GRILLED GREEK CHICKEN SANDWICHES (COOKING FOR 2)



Grilled Greek Chicken Sandwiches (Cooking for 2) image

Speed your way to a great-tasting Greek sandwich seasoned with lemon and oregano. It's better than take-out!

1/4 cup Yoplait® Original Fat Free plain yogurt
1/3 cup finely chopped seeded cucumber
1 medium green onion, sliced (1 tablespoon)
1 teaspoon grated lemon peel
Dash salt and pepper
2 teaspoons lemon juice
1 teaspoon olive or vegetable oil
1/4 teaspoon dried oregano leaves
Dash salt and pepper, if desired
2 boneless skinless chicken breasts (4 oz each)
1 pita (pocket) bread (6 inch), cut in half to form pockets
1 small tomato, sliced
2 thin slices red onion

Steps:

  • Heat gas or charcoal grill. In small bowl, mix sauce ingredients. Set aside. (Sauce may become watery if it stands longer than 30 minutes.)
  • In another small bowl, mix lemon juice, oil and oregano. Brush lemon mixture over chicken, coating all sides. Sprinkle with salt and pepper.
  • Place chicken on grill. Cover grill; cook cook over medium heat 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F). Wrap pita halves in foil; place on grill 1 to 2 minutes or until warm.
  • Place chicken, tomato and onion inside pita pockets. Top with sauce.

Slow-Cooker Greek Beef Bites image

Create an appetizer surprise in your slow cooker: these beef bites, simmered in garlic and herbs, and served with a Greek-inspired cucumber-yogurt dipping sauce.

3 pounds beef boneless chuck roast, trimmed of fat
2 tablespoons olive or vegetable oil
4 cloves garlic, finely chopped
1 tablespoon dried oregano leaves
1 1/2 teaspoons salt
1/2 teaspoon coarsely ground pepper
4 tablespoons grated lemon peel
1 cup yogurt
1/2 small cucumber, peeled, cored and finely chopped (1/3 cup)
1/2 teaspoon salt

Steps:

  • Cut beef into 1- to 1 1/2-inch pieces. Heat oil in 12-inch skillet over medium-high heat. Cook beef in oil, in batches if necessary, 8 to 10 minutes, turning occasionally, until brown on all sides.
  • Place beef in 3- to 4-quart slow cooker. Sprinkle with garlic, oregano, 1 1/2 teaspoons salt, the pepper and 3 tablespoons of the lemon peel; toss to mix.
  • Cover and cook on Low heat setting 4 to 5 hours.
  • Stir together yogurt, cucumber, 1/2 teaspoon salt and remaining 1 tablespoon lemon peel in small bowl. Serve beef with toothpicks for dipping into yogurt sauce. Beef bites will hold on Low heat setting up to 2 hours; stir occasionally.

1 medium onion, finely chopped
1 tablespoon olive oil
2 garlic cloves, minced
1 pound fresh baby spinach
1 cup (4 ounces) crumbled feta cheese
1/4 cup pine nuts, toasted
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
8 slices Italian bread (1/2 inch thick)
4 teaspoons butter, softened

Steps:

  • In a large nonstick skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the spinach; cook and stir until wilted. Drain. Stir in the feta, pine nuts, salt, pepper and nutmeg., Spread over 4 bread slices; top with remaining bread. Spread outsides of sandwiches with butter. Grill, uncovered, over medium heat until bread is browned and cheese is melted, turning once, 3-4 minutes. Cut each sandwich into quarters.

  • Combine the feta and cream cheese in the bowl of a food processor and run the food processor for 3-5 minutes until completely smooth and set aside.
  • Bring the oil to medium heat in a large skillet. Add the basil, oregano, rosemary and garlic to the hot oil and stir together. Add the steak strips and stir to coat with the oil and spices. Sprinkle with a bit of salt and pepper. Cook, stirring and flipping occasionally, for about 5 minutes until the steak is cooked to taste.
  • To build each sandwich*, take a toasted baguette slice and spread about 1 ½ tablespoons of the whipped feta across the surface. Top with 1/4th of the cooked steak (for me this was about 1.5 ounces), a chopped olive, half of a chopped cherry tomato and half a tablespoon of diced cucumbers.

  • Heat a large heavy skillet over medium-high heat until very hot (this may take a few minutes if you are using cast iron, or only about 30 seconds to a minute if using another material).
  • Add the chicken to the skillet and spread out in an even layer. Cook without disturbing for about 5 minutes. Then, flip and cook on the other side for about 5 more minute, or until chicken is completely cooked (the internal temperature should be 165 degrees F, or cut into a piece to make sure it's not pink anymore).
