SOY GLAZED GREEN BEANS
Steps:
- Bring a large pot of water to a boil and season generously with salt. Add the green beans and blanch until crisp-tender, 2 to 3 minutes. Immediately transfer to an ice bath to stop the cooking, and then remove to a baking sheet lined with paper towels or a cooling rack to drain.
- In a large saute pan over medium-high heat, add the canola oil and butter. When the butter is melted, add the garlic and stir until fragrant, 1 to 2 minutes. Add the green beans, soy sauce, sesame seeds, and black pepper and saute until the sauce reduces slightly and thoroughly coats the green beans, being careful not to overcook beans.
- Transfer to a serving dish and serve hot.
SESAME GREEN BEANS
I had always been indifferent to green beans... until I tried this recipe, given to me by a friend. For such a simple dish, you will be surprised at how much flavor this has! Broccoli is equally delicious prepared this way.

JAPANESE-STYLE SESAME GREEN BEANS
I discovered this dish at my mother-in-law's house during a family holiday buffet. Her being Japanese, she had many friends who brought wonderful Japanese dishes, and this was and has remained one of my favorites. It's light and fresh any time of the year.

- Bring a pot of water to a boil. Even if your sesame seeds are toasted/roasted, it’s good to toast them again in a non-greased frying pan for a couple of minutes, gently jiggling the pan. Be careful not to burn them.
- With a pestle and a mortar (or spice grinder), grind the sesame seeds, leaving some seeds uncrushed to add texture to the sauce.
- Add soy sauce and sugar and mix it all together. The dressing looks more like a paste than dressing. Set aside.

- Make the dressing for the green beans by adding the mayo to a bowl along with the lemon juice, 1.5 teaspoons tamari, ½ teaspoon sesame oil, sambal, mustard, ¼ teaspoon salt, and a couple cracks of pepper. Mix well and check for seasoning, you may want more spice or lemon juice. Set aside.
- For the green beans, pre-heat a large non-stick pan just below high heat for 2 minutes with 2 teaspoons of oil. Add the green beans and cook for 7-8 minutes, until blistered on outside, but still crunchy. Add the onions, garlic, pecans and cook for 1 minute. Turn the heat down to medium and add 1.5 tablespoons of tamari, ½ teaspoon of sesame oil, and a ¼ teaspoon of salt to the pan and cook for 30 seconds so the beans can steam. Remove from heat and transfer to a large bowl. Once the beans have cooled slightly add enough dressing to coat, and enjoy!
