GREEK THIPLES
These are the best honey rolls Posted for ZWT II. Taken from a cookbook my late DM purchased at a local Greek Festival, written by members of the Local Greek Orthodox Church.

- Beat eggs until very light. Beat in the 2 cups flour and salt. Work in the 1/2 cup of flour and a little more if needed. Dough should be soft and does not stick to your fingers. Turn dough onto a board and spread lightly with butter, working in butter with hands a little at a time. Knead dough until it is smooth and soft.
- Cut dough into 4 parts. Roll one part on a floured board until paper thin, keeping remaining dough covered to avoid drying, until ready to use. A ravioli machine may be used instead of rolling. Cut into 2 x 6 inch strips.
- Drop into hot oil, 365 degrees, and using two forks turn dough over immediately and roll quickly before it becomes to crisp. Fry until very lightly browned. Drain on absorbent paper. Dilute honey with a little hot water and dribble over Thiples. Sprinkle with sinnamon and finely chopped nuts.
- Thiples are best eaten with fingers as they break if pierced with a fork.

- Beat the eggs with the mixer, add soda, icing sugar and salt. They do not have to be beaten for a long time. Add juice and ouzo and mix flour and knead by hand until the dough is medium smooth to firm. Separate into two balls, wrap in membrane and place in refrigerator for 1 or 2 hours.
- Flour your working surface and roll out a phyllo as thin as you can. You can make it with the pasta machine until very thin (1 - 3 - 5 - 6) or according to your own machine, if it has more numbers. If the dough is sticky do not add flour to the dough but flour the surface and your hands.
- Cut dough in square pieces 8 x 8 cm to make the cylinder shaped folded one, or in stripes 3 cm x 20 cm to make roses shaped. Place them on a cloth and keep them covered either with a cloth or membrane until finished.
- In a heavy skillet add plenty of oil and heat oil. For the cylinder shaped diples, place the dough in the hot oil and holding two forks fold left side towards the center then the other side. Turn quickly on the other side and when golden place on kitchen paper. In order to make the roses shaped, place one edge of stripe in between the fork and hold the other end. Place fork in the hot oil and roll around the fork until the end of stripe. When golden, place on kitchen paper.

- Place the egg whites into the bowl of the electric mixer, along with a pinch of salt. Make sure your egg whites, bowl and whisk attachments are clean and free of any water. Whisk the egg whites until the mixture is very thick and glossy and a long trailing peak forms when the whisk is lifted (meringues).
- Add the egg yolks one at a time, whilst mixing; wait for each one to be absorbed, before adding another. In a cup add the orange and lemon juice and baking soda and blend, until dissolved and pour in the egg mixture. Add the white wine vinegar and the sugar and mix.
- Pour the mixture in a large bowl or basin and sift in the flour; add the oil and knead the dough using your hands, until smooth and elastic, and not sticky (if it is sticky, add some more flour).

- In a large bowl, beat the eggs, ouzo, sugar, vanilla sugar and lemon juice. Add the flour a little at a time to form a stiff dough (you may not need all the flour). It should not stick to your hands. Knead it for about 5 minutes, place it in a clean bowl, wrap it in plastic wrap and rest for about 30-50 minutes.
- Take a piece of dough the size of your fist then, using a pasta machine and reducing settings notch by notch, roll out the dough until it is 2mm thick. Cut pastry into squares about 15cm by 15cm in size.
- Heat the oil in a deep-sided frying pan. Drop the pastry squares into the hot oil (be careful, the hot oil will spit). Using a fork, roll them up to form cylinders. Admittedly, this step does require a bit of practice (see note). Don’t worry if they are not perfect to begin with. Drain the thiples after frying.
- For the syrup, combine ingredients with 125ml water in a large saucepan, bring to a boil, then reduce heat and simmer (5-10 minutes).
