Green Beans with Bacon image

Pan-seared green beans with bacon and garlic is the perfect quick and easy side dish for everything. Fast enough for weeknight dinners, and crowd-pleasing enough for celebrations like Thanksgiving or Christmas dinner. This recipe is so fast, so flavorful, and SO EASY. Plus it's got bacon - what more could you want in a side dish?!?

6 slices bacon (diced)
1 lb green beans (ends trimmed)
4 cloves garlic (minced)
1 tsp cracked black pepper
sea or kosher salt (to taste, if needed)

Steps:

  • Heat a 12" skillet over medium high heat. Add bacon and cook until crisp, 6-7 minutes. Remove bacon using a slotted spoon and set aside. Pour all but 2 tbsp bacon from the pan.
  • Rinse the trimmed green beans in a colander. Shake to release most of the moisture, but don't dry completely.
  • Return the pan to medium high heat; wait about 30 seconds for the bacon grease to heat up again. Add the green beans and toss to coat in the fat. Cover and saute the green beans, stirring occasionally, until charred and just about bite tender, about 6 minutes.
  • Add garlic and saute, stirring frequently, for 1 minute. Return the bacon to the skillet and saute, stirring frequently, for a further minute.
  • Remove from heat. Add the cracked black pepper and toss. Taste for seasoning and add salt if needed.

3 teaspoons olive oil
1 teaspoon minced garlic
2 ½ cups fresh green beans, trimmed
1 tablespoon brown sugar
sea salt to taste
3 slices smoked bacon, cut into small strips, or to taste
4 tablespoons chicken broth, or more as needed

Steps:

  • Heat oil in a skillet over low heat. Add garlic and cook for 30 seconds. Stir in green beans and brown sugar, and season with sea salt. Add bacon, increase heat to medium, and stir.
  • Pour chicken broth into the pan, cover, and let simmer for 10 minutes. Stir, adding more broth if needed. Cover and cook for another 10 minutes. Stir, uncover, and simmer over low heat until liquid evaporates, about 10 minutes more. Serve.

Steps:

  • In a covered saucepan, cook beans in a small amount of water for 20-25 minutes or until tender. Drain. Meanwhile, in a skillet, cook bacon until crisp. Remove bacon, reserving drippings. 1 ¼ pounds fresh Green Beans (, rinsed and ends trimmed)
1 large Shallot (, peeled and diced)
¼ cup Sliced Almonds
Kosher Salt and freshly ground Black Pepper to taste

Steps:

  • In a large skillet over medium-high heat, cook the bacon until done but not crisp. Remove the bacon to drain on paper towels. Reserve 2 teaspoons of the bacon fat in the pan and discard the rest. Chop or break bacon into small pieces.
  • While the bacon is cooking, steam the prepared green beans using a steamer or steamer basket, until almost fully cooked 3-4 minutes (taste to test). Note: they will complete cooking when sautéed and to retain firmness they should not steam until fully done. Remove beans from the steamer.
  • Over medium-high heat add the diced shallots to the skillet with the bacon fat and sauté for 2-3 minutes.
  • Add the green beans and sauté to coat and heat through. Toss in bacon and sliced almonds; remove from heat and serve immediately.

This is definitely an unhealthy old southern recipe that we continue to make for all large family gatherings. My oldest son (age 23) makes this when he goes to friends' homes. He said he's never had any left to bring home.

6 lbs green beans (drained)
1 lb bacon
1 large onion

Steps:

  • Slice bacon into 1 inch pieces, (easiest way is to cut with scissors).
  • Put bacon into a large pot and begin to fry.
  • While bacon is frying, coarsely chop onion.
  • When bacon is about 1/2 way done, add onion and continue frying until bacon is semi crisp. (Do NOT drain grease).
  • Drain green beans and dump into bacon and onions. Stir.
  • Continue to cook for 30 minutes on medium, stirring occasionally.
  • Serve.

Kosher salt and freshly ground black pepper
1/2 pound bacon slices, roughly chopped
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon crushed red-pepper flakes
1/2 cup chopped pecans, toasted
Juice of 1/2 lemon

Steps:

  • Toss the green beans into a large pot of boiling salted water and cook until bright green in color and tender-crisp, about 5 minutes. Drain the beans, and shock them in a large bowl of ice water to stop the cooking. Drain the beans again, and pat dry.
  • Cook the bacon in a large, heavy sauté pan until crisp, about 5 minutes. Remove the bacon to a paper-towel-lined plate to drain. Spoon off the excess grease, leaving 2 tablespoons in the pan. Add the onion to the pan, and sauté until soft and very tender, about 4 or 5 minutes. Sprinkle in the garlic and red-pepper flakes, and sauté until just fragrant, about 1 more minute. Add the reserved green beans and the pecans, and cook until heated through, about 5 or 6 minutes more. Return the bacon to the pan, pour in the lemon juice, and toss. Season to taste with salt and pepper. Remove to a serving bowl.

  • Line a baking sheet with foil (this makes clean-up easy) and set a wire rack over it. Spray the rack with non-stick and place the bacon slices on the rack.   • In a large sauté pan (one that has an accompanying lid, or see alternatives below*), add the bacon. Turn the heat to medium and cook, stirring occasionally, until the bacon reaches your desired level of crispiness. Transfer the cooked bacon to a clean bowl and set aside. Add in the Panko, rosemary, a pinch of salt and pepper and continue cooking for 4 to 5 minutes, stirring occasionally, until the Panko has turned an even golden color. Transfer the mixture to the bowl with the bacon and toss to combine. Give the mixture a quick taste, and season with extra salt and/or pepper if needed.
  • Briefly wipe any crumbs off of the sauté pan, then return it to the stove and increase the heat to medium-high. Add the green beans, 1/3 cup water and a pinch of salt to the pan and give the green beans a quick toss. Cover the pan securely with a lid and continue cooking the green beans until steam begins to seep out from the lid, then set the timer and continue cooking (steaming) the beans for 5 minutes. Remove the lid and continue cooking for 1 to 2 minutes, stirring occasionally, until the remaining liquid has evaporated and the green beans are crisp-tender. (If the beans reach your desired level of doneness earlier, just drain off the remaining water.)
  • Add the reserved 1 tablespoon of bacon grease (or butter) to the pan and toss for 1 minute, until the green beans are evenly coated, and season the green beans with salt and pepper to taste. Remove pan from heat.
