Green Beans with Vinaigrette image

These fresh green beans help balance out the richness of the rest of the Thanksgiving meal.

2 pounds green beans, stem ends trimmed
2 tablespoons extra-virgin olive oil
1 tablespoon white-wine vinegar
1 teaspoon Dijon mustard
1 teaspoon coarse salt
1/4 teaspoon ground pepper

Steps:

  • Bring 1 inch of water to a boil in a large pot fitted with a steamer basket. Fill a large bowl with ice water; set aside.
  • Place green beans, stem ends trimmed, in basket. Cover; steam until crisp-tender, 5 to 8 minutes. Plunge beans in ice water. When cool, drain; pat dry with paper towels. Transfer to a large bowl.
  • In a small bowl or jar, whisk or shake extra-virgin olive oil, white-wine vinegar, Dijon mustard, coarse salt, and ground pepper until thickened and combined. Pour over beans; toss to coat.

2 pounds green beans, trimmed
3 tablespoons white wine vinegar
1/2 teaspoon sugar
2 shallots, thinly sliced
3 tablespoons dijon mustard
1/3 cup extra-virgin olive oil
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to boil. Add the green beans and cook until just tender, 2 to 3 minutes. Transfer to a bowl of ice water using tongs, pushing the beans down to submerge them. Let cool completely, about 5 minutes, then drain and pat dry.
  • Meanwhile, whisk the vinegar, sugar and 1 teaspoon salt in a large bowl. Add the shallots and stir to coat. Let sit until the green beans are ready.
  • Whisk the mustard into the shallot mixture, then gradually add the olive oil, whisking constantly, until smooth and thick. Add the green beans and toss to coat. Season with salt and pepper.

This is an easy and delicious salad for summertime. Especially when the green beans are in their peak season. This recipe can be made using my Herbal Tarragon Vinegar #2882.

3 lbs green beans
1/2 cup low-fat mayonnaise
1/3 cup herbal tarragon vinegar (Herbal Vinegar with Tarragon)
1/4 teaspoon salt
1 teaspoon prepared mustard
1/2 teaspoon pepper
1 red onion, thinly sliced
freshly chopped tarragon, for garnish (optional)

Steps:

  • In a saucepan over high heat in 1 inch of water, heat green beans to boiling.
  • Reduce heat to low, cover and simmer 5-10 minutes or until green beans are tender crisp; drain.
  • In a bowl combine the mayonnaise, tarragon vinegar, salt, mustard and pepper; mix well.
  • I like to put the green beans and sliced onions in a large zip-lock bag (less clean up) along with the tarragon dressing mixture, fumbling for dressing to coat green beans.
  • If you don't have a large zip-lock bag you can place the green beans and sliced onions in a large dish and toss to coat with the tarragon dressing.
  • Cover and refrigerate 2 to 3 hours hours for flavors to blend before serving.
  • Garnish with freshly topped tarragon.
  • Serve and Enjoy!

1 tablespoon lime juice
1 tablespoon sherry wine vinegar
1 pinch cayenne pepper
1/4 teaspoon salt
1 teaspoon finely chopped fresh tarragon
3 tablespoons extra virgin olive oil

Steps:

  • Bring a large pot of salted water to a boil. Add the green beans and cook until just tender, 3 to 5 minutes.
  • Meanwhile, in a bowl, combine the lime juice, vinegar, cayenne pepper, salt, and tarragon.
  • Whisking constantly, slowly add the oil in a thin, steady stream until emulsified.
  • Drizzle the vinaigrette over the beans before serving. Serve warm or at room temperature.
  • Make-Ahead Note: This dish can be partially prepared up to 2 days in advance. Blanch the green beans by boiling until tender. Plunge them into an ice bath to stop the cooking. Drain and refrigerate, covered, until ready to add the vinaigrette. Cook the green beans until heated through.

  • In a mixing bowl, whisk together the vinegar, mustard, shallots, and salt and pepper. Slowly add the oil in a stream and whisk to mix well. Add the tarragon and gently stir. Adjust seasonings and tarragon, to taste.
  • Heat a flat nonstick pan over medium heat. Toast the almond slices in the pan, stirring occasionally, until slightly toasted. They should take 3 to 4 minutes. Spread the toasted nuts out on a dry towel to cool. Chop the nuts into smaller pieces, once cooled, if desired.
  • Cut the green beans into approximately 2 inch pieces. Place in a vegetable steamer over boiling water and steam them until al dente (about 5 minutes, more or less). Time will vary based on the freshness of the beans and your preferences as to firmness. Alternatively, you can boil them gently until al dente (which should take less time).
  • Drain the beans in a colander and immediately place in a serving bowl. Toss with the dressing while still warm. Top with the toasted almond pieces and serve.
