Creamy, sweet, light, fluffy, delicious! Raspberry yogurt salad is sure to be a favorite side dish or dessert.

2 small boxes instant cheesecake pudding mix (or white chocolate pudding mix) (3.4 ounces each)
32 ounces strawberry yogurt
16 ounces whipped topping (Cool Whip)
16 ounces frozen raspberries (or any frozen fruit)

Steps:

  • In a large bowl, beat together the dry pudding mix and yogurt. I prefer using an electric mixer for this.
  • Then fold in the Cool Whip whipped topping. (The lumps go away as you keep folding.)
  • Fold in the frozen raspberries (any frozen fruit will work).
  • Keep refrigerated.

4 cups mixed fresh fruit, cut into chunks (grapes, melon, oranges, peaches, berries)
1/4 cup slivered almonds
1 cup plain yogurt
3 tablespoons honey
1 1/2 tablespoons grated lemon rind

Steps:

  • In serving bowl, gently stir fruit and almonds together; set aside.
  • In a separate bowl combine yogurt, honey, and lemon rind.
  • Fill individual dessert bowls with fruit salad. Spoon yogurt mixture over fruit salad, and sprinkle the top with additional almond slivers (optional).

200 g Greek yogurt, 8 oz (FAGE brand is available overseas, you can get a variety of fat contents, they are all delicious or y)
fresh fruit salad, of your choice (try to use a variety of fresh, seasonal fruit, cut into little pieces)
2 tablespoons honey (regular honey can be used, but Greek Thyme Honey is awesome)
4 tablespoons toasted walnut pieces
cinnamon

Steps:

  • In a parfait or sundae glass, layer some fruit salad, top with 1/2 of the yoghurt per serving, and layer more fruit on top. Drizzle with 1 tblsp honey per serving (or to taste), sprinkle with 2 tblsps of walnut pieces per serving and a sprinkle of cinnamon.
  • Enjoy!

2 large oranges (cut into filets or segments, then diced)
1 green apple (peeled, cored and diced)
1 cup blueberries (washed and patted dry)
1 cup raspberries (washed and patted dry)
2 large bananas (peeled and sliced)
Chopped pistachios (optional)

Steps:

  • Make the dressing: Whisk all dressing ingredients together and chill in the fridge until ready to use.
  • Make the salad: Place all prepped fruit in a large bowl and carefully mix with the dressing. Sprinkle with chopped pistachios, if you like.

1 cup fresh sliced kiwi (2 to 3 kiwi depending on size, peel and slice into quarter-moons about ¼" thick)
1 cup fresh pineapple chunks (about ¾" to 1" pieces)
1 (15-ounce) can mandarin oranges (drained)
1 cup vanilla yogurt (regular (Greek yogurt can be too thick))
½ teaspoon vanilla extract
1 tablespoon pure maple syrup (or honey)

Steps:

  • Place the strawberries, blueberries, kiwi, pineapple, and oranges in a large bowl. Toss gently to combine.
  • In a small bowl, stir together the yogurt, vanilla extract, and maple syrup (or honey) until well-combined.

4 Pink Lady or Honey Crisp apples, diced
4 Granny Smith apples, diced
4 blood oranges or naval oranges
4 kiwi, quartered
1 cup pomegranate arils
1/2 cup chopped pecans, chopped (optional)
1/2 cup plain Greek yogurt
1 tsp. lemon zest
3 Tbsp. lemon juice
2 Tbsp. honey
1 tsp. vanilla extract
dash of cinnamon and nutmeg

Steps:

  • Combine yogurt, honey, lemon zest, lemon juice, vanilla, honey and spices in a small bowl and set side.
  • In a large bowl, gently toss together the cut up fruit slices. If preparing salad ahead of time, be sure to squeeze a little extra lemon juice on the fruit so it does not turn brown. Also - top with dressing only right before serving fruit salad. Sprinkle with extra cinnamon and pecans before serving too! YUM! Enjoy!
