SESAME GREEN BEANS

Steps:
- Steam green beans covered in 1/2-inch boiling water for 2 minutes. Transfer beans to a colander and run under cold water. Drain well.
- Heat a wok shaped skillet or large nonstick frying pan over high heat. Go once-around-the-pan with wok or vegetable oil, add several drops sesame oil, and crushed pepper flakes. The pan will smoke. Add beans and stir-fry for 2 minutes. Add sesame seeds and coarse salt and toss to coat beans evenly.
GREEN BEANS WITH MAGIC SAUCE
Steps:
- Add olive oil to a large saucepan over medium heat. Add green beans and saute, until just tender, about 3 minutes. Season lightly with salt to taste and remove from heat.
- Add soy sauce, tahini, honey, sesame oil, red pepper and garlic to a small bowl and mix until thoroughly combined. Drizzle mixture over beans and lightly toss to combine. Plate and serve.
JAPANESE-STYLE SESAME GREEN BEANS
I discovered this dish at my mother-in-law's house during a family holiday buffet. Her being Japanese, she had many friends who brought wonderful Japanese dishes, and this was and has remained one of my favorites. It's light and fresh any time of the year.

- Warm a large skillet or wok over medium heat. When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet. Stir the beans to coat with oil. Cook until the beans are bright green and slightly browned in spots, about 10 minutes. Remove from heat, and stir in soy sauce; cover, and let sit about 5 minutes. Transfer to a serving platter, and sprinkle with toasted sesame seeds.

GOMA-AE GREEN BEANS - JAPANESE GREEN BEANS WITH SESAME DRESSING
Easy and very tasty Japanese vegetable dish. Serve as a side dish or if you are like me, eat a bowl of it with freshly cooked short grain rice! This dressing can be used for other veggies, such as broccolies and asparagus.

Steps:
- For the dressing, dry roast sesame seeds in a frying pan for about a couple of minutes, gently jiggling the pan. Careful not to burn them.
- With a pestle and a mortar, partially grind the sesame seeds.
- In a large bowl, mix together ground sesame seeds, soy sauce, sugar, and a pinch of salt.
- Cut the green beans if they are too long. Cook the green beans by boiling until desired tenderness is reached. Drain and briefly run them under running water so that the beans stay green.
- While the green beans still warm, toss them in the sesame dressing.
- The dressing looks more like a paste than dressing but that's exactly how you want it to be, otherwise when mixed with the green beans, the dressing gets too runny and the green beans won't taste as nice.

- In a large fry pan, add sesame and heat. Stir occasionally until the sesame turned brown. Be careful, it easy to burn.
- grain the cooked sesame until it is almost paste. Add soy sauce, sugar and Mirin. This is sesame dressing.
- Boil water and add green beans. Cook for 2 or 3 minutes. Drain green beans and cool it to room temperature.
- Mix green beans and sesame dressing.

- In a small bowl, whisk together vinegars, soy sauce, garlic, ginger root, and sesame oil. Add canola or vegetable oil in a stream, whisking, and whisk until emulsified. Season dressing with salt and pepper.
- In a small dry skillet toast sesame seeds over moderate heat, stirring, until golden and transfer to a small bowl.

GREEN BEANS WITH SESAME-MISO DRESSING
Green beans (or almost any other vegetable for that matter) gain an exciting twist from this miso-based dressing. You can find miso (see page 123) at well-stocked supermarkets and Asian markets; red miso (which is actually brown) is most often used in this dressing, but you can also use white. If you cannot find miso, see the variation, which is worth trying in any case.

- Bring a large pot of water to a boil and add salt. Cook the green beans just until tender, about 3 minutes, drain, and rinse under cold water (better still, plunge them into a bowl of ice water) to stop the cooking. Drain again and set aside.
- Whisk the sugar into the mirin until it is dissolved; stir in the sesame seeds and miso until well combined. Toss with the green beans until well coated, then serve or let stand for up to an hour before serving.
- Substitute 1 tablespoon soy sauce and 1 teaspoon honey for the miso.
