5 oz. plain greek yogurt ((I used 5% fat yogurt))
2 tbsp mayonnaise
1/2 cup grated parmesan cheese
1 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1.5 lb. chicken tenders (whole) or chicken breasts (cut in quarters)
Parsley ((chopped, for garnish))

Steps:

  • Preheat oven to 375°F. Lightly coat a 12 inch oven proof pan or 9×9 baking dish with nonstick oil spray and set aside.
  • In a medium bowl, mix together the greek yogurt, mayonnaise, Parmesan cheese, garlic powder, salt and pepper.
  • Add chicken into the bowl with yogurt mixture and coat the mixture all over the chicken.
  • Move chicken to a baking dish (or oven proof pan). Chicken should be thinly coated with the yogurt mixture. Don't put too much or any additional mixture leftover.
  • Bake for 25-30 minutes, or until the chicken is cooked through.
  • Turn the oven to broil and place the pan under the broiler for 2-3 minutes until lightly browned on top.
  • Optional: garnish with chopped parsley.

3/4 cup nonfat plain Greek yogurt
1/2 cup Parmesan cheese
2 garlic cloves, minced
1/2 tsp. lemon zest
1.5 tsp. grill seasoning (seasoned salt, Italian seasoning, ranch seasoning, or Cajun seasoning)

Steps:

  • Preheat the oven to 375 degrees.
  • Place the chicken in a prepared baking dish. Season well with salt and pepper.
  • Mix together the yogurt, Parmesan, garlic, lemon zest, and the seasoning you choose. Pour over the chicken and use your hands to make sure the chicken is completely coated.
  • Bake for 35-45 minutes until chicken is cooked through.

1 (6 ounce) container fat-free Greek yogurt (such as Fage®)
⅓ cup grated Parmesan cheese
1 teaspoon seasoned salt
1 teaspoon garlic powder
½ teaspoon ground black pepper
4 skinless, boneless chicken breast halves
3 tablespoons dry Italian-seasoned bread crumbs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a baking pan with cooking spray.
  • Mix Greek yogurt, Parmesan cheese, seasoned salt, garlic powder, and ground black pepper together in a bowl.
  • Arrange chicken breasts in a single layer in the prepared baking pan. Spread Greek yogurt mixture on top of chicken; sprinkle bread crumbs on top.
  • Bake uncovered in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 40 minutes.

Yogurt marinated chicken is juicy, tender, and very flavorful. Combine it with citrus, garlic, and your favorite herbs and spices to create the best-tasting chicken you've ever had. This marinade works great on any cut of chicken but, it's especially great on chicken breast because it locks in the moisture and helps all of those delicious flavorings stick.

2 pounds boneless, skinless chicken breast, tenders, or thighs
• 1 cup plain yogurt
• ¼ cup olive oil
• ¼ cup lemon juice
• 3 garlic cloves
• 2 teaspoon salt
• 1 tablespoon dried oregano
• 1 teaspoon paprika
• 1 teaspoon ground cumin
• Black pepper, to taste
• Pinch of crushed red pepper flakes
• Pita bread, couscous, Greek salad, or rice pilaf
• Bell pepper slices
• Onion slices
• Tomato slices
• Feta
• Olives
• Tzatziki sauce

Steps:

  • Slice the chicken into equal-sized strips.
  • Make the marinade: combine all of the marinade ingredients in a large mixing bowl and whisk together.
  • Place the chicken in the bowl and toss to coat in the marinade.
  • Cover with plastic and chill in the refrigerator for 30 minutes or up to 8 hours.
  • Allow the chicken to come to room temperature.
  • The chicken can be grilled on the barbeque, cooked on the stovetop in a skillet, or baked in the oven.
  • To cook on the stovetop, heat a cast-iron skillet over medium-high heat. Add 2 tablespoons of olive oil and place the chicken in the pan. Cook for 5 minutes then, flip over. Cook 5 more minutes or until the internal temperature of the chicken reaches 165 °F. Try not to flip the chicken over before 5 minutes or the chicken will tear. Yogurt tends to stick.
  • Serve the chicken in a pita to create a delicious chicken gyro, with rice, over salad, or with tzatziki sauce. Enjoy!
  • To bake the chicken, place the chicken on a baking tray and cook in an oven that has been preheated to 425 °F for 25 minutes or until the internal temperature reaches 165 °F.

  • In a larger mixing bowl, combine the marinade ingredients, mix well. Add the chicken tenders and mix to make sure chicken is well coated with the marinade. Cover and refrigerate for 30 minutes (or refrigerate overnight.) Meanwhile, make Tztaziki sauce according to this recipe, and prepare the pita and other gyro fixings.
  • Heat 1 tbsp extra virgin olive oil in a non-stick skillet over medium-high until shimmering but not smoking. Add chicken tenders to the pan (make sure to shake off any excess marinade before adding chicken to the pan.) Cook on one side undisturbed for 5 minutes until browned.   • Using a sharp knife butterfly the chicken breasts so they will cook more evenly. Lay them in a pan. Season with kosher salt and freshly ground pepper on each side.
