Ingredients

1 1/2 cups apple juice
3/4 cup sour apple schnapps
1/4 cup superfine sugar
1 (750 ml) bottle champagne
12 slices apples, for garnish (optional)

Steps:

Combine first 3 ingredients, and stir until sugar is dissolved.
Add champagne. If desired, garnish with apple slices.

Ingredients

1 Granny Smith apple, thinly sliced into half-moons
1/2 cup apple brandy, such as calvados
1/2 cup good-quality apple juice
One 750-milliliter bottle Champagne or prosecco, chilled

Steps:

Refrigerate 8 coupe glasses until chilled. Place a slice of apple in each glass.
Fill a cocktail shaker with ice. Pour in the brandy and juice and shake vigorously to chill.
Strain the mixture into the glasses (about 2 tablespoons per glass) and top off each with 1/2 cup Champagne.
