LOADED GREEK BURGERS
Tired of plain old 'burgers for summertime? Mix it up a bit by adding some classic Greek flavor: spinach, feta, roasted red pepper, and herbs...Yum! Serve these burgers on a warm toasted Kaiser roll, with a delicious feta cheese spread, fresh lettuce, and tomato.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a baking sheet with aluminum foil. Cut the red bell pepper in half from top to bottom; remove the stem, seeds, and ribs; place pepper cut-side-down onto the prepared baking sheet.
- Cook under the preheated broiler until the skin of the pepper has blackened and blistered, about 5 minutes. Allow the blackened pepper to cool and steam in a paper bag for 5 minutes; peel and dice; set aside.
- Stir together the 2 ounces feta cheese, mayonnaise, lime juice, the 1 sprig chopped mint, and the 1 sprig chopped parsley in a small bowl; set aside.
- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Place the roasted red pepper, ground beef, feta cheese, spinach, bread crumbs, egg, garlic, onion, basil, the remaining mint, and the remaining parsley in a bowl. Sprinkle with salt and pepper, and mix gently with your hands until evenly combined. Divide the meat mixture to form 4 equal 4 1/2 inch patties.
- Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, about 4 minutes per side for medium. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Serve burgers on warm toasted Kaiser roll with the feta cheese spread, fresh tomatoes, and lettuce.

- In a bowl, combine yogurt, cucumbers, garlic and juice; set aside. In another bowl, mix beef, zucchini, feta, onion, marjoram, salt and pepper. Form beef mixture into four 3/4-inch-thick patties. Coat a grill pan or grill rack with cooking spray. Grill patties over medium-high heat, flipping once, about 5 minutes each side, until internal temperature reaches 160°F Divide roasted peppers evenly among bottom roll halves; top with 1 burger, 1/4 yogurt sauce and lettuce and cucumber, if desired. Top each with other half of roll.

A Greek-inspired twist on burgers. Great with cole slaw or a kale salad. I devised this recipe when I had a bunch of mint, parsley, and feta cheese on hand.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Mix ground beef, feta cheese, minced onion, red bell pepper, mint, parsley, garlic powder, onion powder, seasoned salt, and black pepper together in a large bowl until evenly mixed; shape into 6 patties.
- Cook the burgers until they are beginning to firm, and are hot and slightly pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

A nice alternative to ground lamb, which can be very expensive. Serve with cucumber sauce, Recipe #492963 I found this recipe online and haven't had a chance to try it yet.

- Prepare Recipe #492963 set aside. In a medium bowl, combine ground beef, cheese, parsley, garlic, and pepper. Shape mixture into two 1/2-inch-thick patties.
- In a large nonstick skillet, cook patties over medium-high heat for 4 minutes per side or until desired doneness. I like mine medium to medium rare. Your choice, of course. Line cut sides of bun halves with spinach. Top with burgers, tomato slices, and sauce. If desired, garnish with red onion.
FETA BURGERS WITH GRILLED RED ONIONS

- Break up beef in large bowl.
- Sprinkle feta, oregano, salt, and pepper over (meat); toss.
- Divide into 8 portions; form each into 4 1/2-inch burgers, pressing in center to form slight indentation. *DO AHEAD Can be made 1 day ahead. Cover; chill.
- Puree garlic in processor; With machine running, gradually add 1/2 cup oil; process 30 seconds. *DO AHEAD Can be made 1 day ahead. Cover; chill.
- Spray grill rack with nonstick spray.
- Prepare barbecue (medium-high heat).
- Brush onion with 1 tablespoon oil; sprinkle with salt and pepper.
- Place burgers and onions on grill. Cover; cook 5 minutes.
- Turn onions and burgers; cook until onions are charred in spots and burgers are medium-well, about 4 minutes longer.
- Transfer to plate. Brush cut sides of buns with garlic oil and place buns, cut side down, on grill; toast about 1 minute.
- Turn buns; cook until heated, about 1 minute.
- Place burgers on bun bottoms and top each with onion, tomato, and bun top.

- Combine the ground meat(s), garlic, mint, oregano, salt and pepper in a mixing bowl and knead well. Add 2 to 4 tablespoons of olive oil to the mixture while kneading, to create a soft, succulent mass. The mixture should be dense but slightly unctuous. Cover and refrigerate for 30 minutes to 12 hours. (You can make ahead, the day before.)
- Mash the feta, cayenne or paprika, and lemon juice together in a bowl using a fork, or pulse on and off in a food processor, to form a thick paste. Divide the mixture into 8 eqyal portions, about a tablespoon each, and shape into small balls.
- Right before preparing the burgers, core and cut the tomatoes into 1-inch/2.5-cm cubes, place in a bowl, season lightly with salt and set aside.
- Divide the ground meat mixture into 8 equal parts. Rub the palms of your hands with a little olive oil and shape each portion into a burger. Using your thumb, make an indentation in each burger and fill with the spicy feta ball. Pinch together the meat to seal the indentation, so that the feta is not exposed.
