Green Beans with Almonds and Bacon image

1 to 1-1/2 pounds green beans
1 tablespoon olive oil
1 tablespoon butter
1/3 cup sliced almonds
1/2 lemon (juiced)
1/2 teaspoon salt (or to taste)
2 to 3 slices bacon (cooked and crumbled)

Steps:

  • Rinse and drain the green beans and snap off one end, removing the tough string if it is present (some will have them, some won't).
  • Bring a large pot of water to a boil. Add green beans and allow to cook for 3 to 4 minutes, just till slightly softened. Remove from heat and transfer to a colander to drain. Rinse with very cold water to stop the cooking process and lock in the bright green color. Drain well.
  • In a 12-inch skillet, melt the butter with olive oil over medium heat. Add the almonds and cook for about 2 to 3 minutes or until lightly golden brown, stirring often. Return green beans to pan with the almonds and cook stirring just until green beans are warmed through. Add lemon juice and season with salt. Transfer the beans to a serving platter, scraping out all the buttery almonds. Garnish with crumbled bacon.

  • Place beans in a large saucepan and cover with water. Bring to a boil; cook, uncovered, for 8-10 minutes or until crisp-tender., Meanwhile, melt butter in a large skillet over medium heat. Stir in the brown sugar, soy sauce and Worcestershire sauce. Cook for 1 minute or until sugar is dissolved. , Drain beans; add to the skillet. Cook and stir for 2 minutes or until heated through. Sprinkle with bacon and almonds; toss to coat. Serve with a slotted spoon.

6 slices thick-cut bacon
1 ½ cups whole milk
2 (10.75 ounce) cans condensed cream of mushroom soup
½ cup sliced almonds
¾ teaspoon garlic-pepper seasoning
¾ (6 ounce) can French-fried onions
4 (14.5 ounce) cans green beans (such as Del Monte® Fresh Cut®), drained
¼ (6 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels; break into 1-inch pieces.
  • Stir milk and cream of mushroom soup together in a large bowl. Add almonds, garlic pepper, and 3/4 can French-fried onion; stir to combine. Fold green beans carefully into mixture. Pour into a 9x9-inch ceramic or glass baking dish.

¼ pound (4 slices) Bacon
1 ¼ pounds fresh Green Beans (, rinsed and ends trimmed)
1 large Shallot (, peeled and diced)
¼ cup Sliced Almonds
Kosher Salt and freshly ground Black Pepper to taste

Steps:

  • In a large skillet over medium-high heat, cook the bacon until done but not crisp. Remove the bacon to drain on paper towels. Reserve 2 teaspoons of the bacon fat in the pan and discard the rest. Chop or break bacon into small pieces.
  • While the bacon is cooking, steam the prepared green beans using a steamer or steamer basket, until almost fully cooked 3-4 minutes (taste to test). Note: they will complete cooking when sautéed and to retain firmness they should not steam until fully done. Remove beans from the steamer.
  • Over medium-high heat add the diced shallots to the skillet with the bacon fat and sauté for 2-3 minutes.
  • Add the green beans and sauté to coat and heat through. Toss in bacon and sliced almonds; remove from heat and serve immediately.

¼ cup slivered almonds
½ pound bacon
1 large onion, chopped
2 tablespoons olive oil
¾ cup chopped mushrooms
1 quart water
1 pound fresh green beans, trimmed and cut into 2-inch pieces
2 (10.75 ounce) cans condensed cream of mushroom soup (such as Campbell's®)
½ cup water, or as needed
2 cups French-fried onions (such as French's®), divided
1 (8 ounce) can sliced water chestnuts, drained
salt and ground black pepper to taste

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Spread almonds on a baking sheet.
  • Toast almonds in the preheated oven until golden, stirring halfway through, about 13 minutes total. Remove from oven and set aside.
  • Increase oven temperature to 350 degrees F (175 degrees C). Grease one 9x13-inch casserole dish.
  • Place bacon and onion in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 8 to 10 minutes. Remove bacon and onion with a slotted spoon; set aside. Drain excess bacon fat from the skillet; add olive oil. Add mushrooms and cook, stirring, until soft, about 5 minutes.
  • Place 1 quart water in a saucepan and bring to a boil. Add green beans and blanch for 2 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process and preserve the bright green color. Drain.
  • Pour mushroom soup into a large bowl and whisk until smooth, adding up to 1/2 cup water, until soup is the consistency of thick gravy. Stir in almonds, 3/4 of the bacon-onion mixture (reserving the rest for topping), mushrooms, green beans, 1 cup French-fried onions, and water chestnuts. Mix thoroughly to combine and season with salt and black pepper.
  • Pour green bean mixture into casserole dish. Top with remaining bacon-onion mixture and 1 cup French-fried onions.
  • Bake in the preheated oven until bubbling and crispy on top, 30 to 45 minutes. Serve hot.

Turn the heat to medium and cook, stirring occasionally, until the bacon reaches your desired level of crispiness. Transfer the cooked bacon to a clean bowl and set aside. There should be around 2 to 3 tablespoons of bacon grease remaining in the pan — scoop out 1 tablespoon to reserve for later in the recipe, and leave the rest of the grease in the pan.
  • Add the garlic and slivered almonds to the pan and sauté for 1 minute, stirring occasionally. Add in the Panko, rosemary, a pinch of salt and pepper and continue cooking for 4 to 5 minutes, stirring occasionally, until the Panko has turned an even golden color. Transfer the mixture to the bowl with the bacon and toss to combine. Give the mixture a quick taste, and season with extra salt and/or pepper if needed.
  • Briefly wipe any crumbs off of the sauté pan, then return it to the stove and increase the heat to medium-high. Add the green beans, 1/3 cup water and a pinch of salt to the pan and give the green beans a quick toss. Cover the pan securely with a lid and continue cooking the green beans until steam begins to seep out from the lid, then set the timer and continue cooking (steaming) the beans for 5 minutes. Remove the lid and continue cooking for 1 to 2 minutes, stirring occasionally, until the remaining liquid has evaporated and the green beans are crisp-tender. (If the beans reach your desired level of doneness earlier, just drain off the remaining water.)
  • Add the reserved 1 tablespoon of bacon grease (or butter) to the pan and toss for 1 minute, until the green beans are evenly coated, and season the green beans with salt and pepper to taste. Remove pan from heat.
