Sauteed Green Beans with Onion image

Sauteed green beans with onion - one of my favorite fresh green bean recipes. Also good with bacon or slivered almonds.

Number Of Ingredients 8

1 pound fresh green beans, trimmed
1 pinch salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely diced
1 shallot, chopped
½ teaspoon garlic salt
½ teaspoon soy sauce
salt and ground black pepper to taste

Steps:

  • Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
  • Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

1 lb fresh green beans, ends removed
2 medium onions, peeled and thinly sliced (Vidalias preferred)
1 tablespoon brown sugar, firmly packed
2 teaspoons red wine vinegar or 2 teaspoons balsamic vinegar

Steps:

  • Cook green beans in boiling water for 10 minutes or until bright green and crisp tender.
  • Rinse with cold water and set aside.
  • Cook onion in a large non-stick skillet over medium-high heat for 15 to 20 minutes, stirring often until the onions are golden brown.
  • Reduce heat to medium add brown sugar and vinegar.
  • Stir to combine.
  • Add green beans and heat 5 minutes or until beans are heated through.

  • Heat vinegar, sugar, oil, garlic, salt, and pepper to taste in small saucepan over medium heat, stirring occasionally, until sugar dissolves, about 5 minutes. Remove from heat and let cool to room temperature.
  • Steam green beans in a large pot with 1 cup water with 1 tablespoon salt added to it; cook until crisp-tender, about 5 minutes. Meanwhile, fill medium bowl with ice water. When beans are done, immediately add to ice water to stop cooking process; let sit until chilled, about 2 minutes. Drain well.
  • Add green beans, garbanzo beans, kidney beans and onions to a large bowl. Pour dressing over salad mixture and gently toss to coat. Cover and refrigerate for a few hours (or overnight) to let flavors meld. Toss salad with dressing occasionally while chilling.

  • In a dutch oven or large pot over medium heat, cook bacon until crisp. Transfer bacon with a slotted spoon to paper towels to cool. Leave bacon fat in pan.
  • Add diced onion to the bacon fat. Cook over medium heat for 2-3 minutes, or until onion softens.
  • Add green beans, chicken stock, 1 teaspoon of garlic salt, and 1/4 teaspoon black pepper. Stir together. Lower heat to a simmer, cover and cook for 30 minutes.
  • Uncover sprinkle 1/2 teaspoon garlic salt over beans. Arrange halved potatoes over the green beans. Dot tops of potatoes with cubed butter. Sprinkle remaining 1/2 teaspoon of garlic salt and 1/4 teaspoon pepper over top. Cover and simmer for another 30 minutes or until potatoes are done (fork-tender).
