- In a bowl, combine the wet ingredients: egg, oil, yogurt, mashed banana and yogurt.
- In a separate, smaller bowl combine the flour, baking powder, baking soda, cinnamon and salt.
- Fold in the dry ingredients into the wet until just combined. Lumps are OK!
- If the batter is too thick, add a bit of milk.
- Heat a non-stick griddle or pan to medium and drop in the batter, about a quarter cup per pancake.
- Once you see bubbles on top and a golden brown edge, check that the pancake is coming off the pan smoothly and flip.
- If you are having trouble removing the pancakes, add a touch of oil or butter.

- Combine the greek yogurt and eggs in a medium sized bowl. Whisk to combine.
- In a separate bowl, mix together the flour and baking soda.
- Pour the yogurt mixture over the dry ingredients and stir to combine. Add in the milk and mashed banana and mix well.
- Heat a large skillet on the stove to medium heat, or turn an electric griddle to 350 degrees. Melt a little butter in the skillet or on the griddle and scoop batter on top into desired sizes. (I use a heaping 1/4 cup scoop and spread them out a little.)
- Once tops start to bubble, flip and cook until both sides are cooked through. Serve with maple syrup, jam, almond butter, or fresh fruit.

- Combine eggs, oil, banana, yogurt and honey in a bowl and mix well using a hand whisk.
- Whisk together flour, baking powder, baking soda, cinnamon, and salt.
- Add yogurt mixture to dry ingredients and stir just until combined, allowing batter to remain lumpy.
- Heat 2 12-inch skillets over medium heat for about 4 minutes. Coat with cooking spray. Cook 4-5 pancakes on each skillet, about 4 minutes on the first side (or until golden brown) and then about 2 more minutes on the second side.
- The result is yummy, fluffy pancakes with a hint of sweetness, banana and cinnamon. If you're in the mood to indulge, serve them with a little maple syrup, but they are excellent just as they are with no toppings at all. And healthier than regular pancakes!

- Add all of the ingredients (except optional mix-ins) to a blender and blend on high until completely smooth, about 30 seconds to 1 minute. Let the batter sit in your blender for 10 minutes; this is important to allow the batter to thicken up properly, so please do not skip!
