SPATCHCOCKED GREEK CHICKEN

Once you learn the simple technique of spatchcocking a chicken, you will make it this way all the time. Removing the backbone basically flattens the chicken and helps it roast faster and the result is a juicy chicken with crispy skin. This recipe is loaded with Greek flavors like lemon and oregano and is simply delicious.

1 whole chicken
1 onion, quartered
The Marinade:
• 1/3 cup olive oil
• ¼ cup lemon juice or more
• 3-4 garlic cloves, grated
The Spices:
• 2 teaspoon salt, or to taste
• ½ teaspoon black pepper
• 2 tablespoons dried oregano
• 1 teaspoon ground cumin
• ¼ teaspoon crushed red pepper flakes
• 1 teaspoon sweet paprika

Steps:

  • Preheat the oven to 425 °F, 220 °C.
  • Spatchcock the chicken: Using a sharp knife or kitchen shears, cut along the backbone and remove it. Save it for chicken stock in a freezer-safe bag in the freezer.
  • Cut the breastbone so that the chicken lays flat.
  • Cut the wing tips or tuck them under while roasting so that they do not burn. Many times, the chicken is sild with the tips already trimmed.
  • Marinate the chicken: Combine the marinade ingredients and mix together. Pour over both sides of the chicken.
  • Season the chicken: Combine all of the spices and mix them together. Season both sides of the chicken.
  • Chill the chicken in the refrigerator for 3-4 hours so that the marinade can flavor the chicken. If you do not have time, just roast the chicken straight away, the marinade and spices are very flavorful.
  • Transfer the chicken and all of the marinade and spices to a cast-iron skillet.
  • Add the onion to the skillet and bake in the center of the preheated oven (uncovered) until the internal temperature reaches 165 °F. About 55 minutes.
  • For extra golden and crispy skin, turn the broiler element on for the final 5-6 minutes. Keep a close eye on the chicken so that it does not burn.
  • Remove from the oven and set aside for 10 minutes so that it stays juicy.
  • Serve the spatchcocked chicken with lemony roasted potatoes, mashed potatoes, salad, or Mediterranean rice pilaf.

This one pan Greek chicken with artichokes and olives is the perfect recipe when you need a quick weeknight dinner meal. The combination of crispy chicken, briny olives, flavorful marinated artichokes, and fresh lemon just can't be beat.

6 bone-in, skin-on chicken thighs
2 tbsp avocado oil
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
3 cloves garlic, smashed
¼ cup lemon juice
1 lemon thinly sliced
8 oz marinated artichoke hearts, drained
½ cup castelvetrano olive
½ cup kalamata olives

Steps:

  • Preheat the oven to 425 degrees.
  • Pat the skin of the chicken thighs dry with a paper towel then liberally season the chicken skin with salt.
  • Heat a large cast iron skillet over medium-high heat. Once the skillet is hot, add the oil and then add the chicken thighs to the skillet skin side down.
  • While the chicken thighs are browning, season the other side with pepper, garlic powder, onion powder, dried oregano, red pepper flakes.
  • When the chicken skin is golden brown, roughly 7-10 minutes later, flip the chicken and turn off the heat. Tuck the lemon slices in between the chicken. Next add the artichokes, smashed garlic, olives, and lemon juice to the pan.
  • Place the skillet into a 425 degree oven and let the chicken cook for 25-30 minutes or until the chicken is cooked through.
  • Remove from the oven and let sit for 10 minutes to cool. Serve and enjoy!

1 lb boneless skinless chicken breast, cut 1-1/2-inch cubes
2 tablespoons olive oil
1 (14 ounce) can artichoke hearts, drained and quartered
6 garlic cloves, thinly sliced
1/2 cup dry white wine
1 cup chicken broth
1 tablespoon lemon juice
2 tablespoons sun-dried tomatoes, finely chopped
1 teaspoon lemon peel, grated
2 teaspoons oregano leaves, chopped
1/4 teaspoon crushed red pepper flakes

Steps:

  • Season chicken with salt and pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat and brown chicken and artichokes, stirring occasionally, about 8 minutes. Remove chicken mixture and set aside.
  • Heat remaining 1 tablespoon olive oil over medium heat and cook garlic for about 30 seconds. Add wine to pan and stir, scraping up brown bits. Stir in Chicken Broth and next 5 ingredients (lemon juice, sun-dried tomatoes, lemon peel, oregano, red pepper flakes).
  • Return chicken mixture to skillet and bring to a boil. Reduce heat and simmer covered, stirring occasionally, until chicken is throughly cooked, about 10 minutes.

A tasty chicken dish - with a flavoursome blend of herbs, spices, vegetables and honey - which is nonetheless still reasonably low both in calories and in fat. Adapted from Paige Morehouse's recipe which appears in Prevention Healthy Cooking's 'Eat Up, Slim Down: Tried-and-true recipes and tips from real weight-loss winners' by Jane Kirby and David Joachim. Because the recipe contains several vegetables, it really is a stand-alone dish. When I've made it, I've added a bit more garlic (personal preference). The original recipe had 2 cloves of garlic; and I've included more like 8 ounces of mushrooms (again, personal preference). The original recipe had 3 ounces of mushrooms. I've always used kalamata olives when making this dish.

1 tablespoon olive oil
4 boneless chicken breasts, skinned
1 onion, chopped

8 ounces mushrooms
1 cup white wine
8 ounces bottled marinated artichoke hearts
1 ounce sun-dried tomato, dry-packed coarsely chopped
1 1/2 ounces Greek olives, pitted, halved
1 teaspoon lemon-pepper seasoning
1 teaspoon honey
1/4 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon cinnamon
2 1/2 ounces feta cheese, crumbled
4 lemon wedges or 4 lemon slices

Steps:

  • Warm the oil in a large non-stick pan (which has a lid) over a medium-high heat. Add the chicken and cook for 5 minutes on each side, or until browned. Transfer to a plate.
  • Reduce the heat to medium, add the onion and garlic. Cook for 5 minutes, or until the onion has softened.
  • Stir in the mushrooms and cook for a further 10 minutes or until the mushrooms have softened and the juices have reduced.
  • Add the wine, artichokes, tomatoes, olives, lemon-pepper seasoning, honey, salt, oregano, cinnamon and chicken.
  • Reduce the heat to low, cover and cook for 15 minutes.
  • Uncover and cook for 5 minutes, or until the sauce thickens slightly and a thermometer inserted in the thickest part of the breasts registers 70ºC/169ºF and the juices run clear.
  • Sprinkle with the cheese and serve over rice with the lemon wedges.

I really like this dish a lot, and add lots more lemon, pepper, garlic, and oregano, but that's my taste! I've also added parboiled, quartered potatoes at the start, and really like the artichoke hearts and potatoes together. Adapted from Betty Croker's New International Cookbook.

2 1/2-3 lbs chicken, cut into pieces or 2 1/2-3 lbs your favorite mix of bone-in skin-on chicken pieces
1/2 cup fruity olive oil
1/4-1/2 cup lemon juice (I love it really lemony, but you may prefer less lemon to start...can always add more!)
2 1/2 teaspoons dried oregano
1 teaspoon salt
1/2-1 teaspoon pepper (I use fresh ground black)
1 -4 clove chopped garlic, to taste (I use way more)
1 can artichoke heart, quartered (NOT marinated)
lemon slice

Steps:

  • Preheat oven to 375 degrees fahrenheit.
  • Rinse chicken pieces and pat dry.
  • Put chicken in 13 x 9 x 2 inch baking dish.
  • Whisk together remaining ingredients (except artichoke hearts and lemon slices) and pour evenly over chicken.
  • Cook uncovered, spooning juices over chicken occasionally, for about 30 minutes.
  • Turn chicken over and cook for 10 minutes more.
  • Remove the pan from the oven, scatter artichoke heart among the chicken, and spoon cooking juices over them.
  • Continue to cook for about 20 minutes more, basting once or twice more, until chicken is done (juices run clear when the thickest part of the largest piece is pierced).
  • Remove pan from oven, garnish with lemon slices and a final quick grind of pepper, if you like, let rest about 5 minutes and serve.
