- The first step of this baked red snapper fillet recipe is preheating your oven to 400 degrees Fahrenheit. Take your Cameron’s red snapper fillet and score it on the skin side about halfway through the fish and 2 inches apart; this will allow the herb mixture to permeate the meat of the fish and keep the fish from curling up.
- Put your olive oil, garlic, parsley, thyme, lemon juice, and salt and pepper into a food processor and blend until the garlic and herbs are in tiny pieces. Line a baking dish that is large enough to fit your fillet with foil and place your lemon slices on the foil. Rub your herb mixture all over your red snapper fillet and inside the scores you made on the fish.
- Place the red snapper on top of the lemon slices and bake for about 15 minutes. You are going to want to check your snapper starting at around 12 minutes. You want it to be fork flakey but not overdone. If it is too rubbery and not flakey, it needs some more time in the oven.
- We found that these red snapper fillets are great served with roasted potatoes and a salad, but there are so many options you could choose as your side. A simple brown butter sauced pasta or rice pilaf would be lovely too.

- Pat the snapper fish dry. With a large knife, make two slits on each side of the fish. Fill the slits and coat the gut cavity of each fish with the minced garlic.
- To make the spice mix, combine the cumin, coriander, salt, pepper and sumac in a small bowl. Use 3/4 of the spice mix to season the snapper on both sides; pat the spices into the fish pushing into the slits you made earlier. Keep the remainder 1/4 of the spice mix aside for now.
- Stuff each gut cavity with the chopped dill, and as much of the sliced peppers, tomatoes and onions as possible.

- While the grill heats begin seasoning the fish. Pour the olive oil over the red snapper. Then sprinkle half the salt, black pepper, garlic powder and paprika over the finish. Massage into the fish. Flip over and repeat. Flip the fish back over and sprinkle the dried parsley on top.
- Cut the lemon in half. Juice one half of the lemon and drizzle over then slice the other half of the lemon and place on top of the fish.
- Reduce the heat on the grill to low. Spray the grill grates with non-stick cooking spray. Carefully, place the fish on top of the grill grates. Grill with lid closed for 7 minutes. Using tongs, remove the lemon slices from the top of the fish and place on the grill grate. Carefully, using a spatula, flip the fish. Place the lemon slices back on the fish, close the lid and grill for an additional 7 minutes or until internal temperature reaches 165 degrees Fahrenheit and the fish is cooked through. Cut fish into slices (if whole filet), divide among plates, and enjoy immediately.

- Veracruz-Style Red Snapper. The “Veracruz-style” recipe is one of the most popular and talked about red snapper recipes out there. It is really great because you have so many options with it, not to mention it is pretty healthy (as are most of the red snapper recipes below).
- “BBQ” Broiled Red Snapper. This red snapper recipe is for all of you that know you want to eat fish (perhaps for health reasons, your spouse or the person you are dating loves to eat fish, etc), but you just can’t seem to stomach anything that tastes remotely “fishy”.
- Cajun Style Blackened Red Snapper. This is one of my personal red snapper favorites, as I love anything with some cajun spice. This snapper recipe is also one of those that is ideal to serve to people that do not like the “fish taste”, while also appealing to those that like fresh fish with some spice (like me).
- Pan-Seared Red Snapper. This is a very popular red snapper dish because it is so quick to make. Even with the preparation and total cooking time, you can have pan-seared red snapper on a plate and ready to eat in 20 minutes flat!
- Grilled Red Snapper (Stuffing Optional) This is my brother Luke’s favorite way to cook red snapper: Grilled. And it’s hard to argue after looking at the picture of a perfectly grilled red snapper filet.
- Lemon Red Snapper with Herbed Butter. This is another family favorite because it is very simple and quick to make. Check out these stats: Prep: 9 minutes; Cook: 13 minutes.
- Whole Oven-Baked Red Snapper. I still recall my first day in Uganda. I had been traveling for a little over 30 hours with layovers to get there, and I was STARVING to say the least.
