Steps:
- Sprinkle the yeast over the warm water in a small bowl. The water should be no more than 100 degrees F (40 degrees C). Let stand for 5 minutes until the yeast softens and begins to form a creamy foam. In a large bowl, mix the warm milk, sugar, and salt, and mix to dissolve. Pour the yeast mixture into the milk mixture, and stir to combine.
- Beat in the butter, eggs, and flour until the mixture forms a smooth, soft dough. Cover the bowl, and let rise until doubled in bulk, about 30 minutes. Stir the dough well, cover, and let rise 30 more minutes.
- Mix honey and 1/2 cup of water in a saucepan, and bring to a boil over medium-high heat. Turn off the heat and let the honey syrup cool.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Oil should be about 2 inches deep.
- Place a large table or soup spoon in a glass of water near the batter. Scoop up about 2 tablespoons of dough per puff with the wet spoon, drop it into the wet palm of your hand, and roll it back into the spoon to create a round shape. Do not overhandle the puffy, soft dough. Drop the dough balls into the hot oil in batches, wetting the spoon each time you make a dough ball. Fry in the hot oil until golden brown on the bottom, and roll them over to cook the other side, 2 to 3 minutes per batch. Gently set the loukoumades aside to drain on paper towels.
- Place the loukoumades on a baking sheet, drizzle them with honey syrup, and sprinkle with cinnamon. Serve warm.

Steps:
- In a large bowl combine all ingredients for the dough.
- Preheat oven to 45°C / 113 °F.
- Cover the bowl with a dampened tea towel and add in the oven.
- Turn off the heat and let the dough rise for about 30-45 minutes. Or leave it until the dough has tripled in size.
- Add plenty of frying oil in a pan and heat over high heat. Fill a glass with cold water and keep aside (use this water to dip your teaspoon in, after each time you're about to take a spoonful of the dough, see next step).
- Grab a handful of the dough, and squeeze it in order for it to get out at the top of your fist. With a teaspoon, scrape the excess dough (about a spoonful of a teaspoon) from the top of your fist and add it to the hot oil. Repeat this process to create as many donuts as you like.
- Cook for a minute or two on each side until they get a deep golden color. Use two forks in order to flip them. NOTE: Make sure they're not overcrowded in the pan.
- Using a skimmer transfer the donuts on paper towels to drain excess oil.
- Sprinkle with lots of honey, icing sugar, cinnamon, walnuts, or any other topping of your liking.
- Don't forget to eat them while they're warm otherwise they get spongy when they're cold.

LOUKOUMADES
A Greek doughnut-hole-like fried puff pastry. If you can't get thyme honey, other honey will do. Each time I've made these, I've come out with a different number, with the count varying quite a bit across time. So the amount given is only a very inexact estimate.

- In a medium sized bowl combine the warm water and the yeast. Stir and set aside for approximately 5 - 10 minutes. You will see bubbling on the surface indicating that your yeast is still active.
- Slowly pour the yeast and water mixture into the bowl with the flour and use your hands to mix everything together. The dough will be very sticky. Mix just enough to ensure that there is no dry flour left in the bowl and that the dough is uniform; do not over mix. Cover with plastic wrap and cover with a clean towel. Set aside in a warm place for about 2 hours, until the dough has more than doubled in size.
- When your dough is ready heat a good amount of vegetable oil in a deep but not too large pot. Your oil should be about 3 - 4 inches deep.

- In a separate bowl, add 3 1/2 cups of sifted flour, 2 tablespoons of sugar, and 1 tablespoon of salt. Stir to combine.
- Add your dry ingredients to your wet slowly, a little bit at a time, while continuing to whisk. Slowly add in one cup lukewarm milk. Your batter should resemble a pancake mix. Also, it should start to bubble.
- Note: If you don't see any little bubbles forming, and your dough doesn't start to rise -- Start Over! That means that your yeast was not active.

- Mix all the dry ingredients together including yeast. Then add lukewarm water and milk and mix well until you get a runny batter similar to pancake batter.
- Cover with a piece of cling film and rest it for about 1-2 hours (in warm weather it will take less time), until dough triples in size and there are lots of air bubbles visible (see photo).
- Once the dough is ready, heat up a small pot with oil on the stove. Once the oil is hot, dip a teaspoon in it and then scoop a teaspoon of the dough and gently drop it into hot oil. Give the dough a good stir in between batches.
- Fry about 4 loukoumades at one time. As the dough is very puffy / airy, they have a tendency to float, make sure you flip them now and again to be sure they are cooked evenly.

- To prepare this traditional loukoumades recipe, start by making the dough. In a bowl add the water, sugar and yeast. Stir with a whisk until the yeast dissolves completely and wait for 5 minutes. In a mixers bowl add the yeast mixture add the rest of the ingredients for the dough and whisk at high speed (for about 2 minutes) until the mixture becomes a smooth batter. (You could also use a hand whisk. Whisk until the mixture has no lumps).
- Cover the bowl with some plastic wrap and let the dough rest in a warm place for at least 1 hour to rise.
- Into a medium sized frying pan pour enough vegetable oil to deep fry the loukoumades. Heat the oil on a medium heat until hot. Test if the oil is hot enough by dipping in some of the dough for the loukoumades. If it sizzles the oil is ready. A more accurate way is to use a kitchen thermometer and measure the oil to be at 160C / 320F.
- Dip a tablespoon in some oil, shake it a bit to remove any excess. It is best to dip the spoon in oil and not water. Dip your hand in the dough and using your palm, squeeze out a small portion of dough between your thumb and index finger, like you are making a fist. Using the spoon, grab the dough ball off your hand and let it drop in the hot oil. Repeat this procedure until the surface off the pan is comfortably filled. You should dip the spoon in the oil & shake off every time, so that the batter doesn’t stick on it.

- In the bowl of a stand mixer, with the dough attachment, add 1 cup lukewarm water and 2 1/2 tbsp of active dry yeast. Whisk together and let stand for 5 minutes to allow the yeast to activate.
- While waiting, measure out flour, sugar and salt into a separate bowl and mix to incorporate sugar and salt into flour.
- Once the yeast has had time to activate, add the lukewarm milk, turn the mixer on to a slow speed 2 to start and slowly begin to add the flour, sugar, salt mixture into the bowl of the stand mixer.
- While waiting for the dough to rest and rise, prepare the syrup and chocolate sauce for the Loukoumades. Combine the sugar, water, honey and cinnamon stick into a saucepan and bring to a boil while slowly stirring.
- For the chocolate sauce, simply melt the milk chocolate or semi sweet chocolate chips in a double boiler over medium heat. Be sure to stir to prevent chocolate from burning.
- Prepare a pot to fry the loukoumades by adding 2-3 inches vegetable oil and bringing oil to a temperature of 350° F. Have a glass of water near the bowl with the dough so that you can dip the spoon into the water before each dip into the batter.
- Begin to add a tablespoon full of dough into the hot vegetable oil, dip the spoon in water and then repeat until you have enough loukoumades to comfortably fill the pan and so that you are still able to move them around with a meshed strainer or slotted spoon.
- For half the loukoumades, dunk several at a time into the syrup mixture and stir with a large spoon to cover them with the syrup. Remove from the syrup and put on a serving dish.
