Provided by Food Network Kitchen

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 11

Kosher salt
12 ounces penne pasta (preferably spinach-flavored)
2 tablespoons extra-virgin olive oil
1 yellow bell pepper, cut into 1/2-inch strips
One 15-ounce can chickpeas, drained and rinsed
1 cup grape or cherry tomatoes, halved
4 cloves garlic, thinly sliced
1/3 cup pitted kalamata olives, rinsed and chopped
3 cups tightly packed baby arugula or spinach (about 3 ounces)
Freshly ground black pepper
3/4 cup Food Network Kitchen™ Inspirations Greek Feta Herb Vinaigrette

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/4 cup of the cooking water, then drain.
  • Meanwhile, heat the oil in a large pot over medium-high heat. Add the peppers and cook, stirring occasionally, until just tender, about 3 minutes. Add the chickpeas, tomatoes, garlic and 1/2 teaspoon salt and cook, stirring occasionally, until the garlic is lightly browned and the tomatoes are just warmed through, about 3 minutes.
  • Add the olives, pasta and the reserved pasta cooking water to the pot and cook for 1 minute. Remove from the heat and stir in the arugula until wilted. Season with salt and pepper. Transfer to a serving dish and drizzle with the Greek Feta Herb Vinaigrette.

4 spring onions
½ a bunch of fresh dill
200 g podded raw or frozen peas
1 small handful of black olives (stone in)
2 tablespoons extra virgin olive oil
40 g feta cheese
For the chicken

½ a lemon
½ a bunch of fresh mint

VILLAGE-STYLE GREEK SALAD WITH CHICKEN & LEMON-MINT VINAIGRETTE

Village-Style Greek Salad with Chicken & Lemon-Mint Vinaigrette image

"Village-style" salads, called horiatiki in Greece, usually omit the lettuce and leave the other ingredients in rough chunks.

Provided by Adam Ried

Categories     Lunch

Yield four.

Number Of Ingredients 12

One-half medium red onion, thinly sliced (about 1 cup)
1-1/2 lb. chicken tenders
Kosher salt and freshly ground black pepper
1/3 cup plus 2 tsp. extra-virgin olive oil
1/3 cup chopped fresh mint
2 Tbs. fresh lemon juice
1 medium clove garlic, minced
1/2 tsp. finely grated lemon zest
12 oz. feta, cut into 1/2-inch cubes (2-3/4 cups)
2 cups cherry tomatoes, washed and halved
1 large cucumber, peeled, seeded, and cut into 1/2-inch chunks
2/3 cup pitted Kalamata olives, halved

Steps:

  • Put the sliced onion in a small bowl and add enough cold water to cover. Trim off any exposed tendon ends from the wide tips of the tenders, if necessary. Season the tenders with 3/4 tsp. salt and 1/2 tsp. pepper. Heat 2 tsp. of the oil in a 12-inch nonstick skillet over medium-high heat until hot. Cook the tenders until well browned on both sides and just cooked through, about 3 minutes per side. Transfer the chicken to a cutting board and let rest while you make the dressing. In a large bowl, combine the mint, lemon juice, garlic, lemon zest, and 1/4 tsp. each salt and pepper. Slowly whisk in the remaining 1/3 cup oil. Set aside 2 Tbs. of the vinaigrette in a small bowl. Drain the onions and press them gently to remove any excess water. Add the onions to the large bowl of vinaigrette, along with the feta, tomatoes, cucumber, and olives. Slice the chicken crosswise into 1/2-inch pieces and add it to the salad. Toss everything to coat. Divide the salad among four serving plates, drizzle with the reserved vinaigrette, and serve immediately.

  • Put a layer of feta chunks in the bottom of a pint sized mason jar. Top them with a sprinkle of the herbs and a scritch of fresh ground pepper, and repeat until you get to the top of the jar. Cover with olive oil and store in refrigerator overnight, or on the counter for a couple of hours. Take feta out of the refrigerator a few hours before you start cooking to continue to marinate at room temperature. If your olive oil solidified in the refrigerator, that's okay, it will liquify again as it warms up.
  • Place all the salad ingredients in a large bowl and gently toss together. Add salt and cracked black pepper to taste. Really, that's it. This salad lasts a couple of days in the refrigerator, but that's only happened once or twice when The Boy was working a lot. Otherwise, it's gone.
