GREEN BEAN BUNDLES
I found this recipe in a rural newspaper years ago and have made it often. The bean bundles are excellent with chicken or beef. Sometimes I'll arrange them around a mound of wild rice to make an appetizing side dish. -Virginia Stadler, Nokesville, Virginia

GREEN BEAN BUNDLES
Steamed and then baked, these scrumptious green beans take on great flavor, because they are wrapped in bacon and bathed in a savory sauce. This recipe is best when you marinate the bundles overnight.

GREEN BEAN BUNDLES
I got this recipe from a friend because I loved them. I've been making them now for years and bringing them to the office for the Holidays. I bought them again yesterday and I'm still printing out the recipe. Every time I make them I have to give out the recipe. This is time consuming but well worth the effort.

GREEN BEAN BUNDLES
I fixed these for my DD and her BF last night and they loved them, as did I. They are pretty easy to put together and the flavors blend well. The presentation plated is very nice. These can also be served as appetizers, cold. Use whole green beans. Can't wait to try these with fresh blanched green beans this summer.

Steps:
- Pre-heat oven to 425 degrees. Drain green beans. Cut bacon slices in half. Wrap a good hand full (12-15) beans with the bacon & lay seam side down on a lined sheet pan sprayed with pam. Repeat with remaining beans and bacon. Bake about 25-30 minute until bacon is brown & beans are cooked. Meanwhile, grate 1/4 to 1/2 of an onion to get it's juice and mix with the rest of the ingredients in a glass pyrex. Microwave 1-2 minutes until butter is melted. Stir well. When bundles are done dip each bundle in sauce and place in serving dish. Pour remaining sauce over bundles and serve. These bundles can be assembled in advance with the sauce kept seperate. These bundles do not freeze well raw or pre-cooked.
