Baked Greek Shrimp With Tomatoes and Feta image

This traditional Greek recipe disregards the notion that seafood and cheese don't mix, and it works beautifully, resulting in a harmonious balance of flavors. Though it can be made year round with canned tomatoes, it is sensational with fresh sweet ripe ones, so best prepared in summer. Serve it as a main course with rice or potatoes, or in small portions as an appetizer, taverna-style.

Extra-virgin olive oil
3 large shallots, diced, about 1 cup
4 garlic cloves, minced
Salt and pepper
2 pounds large ripe tomatoes
1/2 teaspoon crushed red pepper flakes
1 1/2 pounds large shrimp, peeled and deveined
4 ounces Greek feta cheese
1/2 teaspoon dried oregano
2 tablespoons roughly chopped mint

Steps:

  • Put 4 tablespoons olive oil in a wide skillet over medium heat. Add shallots and garlic, season with salt and pepper and cook, stirring, until softened, about 5 to 8 minutes. Lower heat as necessary to keep mixture from browning. Remove from heat while preparing tomatoes.
  • Fill a saucepan with water and bring to a boil. Add whole tomatoes and cook for about 2 minutes, until skins loosen. Immediately plunge tomatoes in a bowl of cold water to cool, then drain. With a paring knife, core tomatoes and slip off skins. Cut tomatoes into thick wedges.
  • Heat oven to 400 degrees. Return skillet to stove over medium-high heat. Add tomato wedges and season with salt, pepper and red pepper flakes. Cook, stirring, until mixture is juicy and tomatoes have softened, about 10 minutes. Transfer mixture to a shallow earthenware baking dish.
  • Put shrimp in a mixing bowl. Add 1 tablespoon olive oil, season shrimp with salt and pepper and stir to coat. Arrange shrimp over tomato mixture in one layer. Crumble cheese over surface and sprinkle with oregano.
  • Bake for 10 to 12 minutes, until tomatoes are bubbling and cheese has browned slightly. Remove from oven and let dish rest for 5 minutes. Sprinkle with mint and serve.

1/4 cup Parsley chopped
4 cloves Garlic minced
1 teaspoon Sugar
2 cups Plum tomatoes chopped
1 cup Dry white wine or chicken broth
1 1/2 pounds Shrimp peeled
1 cup Feta cheese crumbled
8 ounces Angel hair pasta cooked

Steps:

  • Preheat oven to 425. Warm the oil in a large skillet over medium heat. Add the onions and saute until light golden brown - approximately 7 minutes. Add the parsley, garlic and sugar and stir to mix. Add the tomatoes and wine to the skillet and cook until they are softened and their liquid is absorbed, about 20 minutes. Add the shrimp and cook, stirring constantly for 30 seconds. Remove from heat. Mix the pasta and shrimp sauce into a 2 quart casserole. Top with Feta cheese. Bake until the cheese starts to brown, about 5 minutes.

Steak Diane was a staple on menus in fine dining establishments back in the day. Prepared tableside where the server ignited the cognac, it was an impressive sight. You don't need to flame the cognac; just keeping it on the heat will eventually evaporate the alcohol. But be careful--it can still flare up if the heat's high enough when you're reducing the sauce.

½ cup demi-glace
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1 teaspoon tomato paste
1 pinch cayenne pepper
2 teaspoons vegetable oil
2 (8 ounce) beef tenderloin steaks, fully trimmed, pounded to 1/2 inch thick
Kosher salt and freshly ground black pepper, to taste
1 tablespoon unsalted butter, cut into small chunks
3 tablespoons shallot, minced
¼ cup Cognac or brandy
¼ cup heavy cream
2 teaspoons sliced fresh chives

Steps:

  • Season steaks generously on both sides with salt. Allow steaks to come to room temperature while you make the sauce.
  • Stir together demi-glace (see Cook's Note), mustard, Worcestershire sauce, tomato paste, and cayenne pepper in a bowl.
  • Heat oil in a skillet over very high heat, swirling carefully to evenly cover surface. When oil reaches a smoking point, transfer steaks to oil; add a few chunks of butter. Sear meat on high heat until brown on each side, 2 to 3 minutes per side; keep them on the rare side. An instant-read thermometer inserted into the center should read 125 degrees F (52 degrees C). Transfer steaks to a warm plate.
  • Stir shallots into skillet; cook until softened, 2 to 3 minutes. Remove skillet from heat; pour in Cognac. Carefully ignite with a fireplace lighter. When alcohol burns off and flames go out, return skillet to high heat and bring to a boil; cook, stirring, a few minutes to reduce slightly. Add demi-glace mixture, cream, and any accumulated juices from the steak. Cook on high heat just until sauce starts to thicken, 3 to 5 minutes. Transfer steaks back to pan and reduce heat to low. Gently simmer until meat is heated through and cooked to your desired level of doneness.
  • Transfer to hot plates and serve with a generous spoonful or two of sauce. Sprinkle with chives.

2 lbs large shrimp, uncooked
1 medium sized onion, finely chopped
2 teaspoons extra virgin olive oil
1 cup chopped green onion
2 cloves garlic, crushed
2 cups diced peeled tomatoes
1/2 cup dry white wine or 1/2 cup non-alcoholic wine
1/4 cup chopped flat leaf parsley
1/2 teaspoon dried oregano
salt
pepper
4 ounces fat-free feta cheese

Steps:

  • Preheat oven to 450 degrees.
  • Remove shells from shrimp, leaving last segment and tail intact; remove vein.
  • Rinse and dry.
  • In a pan saute onion in oil until transparent, (adding a few drops of water if necessary), add garlic and green onion and cook 2 minutes more.
  • To the onions add the tomatoes, wine, half the parsley, oregano, and salt and pepper to taste.
  • Reduce heat, cover and simmer for 30 minutes until thickened.
  • Pour half the sauce into a shallow casserole, and arrange the shrimp on top.
  • Pour the rest of the sauce on, and sprinkle crumbled feta over the shrimp.
  • Bake at 450 degrees for 10-12 minutes or until prawns are pink and feta is lightly browned.
  • Garnish with remaining parsley and serve.

I searched high and low for a Greek recipe for shrimp that included all the basics- tomatoes, garlic, oregano and of course, feta- and I couldn't find anything, so I took a couple recipes and tweaked them to my family's taste, and voila! This has been a hit since the first time I made it... it's full of flavor, rich but not too heavy! You can play around with the amounts given for any ingredient to satisfy your taste, but any way you make it, it turns out fabulous! We usually serve this as an appetizer with baguette to soak up the sauce... delicious!!!

1 lb raw shrimp, peeled and deveined (I usually remove the tails too, for easy eating)
1/4 cup lemon juice (or juice from one lemon)
1/4 cup butter
4 garlic cloves, minced (we love garlic, you can use less if you want)
1/2 cup green onion, chopped
1 large tomatoes, chopped
1/4 cup fresh oregano, chopped (again, you can use less if you want, or 1 teaspoon of dried)
salt and pepper, to taste
1/2 lb feta cheese
1/4 cup sherry wine

Steps:

  • Place shrimp in bowl and sprinkle with lemon juice. Set aside.
  • Melt butter in skillet. Saute garlic, green onion and tomato.
  • Add shrimp and oregano. Season with salt and pepper to taste. Turn shrimp frequently and saute until pink.
  • Add sherry and simmer for about 2 minutes.
  • Crumble feta cheese into skillet, and allow to melt.
  • Serve with baguette to soak up the extra sauce. Enjoy!

1 bunch green onions, chopped
2 jalapeno peppers, chopped

½ cup crumbled feta cheese
2 pounds fresh shrimp, peeled and deveined
1 tablespoon olive oil

Steps:

  • In a large saucepan, saute the chopped garlic in the olive oil until golden. Add green onion and jalapeno peppers; saute about 3 minutes.
  • Mix in the chopped tomatoes and salt and pepper. Bring to a boil and stir in the parsley. Reduce heat.
  • In a medium saute pan, toss the shrimp with the olive oil. Cook over medium heat until shrimp become pink. Season with salt and pepper and mix in the tomato sauce.
  • To serve, crumble the feta cheese over the shrimp.

2 LBS Shrimp shelled and deveined
1 Lemon squeezed
1 clove garlic minced
1 bunch scallions finely chopped
2 Tbs Italian parsley fresh (finely chopped)
2 stalks celery finely chopped
1 16 oz can chopped tomatoes
1 tsp Oregano fresh (chopped)
1 large tomato cut into wedges
1 cup clam juice
1 LB feta cheese crumbled
1/4 cup extra virgin olive oil
1/2 cup white wine
salt and pepper to taste

Steps:

  • Pour freshly squeezed lemon juice over the shrimp in a bowl and set aside.
  • In a skillet, saute the scallions, garlic, celery, parsley, and chopped tomatoes in olive oil until tender.
  • Reduce the heat and simmer for 20 minutes.
  • Add the clam juice and cook for 5 more minutes and then remove from the heat.
  • In another pan, saute the shrimp in butter. Add salt and pepper to taste and cook until they are pink.
  • Pour the tomato sauce mixture into the bottom of an oven-proof casserole dish. Arrange the tomato wedges in the center of the dish (in a circle). Remove the shrimp from the skillet with a slotted spoon and spread the shrimp around the tomato covering the entire dish.
  • Sprinkle oregano over the shrimp.
  • Pour the white wine over the shrimp.
  • Sprinkle the feta cheese over the shrimp and tomato.
  • Bake at 400 degrees for 15 minutes or until the Feta is melted and serve.

6 ears sweet corn, kernels and scrapings removed separately
4 tablespoons butter

Steps:

  • Put the beans in a saucepan, cover them with water, and simmer until tender, several minutes for frozen beans, about 25 minutes for fresh. Drain, reserving the cooking water. Add the corn kernels to the pan with the butter, 1/2 teaspoon salt, and enough of the cooking water to barely cover. Cook gently for 3 minutes, then stir in the scrapings. Turn the heat to low and cook, without stirring, until most of the liquid is cooked off, 5 to 10 minutes. Season with pepper, pour into a serving dish, and add the parsley and a dash of paprika. Serve right away.
