GREEN BEAN POTATO BAKE
As a pastor's wife, I often cook up contributions to church dinners using on-hand ingredients. This creamy bake was such a hit, I now take it to family get-togethers as well. I make it up ahead, refrigerate it and bake it shortly before serving.

MUSHROOM AND GREENS GRATIN
Casseroles need not contain eggs or dairy products. And baked beans, exceptionally creamy after their long simmer in the oven, can be made into perfect vegan fare. Add vegetables of your choice and you'll have a perfect one-dish meal. This savory gratin is a regular item in my winter repertory. Those one-pound bags of sturdy greens, sold in my market as "Southern greens mix," are a winter godsend. All the time-consuming work has been done, and the rest can be accomplished while the blanching water comes to a boil.

The one thing we haven't changed, and would never change-those delectable French-fried onions-adding an irresistible crispy crunch on top! If you've ever dreamed of eating green bean casserole for dinner-and honestly, if you haven't, we've got other recipes for you-make it happen with this upgraded classic that's way too good to save only for the holiday season!

SIMPLE GREEN BEANS WITH HAM
Green beans with amazing flavor are also super easy. This is a very simple side dish that takes its flavor from the ham used and the lengthy cooking time. If Grandma didn't have ham on hand she would substitute bacon.

- To blanch your green beans, brings a medium-size pot of well-salted water to the boil; add in the green beans, reduce heat and simmer them for about 6 minutes, or until tender but still crisp; drain, then shock the beans in ice water to stop them cooking, and to keep them a vibrant green; pat the beans with paper towel to dry them well.
- Place a large skillet over medium-high heat, and drizzle in about 3 tablespoons of the oil; once the oil is hot, add in the sliced mushrooms, plus a couple of pinches of salt and pepper, and saute them for a few minutes until a deep golden-brown.
- Next, add in the garlic, and stir together until the garlic becomes aromatic, about 15 to 30 seconds; sprinkle in the Italian seasoning and stir to combine, then spoon the mushrooms onto a plate to hold for a moment.
- Add the butter into the skillet, and once melted, add in the green beans, and toss to coat them in the butter; add back the mushrooms, and toss everything to coat well (check to see if you need more salt and pepper).
