- Bring a pot of water to a boil. Even if your sesame seeds are toasted/roasted, it’s good to toast them again in a non-greased frying pan for a couple of minutes, gently jiggling the pan. Be careful not to burn them.
- With a pestle and a mortar (or spice grinder), grind the sesame seeds, leaving some seeds uncrushed to add texture to the sauce.
- Add soy sauce and sugar and mix it all together. The dressing looks more like a paste than dressing. Set aside.

- Gather all the ingredients. To store the leftover tofu, keep it in an airtight container and pour water until it covers the tofu. Keep in the refrigerator (change the water every day) and use it within a few days.
- Do not skip this step. You don’t want to drain the water from tofu completely, but it’s important to remove some moisture so the dressing doesn’t get too wet. Wrap the tofu with paper towels.
- Toast the sesame seeds in a frying pan, shaking the pan frequently, until they are fragrant and started to pop. Transfer to a Japanese mortar (suribachi).

- While the water is coming to a boil, trim the stem end from each green bean using kitchen shears or a chef's knife.
- Once the water is simmering, add the beans and cook for around 4 to 5 minutes. The length of time may vary depending on the quantity of green beans and the desired texture. Green beans can be served either crisp-tender or fully tender (I prefer a bit of texture). The best way to tell when your veggies are done is to taste them close to the end of the cooking time. Once the green beans are ready, drain through the colander.
- Toss with a light coating of extra virgin olive oil, then season with salt, pepper and any other desired seasonings (I love adding crushed red peppers and a squeeze of fresh lemon juice).
