place skillet under broiler for 15 minutes until golden brown.

1/4 cup diced poblano chile
1/4 cup diced red bell pepper
1/4 cup diced red onion
1 tablespoon minced garlic
1/2 cup sweet corn kernels
2 cups cooked elbow macaroni, al dente
1/2 cup roasted, peeled and pureed poblano chile
3/4 cup heavy cream
1/2 cup grated hot pepper Jack cheese
Kosher salt and cracked black pepper, to taste

Steps:

  • Heat the corn oil in a heavy pan over high heat and saute the diced poblano chile, red bell pepper, red onion, and garlic until just tender. Add the corn kernels and saute quickly. Add the macaroni, poblano puree, cream, and cheese. Stir until all the ingredients are thoroughly mixed. Season to taste and serve.

1 cup packed fresh breadcrumbs or 3/4 cup dried panko breadcrumbs
1/4 cup unsalted butter

1 cup roasted green chili pepper, chopped
1 cup whole milk or 1 cup goat's milk
1/2 cup buttermilk or 1/2 cup additional goat's milk
3/4 teaspoon salt (to taste)
6 ounces creamy fresh goat cheese, garlic-flavored if you wish
4 ounces havarti-style goat meat or 4 ounces cow's milk cheese, grated
6 ounces aged cheddar cheese, grated
12 ounces elbow macaroni, cooked according to package directions

Steps:

  • Preheat oven to 375 degrees. Butter shallow, medium-to-large baking dish.
  • Prepare breadcrumbs, first melting butter in small skillet over medium heat. Stir in bread crumbs and toast until golden, stirring occasionally. Scrape bread crumbs out of skillet and reserve.
  • Prepare cheese sauce, first melting butter in large, heavy saucepan over medium-low heat. Stir flour into butter gradually (so it doesn't develop lumps).When flour is incorporated, mix in onion and cook an additional 2 to 3 minutes, stirring frequently. Add green chile and any juice; cook until heated through. Raise heat to medium-high and gradually whisk in milk, buttermilk, and salt. Bring mixture to a boil and continue to cook until lightly thickened, stirring occasionally (about 5 minutes). Stir in creamy fresh goat cheese until melted into sauce.
  • Remove sauce from heat and immediately mix in remaining cheeses, stirring until melted. Toss macaroni with cheese sauce and spoon into prepared baking dish.
  • Scatter bread crumbs over macaroni and cheese sauce. Bake about 30 minutes, until heated through and golden-brown and crunchy on top.
