GREEN BEANS WITH GINGER AND GARLIC

Green Beans With Ginger and Garlic image

Here is a recipe for fresh green beans, boiled just until barely tender and bright green, then tossed in a pan with minced garlic and ginger. The beans can be cooked a day ahead, leaving nothing more to do before the meal than to assemble everything over high heat.

Provided by Julia Moskin

Categories     easy, quick, side dish

Time 20m

Yield 10 servings

Number Of Ingredients 5

Salt
2 1/2 pounds green beans (French-style slim haricots verts work especially well), trimmed
4 tablespoons vegetable oil
1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
4 medium-size garlic cloves, minced

Steps:

  • Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.)
  • When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat. Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic. Sprinkle with salt, and remove to a serving dish. Repeat with remaining oil, beans, ginger and garlic. Serve.

GINGER BUTTER SAUTEED GREEN BEANS

Ginger Butter Sauteed Green Beans image

We blanch the beans before sauteing. This means to plunge fresh green beans into boiling salted water, leave for 1 to 2 minutes, and then plunge into icy water to stop the cooking. This makes them crisp and bright green. You can blanch the beans, cool, and drain them a day in advance. Just keep them covered in the refrigerator.

Provided by Adam and Joanne Gallagher

Categories     Side, Vegetable

Time 15m

Yield Makes 6 to 8 servings

Number Of Ingredients 4

CARAMELIZED GREEN BEANS

Caramelized Green Beans image

Recipe excerpted from Food Between Friends by Jesse Tyler Ferguson and Julie Tanous. A longer-than-you-might-expect cook time in the skillet as well as some sugar caramelizes green beans to make them irresistible.

Provided by Jesse Tyler Ferguson and Julie Tanous

Time 55m

Number Of Ingredients 9

3 tablespoon unsalted butter
1.5 pound green beans, trimmed
1 small shallot, halved
3 garlic cloves, smashed
1 1-inch piece of ginger, peeled and halved
0.5 teaspoon dried dill
Kosher salt and freshly ground black pepper
0.75 teaspoon sugar
Finely grated zest and juice of 1/2 of a lemon

Steps:

  • In an extra-large stainless-steel or cast-iron skillet melt butter over medium until bubbling. Add green beans and toss well to coat. Add shallot, garlic, ginger, and dill. Season with a big pinch of kosher salt and freshly ground black pepper. Reduce heat to medium-low and cook, tossing frequently, until beans are darkened in color, slightly wilted, and caramelized, 35 to 40 minutes. Some of the green beans will be darker and softer than others; that's okay.
  • Sprinkle in the sugar and cook another minute to dissolve. Remove pan from heat and stir in lemon zest and juice. Season to taste with more salt and pepper. Serves 4.
