GREEN BEANS WITH BACON
"MY MOTHER was from North Carolina, and she preferred green pole beans to green snap beans. I've found that either is delicious in this recipe, as long as long as the beans are fresh. Mother also brought with her from North Carolina the custom of chopping and 'mounding' the beans before serving-a touch that makes them even more special."

- In a covered saucepan, cook beans in a small amount of water for 20-25 minutes or until tender. Drain. Meanwhile, in a skillet, cook bacon until crisp. Remove bacon, reserving drippings. Crumble bacon and set aside. Add beans to drippings; sprinkle with pepper and seasoned salt. Heat through. Add crumbled bacon and toss.

Sprinkle with salt and pepper; toss to coat.

Steps:
- Heat oil in a skillet over low heat. Add garlic and cook for 30 seconds. Stir in green beans and brown sugar, and season with sea salt. Add bacon, increase heat to medium, and stir.
- Pour chicken broth into the pan, cover, and let simmer for 10 minutes. Stir, adding more broth if needed. Cover and cook for another 10 minutes. Stir, uncover, and simmer over low heat until liquid evaporates, about 10 minutes more. Serve.

A delicious, easy bean recipe. I've never done this exactly as described with fresh beans, but I'm sure it would work well. The recipe is from Julie Trusler's cookbook, "JT's - Volume 1"

Steps:
- Fry bacon in a skillet over medium-high heat until partially cooked.
- Drain off most (but not all) of the fat.
- Add onion and continue to cook until bacon is brown and onion is clear.
- Add vinegar and 1 t of the seasoned salt.
- Cook until most of the vinegar has cooked down and remove from heat.
- In a large saucepan, cook beans in water, covered, until done (5-7 minutes).
- Do not drain.
- Add bacon mixture and cook uncovered for another five minutes' or so.
- Add additional seasoned salt to taste.
- There should be little liquid left at serving time.

SOUTHERN GREEN BEANS & BACON
This is definitely an unhealthy old southern recipe that we continue to make for all large family gatherings. My oldest son (age 23) makes this when he goes to friends' homes. He said he's never had any left to bring home.

Steps:
- Slice bacon into 1 inch pieces, (easiest way is to cut with scissors).
- Put bacon into a large pot and begin to fry.
- While bacon is frying, coarsely chop onion.
- When bacon is about 1/2 way done, add onion and continue frying until bacon is semi crisp. (Do NOT drain grease).
- Drain green beans and dump into bacon and onions. Stir.
- Continue to cook for 30 minutes on medium, stirring occasionally.
- Serve.
