GREEK STYLE SHRIMP SCAMPI AND LINGUINI



Greek Style Shrimp Scampi and Linguini image

1 pound linguini
Salt
1 pound medium to large shrimp deveined and peeled, tails removed
Pepper
1/3 cup extra-virgin olive oil
4 cloves garlic, thinly sliced
Couple pinches red pepper flakes
1/2 lemon, zested and juiced
2 sprigs oregano, finely chopped
Handful pitted kalamata olives, chopped
1/2 cup white wine, eyeball it
1/2 cup chopped flat-leaf parsley
1 cup feta cheese crumbles

Steps:

  • Place a large pot of water on the stove to boil. Salt water and cook pasta to al dente.
  • Season the shrimp with salt and pepper.
  • While the pasta water comes to a boil, heat extra-virgin olive oil in a deep skillet with garlic. When garlic is brown, remove and reserve. Add shrimp and cook 3 to 4 minutes. Add red pepper flakes, lemon zest, oregano, olives, and wine and cook together a couple of minutes more. Remove from heat. Add a ladle of starchy pasta cooking water to sauce and some lemon juice. Remove the sauce from the heat. Drain pasta and add to the skillet. Let pasta soak in juices for a minute then toss with parsley and feta. Use tongs to pull pasta from skillet, giving it a turn to twist in as many ingredients as possible. Then, use the tongs to remove and arrange the shrimp and ingredients that may remain in the pan, distributing them evenly among the portions.

1 and 1/4 pounds of medium to large shrimp (peeled and deveined)
2 teaspoons olive oil
14 ounce can of tomatoes (undrained, crushed)
2 teaspoons garlic (minced)
1/2 teaspoon oregano (dried)
salt and pepper to taste
3 zucchini (spiralized into noodles)
1/3 cup feta cheese (crumbled)
1/3 cup kalamata olives (halved)
Optional garnishes: chopped parsley and lemon wedges

Steps:

  • Heat the olive oil in a large pan over medium-high heat.
  • Add the shrimp and cook for 2-3 minutes or until just starting to turn pink.
  • Add the garlic and cook for 30 seconds more. Season to taste with salt and pepper.
  • Add the crushed tomatoes and oregano and simmer for 2-3 minutes or until sauce is bubbling Add more salt and pepper to taste if needed.
  • Heat another pan over medium-high heat and add the zucchini noodles. Season generously with salt and pepper to taste. Cook, stirring occasionally until noodles have just started to soften, 3-4 minutes.
  • To serve, divide the zucchini noodles between 4 bowls. Spoon the shrimp and tomato mixture evenly over the bowls and top with feta cheese and olives. Serve, garnished with chopped parsley and lemon wedges if desired.

8 ounces uncooked multigrain angel hair pasta
1 tablespoon butter
1 tablespoon olive oil
2 green onions, thinly sliced
4 garlic cloves, minced
1/2 cup reduced-sodium chicken broth
2 teaspoons grated lemon zest
3 tablespoons lemon juice
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 cup minced fresh parsley
Grated Parmesan cheese, optional

Steps:

  • Peel and devein shrimp, removing tails. Cut each shrimp lengthwise in half. Cook pasta according to package directions. , In a large nonstick skillet, heat butter and oil over medium-high heat. Add shrimp, green onions and garlic; cook and stir until shrimp turn pink, 2-3 minutes. Remove from pan with a slotted spoon., Add broth, lemon zest, lemon juice, pepper, salt and red pepper flakes to same pan. Bring to a boil; cook until liquid is slightly reduced, about 1 minute. Return shrimp to pan; heat through. Remove from heat., Drain pasta; divide among 4 bowls. Top with shrimp mixture; sprinkle with parsley. If desired, serve with cheese.
