1 1/2 pounds fresh green beans, trimmed
2 tablespoons unsalted butter
1 tablespoon olive oil
3 large shallots, thinly sliced
2 garlic cloves, minced
1 (14 1/2-ounce) can diced tomatoes
1/4 cup dry white wine
2 tablespoons thinly sliced fresh basil
Salt and freshly ground black pepper
Parmesan Crisps, recipe follows
1/2 cup grated Parmesan

Steps:

  • Cook the green beans in a large pot of boiling water until just crisp-tender, about 3 minutes. Drain and rinse in cold water. Drain well; set aside.
  • Melt the butter and oil in a heavy, large skillet over medium heat. Add the shallots and garlic and saute until tender, about 2 minutes. Add the tomatoes and cook until heated through, about 3 minutes. Add the beans and cook until the juices evaporate and the beans are almost tender, stirring often, about 10 minutes. Stir in the wine and basil. Simmer 2 minutes longer. Season with salt and pepper, to taste. Transfer to a serving bowl, and serve.
  • Preheat oven to 400 degrees F.
  • Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2-inch apart.
  • Bake for 3 to 5 minutes or until golden and crisp. Cool.
  • Yield: 8 to 10 crisps

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add green beans and toss to evenly coat with olive oil. Cook, stirring occasionally for even cooking, until softened, about 5 minutes. 1 clove garlic, mined
1 1/2 lbs green beans, ends trimmed and broken into 1 inch lengths
1/3 cup basil, coarse chopped
1/2 teaspoon honey
1/2 teaspoon grated lemon, zest of

1/4 teaspoon pepper
2 tablespoons fresh lemon juice
1/2 medium yellow bell pepper, cut into thin strips

Steps:

  • In a large skillet heat the oil over medium-high heat until hot.

1/4 cup white wine
1 medium tomato, diced

Steps:

  • Add the green beans to a large pot of boiling salted water. Cook until bright green, about 3 to 4 minutes. Remove green beans from the boiling water and plunge into ice water to stop the cooking. Drain well.

  • Gently peel skins from fava beans (it's not necessary to peel edamame, if using), then add to other beans.
  • Cut basil into very thin shreds.
  • Cook garlic in oil with a rounded 1/4 teaspoon each of salt and pepper in a 12-inch heavy skillet over medium heat, stirring occasionally, 1 minute. Add beans, water, and zest and cook, stirring occasionally, until heated through. Stir in basil and 2 1/2 teaspoons lemon juice and remove from heat.
