ROASTED GREEN BEANS WITH PARMESAN, ALMONDS, AND LEMON

Roasted Green Beans with Parmesan, Almonds, and Lemon image

These roasted green beans are flavorful and crisp, seasoned with freshly grated parmesan cheese, garlic, lemon juice, and slivered almonds!

Provided by Jennifer Farley

Categories     Side Dish

Time 45m

Number Of Ingredients 9

1/4 cup slivered almonds
1 pound green beans, (trimmed)
3 cloves garlic, (sliced)
2 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons lemon juice ((approximately 1/2 medium lemon))
1/4 cup freshly grated parmesan, (or to taste)
Optional: 1/4 cup basil, (sliced thin)

Steps:

  • Place an oven rack on the center shelf and preheat the oven to 350 degrees F. Line a baking sheet with foil or parchment.
  • Toast the almonds until fragrant and golden, approximately 7-10 minutes, shaking the pan every 3-4 minutes to ensure even cooking. Remove the almonds from the oven, and increase the temperature to 450 degrees F.
  • Place the green beans and garlic on the baking sheet. Drizzle with olive oil and toss to coat, then season with the salt and pepper. Spread the ingredients out evenly, and roast for approximately 25 minutes, using a spatula to stir the vegetables halfway through. The green beans are ready when they're caramelized and crunchy on the outside, but still slightly toothsome when you bite into them.
  • Remove from the oven and top with lemon juice, almonds, parmesan, and basil, if using. Serve immediately.

GREEN BEANS WITH TOASTED SLIVERED ALMONDS

Green Beans with Toasted Slivered Almonds image

The extra butter added at the end helps emulsify the sauce, but you can get away with less, if you like.

Provided by Eve Felder

Categories     Side dishes

Yield four.

Number Of Ingredients 7

4 Tbs. unsalted butter
1/3 cup slivered almonds
1/2 lb. fresh green beans, trimmed
2 tsp. minced garlic (2 to 3 cloves)
1/2 tsp. kosher salt
1 cup water
1/2 tsp. freshly ground black pepper

Steps:

  • Melt 2 Tbs. of the butter in a large sauté pan over medium heat. Add the almonds and cook, tossing frequently, until they're light brown and toasted, 3 to 4 min. Transfer them with a slotted spoon to a plate lined with paper towels.
  • Add the green beans, garlic, and salt to the pan. Toss to coat the beans with the residual butter. Add the water and simmer gently, tossing occasionally, until the beans are fork-tender and fully cooked (taste one to check), about 15 min. The liquid should be reduced to about 1/4 cup or less; if there's too much liquid, increase the heat to a boil and let it reduce briefly. Add the remaining 2 Tbs. butter and toss to coat the beans and emulsify with the liquid. Add the pepper, toss, and adjust the seasonings as needed. Scatter the slivered almonds over the serving platter or over each serving.

GREEN BEANS WITH ALMONDS AND GARLIC RECIPE - (4.5/5)

Green Beans with Almonds and Garlic Recipe - (4.5/5) image

Provided by darusts

Number Of Ingredients 7

1-1/2 lb. haricots verts (thin French green beans) or green beans, trimmed
1 oz. (2 Tbs.) unsalted butter
2 Tbs. pure olive oil
1/2 cup slivered almonds
1 tsp. minced or pressed garlic (1 medium clove)
1 Tbs. fresh lemon juice (from 1 small lemon)
Kosher salt and freshly ground black pepper

Steps:

  • Bring a 6- to 7-quart pot of water to a boil. Add the beans and cook until bright green and barely crisp-tender, about 2 minutes. Drain in a colander and rinse under cold running water until completely cool. Spread the beans on a clean kitchen towel and dry thoroughly. In a 12-inch skillet, heat the butter and oil over medium-low heat until the butter melts and the foam subsides. Add the almonds and cook, stirring occasionally, until golden-brown all over, about 3 minutes. Using a slotted spoon, transfer the almonds to a plate. Reduce the heat to low and add the garlic to the skillet. Cook, stirring constantly, until fragrant, about 30 seconds. Add the beans, increase the heat to medium, and cook, tossing occasionally, until crisp-tender and lightly browned in some places, 5 to 8 minutes. Stir in the lemon juice and season to taste with salt and pepper. Transfer to a serving platter, sprinkle with the almonds, and serve. Make Ahead Tips The beans can be blanched (boiled until barely crisp-tender) up to 1 day ahead; refrigerate wrapped in paper towels in a plastic bag. nutrition information (per serving): Calories (kcal): 120; Fat (g): fat g 10; Fat Calories (kcal): 90; Saturated Fat (g): sat fat g 2.5; Protein (g): protein g 3; Monounsaturated Fat (g): 5; Carbohydrates (g): carbs g 7; Polyunsaturated Fat (g): 1.5; Sodium (mg): sodium mg 150; Cholesterol (mg): cholesterol mg 10; Fiber (g): fiber g 3;

GREEN BEANS WITH ALMONDS AND BUTTER

Green Beans with Almonds and Butter image

Provided by Natasha of NatashasKitchen.com

Categories     Easy

Time 27m

Number Of Ingredients 5

3 lbs raw green beans (fresh or frozen)
1 1/2 sticks salted butter
or use unsalted butter and add 3/4 tsp salt when you begin to melt the butter in the skillet
1 1/2 cups sliced almonds
Grated Parmesan to taste - optional

Steps:

  • Rinse green beans. Snip the bases off on all the green beans.
  • Fill a large soup pot 2/3 with water and bring to a rapid boil. Add 2 Tbsp salt. Add beans and boil 6 to 7 minutes, until crisp-tender.
  • Drain beans immediately and rinse them with cold water to stop the cooking process, then place them in your serving dish.
  • In a large skillet, over medium heat, melt 1 stick of butter. Add shaved almonds to the skillet and stir them until they are golden. Watch them closely once they start to golden because they can burn quickly beyond this point.
  • Melt in the rest of the butter (1/2 stick), stir and pour the buttery almonds evenly over the green beans.
  • Use tongs to lightly toss the beans with the buttery almonds, but not too much because the almonds tend to escape to the bottom of the dish.

  • Bring a large pot of water to a boil. Season the water liberally with kosher salt (it should be very salty to taste). Salting the cooking water aggressively accomplishes two tasks: it ensures that the green beans will be seasoned properly inside and out, and also helps them retain their bright green color after cooking. For make ahead tips, please read the notes section at the bottom of this recipe thoroughly.
  • Blanch the green beans for 4 to 5 minutes, stirring occasionally, or until they are crisp-tender and slightly squeaky between your teeth. It is important that the green beans be slightly undercooked as they will be transferred directly to the skillet and will continue cooking during this time.
  • Meanwhile in a large skillet, melt the butter over medium-low heat until lightly bubbling. Add the sliced almonds and sauté, stirring frequently, for 2 to 3 minutes or until they are starting to turn golden brown. Reduce the heat to low and add the chopped shallots and garlic. Sauté for an additional 1 to 2 minutes, stirring frequently, until fragrant and lightly caramelized.
  • Using a large slotted spoon, tongs, or kitchen spider, transfer the blanched green beans from the boiling water directly to the skillet. Sauté briefly, gently tossing the green beans with the almond mixture until evenly combined and the green beans are tender. Add the lemon zest and lemon juice, toss once again, and season to taste with salt and freshly ground pepper. Serve immediately.
