NEW POTATOES, GREEN BEANS AND HAM

New Potatoes, Green Beans and Ham image

This recipe was given to me by my Mother-in-law who raised 9 children and taught school for 40 years and didn't have much time to cook. It remains a family favorite with my children. Last night I had no broth, so I mixed Lipton's Garlic and Herb soup (1 packet) and 4 cups of water and it was wonderful, really added richness to the broth.

Provided by carole in orlando

Categories     Ham

Time 8h15m

Yield 6-8 serving(s)

Number Of Ingredients 6

8 red potatoes, scrubbed and halved
1 (16 ounce) package frozen green beans (or fresh)
1 large onion, cut into about eight wedges
2 cups ham, cut into bite sized pieces
vegetable broth or chicken broth
salt and pepper

Steps:

  • I cook this in a crockpot all day, but may be cooked in a dutch oven on the stove, also.
  • Add all the ingredients and cover, cook on low for 8 to 10 hours.
  • If cooking on the stove you may need more broth, but the crockpot makes broth as it cooks, so you shouldn't need any more.
  • Use your own judgement on the amount of broth.
  • Serve with fresh, sliced tomatoes and corn bread for a great Southern meal.

GREEN BEANS, PEARS, AND HAM - GERMANY

Green Beans, Pears, and Ham - Germany image

This looked yummy and easy to make. From "The Best Recipes in the World" cookbook. "This is a good recipe to use ordinary ham, as long as it is not too sweet; prosciutto or the like would be overkill".

Provided by Mrs Goodall

Categories     Pears

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

2 tablespoons butter (or extra virgin olive oil)
1 large onion, thinly sliced
1 lb ham, cut into 1/2 inch chunks
2 -3 large pears, not overly ripe (Bosc is a good choice)
3/4 lb fresh green beans
salt, to taste
pepper, to taste
1 cup chicken stock

Steps:

  • Put the butter in a large deep skillet over medium-high heat. When hot, add the onion and cook, stirring occasionally, for about 5 minutes. Meanwhile, cut the ham into 1/2 inch chunks. Add it and raise the heat to high.
  • While the ham cooks- stir it occasionally, but let it brown a bit on the bottom-peel and core the pears and cut them into 1-inch chunks. Lower the heat to medium and add them to the pan; stir occasionally.
  • Trim the beans, cut them into roughly 2-inch lengths, rinse them quickly, and add them to the skillet along with a sprinkling of salt and at least 1/2 teaspoon pepper. Cook for a minute, then raise the heat to medium-high, add the chicken stock, and stir.
  • Cook, stirring occasionally, until the beans are bright green and semi-tender, the pears are quite tender, and the liquid so reduced that it is essentially a sauce, 10 - 15 minutes. Taste, adjust the seasoning, and serve.

  • Cook the green beans as you would normally - I'd suggest either steam them for a few minutes, boil or cook in the microwave with a little water. Whichever way, it will only take a couple minutes and you want them tender but only just so they don't become mushy and keep their nice green color. Drain and set aside.
  • While the beans are cooking, melt the butter in a small-medium skillet. Finely dice the onion and add it to the pan. Cook for a minute while you finely slice and dice the speck or bacon. Add the speck/bacon to the pan and cook for a couple minutes until it is starting to crisp. Add the cooked beans, cook a minute, stirring regularly, then serve.

  • Bring a large saucepan of salted water to a boil. Boil the green beans for about 2 minutes (they should be until crisp-tender, rather than fully cooked). Drain the green beans and plunge them directly into a bowl of ice water to stop the cooking. Cool thoroughly then drain well and set aside.
  • Shell the fava beans and cook in a medium saucepan of boiling salted water until tender, about 3 minutes. Drain and transfer immediately to a bowl of ice water. Allow the beans to cool for several minutes. Tear off a bit of the skin or split the skin with a sharp paring knife and slip off the translucent skin by squeezing gently (the waxy coating will slip right off).
  • In a large non-stick skillet, fry the diced bacon over medium heat until slightly crisp. Add the pear slices and sauté, stirring occasionally, for 2 minutes. Add the beans and cook for another minute until warmed.
