FRUITY TOSSED SALAD
This salad is fresh and tasty... and so pretty! Perfect for a ladies luncheon or a shower.

- 1. Arrange leafy salad greens among salad plates.
- 2. Top greens with fruit and nuts.
- 3. Lightly drizzle the poppy seed dressing over the salads.
- 4. Note: Be sure to go easy on the salad dressing though, as a little bit surely goes a long way.
SIMPLE GREENS AND FRUIT SALAD WITH GORGONZOLA CHEESE
This is a favorite salad in our house. I change it around to match the fruits of the season. Some of our favorites are: canned mandarin oranges, diced apples, diced pears, fresh berries, or even Craisins. I love the fact I always have something in the fridge to top the salad. My husband doesn't like blue cheese, but the Gorgonzola isn't as strong to him. I use Paul Newman's light dressing, but use one you like!

Steps:
- Put the salad greens and the dressing in a ziploc bag. Toss to mix well. Pour the tossed greens into the serving bowl.
- Top with the cheese, fruit and nuts and serve.
GREEN AND GOLD SALAD
Such a unique combination of ingredients I couldn't resist. If you love the creamy goodness of avocado in a salad, you should try this one.

Steps:
- 1. Steam the asparagus until crisp-tender and plunge into cold water to stop cooking. Zest the orange and then peel and cut into segments, (catch any juice in a bowl and also squeeze any remaining juice from what is left after segmenting). Peel and seed the avocado and cut into chunks.
- 2. Place all of the salad ingredients in a medium bowl and set aside to make vinaigrette.
- 3. In a small bowl, whisk all vinaigrette ingredients together except salt,pepper and oil. Whisk oil in slowly until emulsified. Taste and adjust seasoning to your liking. If the oranges are tart, you might want to add a little sugar. Or you may want to increase mustard slightly. Just make it to your taste.
- 4. Toss salad ingredients with some of the dressing to coat, and serve as is or on a small bed of greens. Pass any remaining dressing.
GOLD AND GREEN SALAD
Steps:
- For Dressing: In a small bowl, stir together mayonnaise, sour cream, lemon juice, and soy sauce; set aside.
- For Salad: Add salad mix to a large salad bowl. Top with mango, avocado, cucumber and green onion.
- Spoon dressing over top. Toss and serve.
GREEN AND GOLD SALAD
This is one of my favorite recipes. It's a great salad for a summertime party. For a little extra crunch add a can of water chestnuts minced.
