1 teaspoon finely chopped garlic
1/4 teaspoon lemon-pepper seasoning
1/4 cup lightly packed chopped fresh spinach leaves
1/4 cup crumbled feta cheese (1 oz)
1 tablespoon chopped ripe olives

Steps:

  • Heat gas or charcoal grill. Rub both sides of each piece of beef with garlic; sprinkle with lemon-pepper seasoning.
  • Cover and grill beef over medium heat 9 to 11 minutes, turning once, until beef is of desired doneness.
  • In small bowl, mix remaining ingredients. Spoon over beef.

1-1/2 teaspoons dried oregano
1-1/2 teaspoons dried basil

  • In a small bowl, combine the first five ingredients; rub onto both sides of steaks. In a large skillet, cook steaks in oil for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare a thermometer should read 135°; medium, 140°; medium-well, 145°). 3 lbs skirt or flank steak
1/3 cup soy sauce (I used Bragg's liquid aminos)
1/4 cup apple cider vinegar
2 limes (1/4 cup, juice of)
Handful cilantro (minced)
4 garlic cloves (minced)
1 jalapeño with seeds (minced)
2 tsp cumin (ground)
2 tsp chilli powder
1 tsp ground black pepper

Steps:

  • Place steak in a large flat dish with side.
  • In a medium bowl, combine marinade ingredients: soy sauce through pepper and mix well to combine.
  • Pour your marinade on top of steak in dish and coat steak gently an all sides.
  • Cover your marinated steak and refrigerate for 4 - 24 hours. Don't exceed 24 hours.
  • Preheat grill to 500 degrees F or medium-high heat.
  • Grill to your level of desired doneness. 5 minutes per side will result in a medium rare steak. covered for 5 minutes per side for medium rare, longer for more done. Tip: skirt steak is a thinner cut, to check if your steak is done cut with a knife right on the grill or transfer to a plate and check.
  • Use a well seasoned cast iron grill pan for indoor grilling.
  • Indoor or outdoor grilling: cover meat and let rest covered with foil for 5 minutes. This allows the steak juices to settle and become even. more flavorful!
  • Slice and serve along with your favorite southwest side dishes.

In Greece, butchers use the French style of cutting meat, and ribeyes are cut with the bone in, but boneless ribeyes work equally well. The recipe calls for a traditional beef marinade, and an oil and lemon basting sauce. Whether cooked on the grill or grilled in the oven, this is an easy and delicious dish. Using red drinking wine minimizes the acidity which toughens meat so it is highly recommended NOT to use red wine vinegar or lemon juice as that can create a tougher form of cooked meat.

4 rib eye steaks
1/2 teaspoon sea salt
1/4 teaspoon fresh ground pepper
1/2-3/4 teaspoon Greek oregano (Rigani)
1 1/2 tablespoons olive oil
3/4 tablespoon red wine (NOT red wine vinegar and NOT cooking wine)
3 tablespoons olive oil
1 teaspoon lemon zest, grated
1 large lemon, cut into wedges

Steps:

  • Combine salt, pepper, and oregano in a small bowl. Whisk together the oil and wine and add to spices. Rub steaks on both sides with the mixture and place in a single layer in a shallow pan. Cover and marinate for at least one hour before cooking. (Steaks can be covered and marinated for up to 24 hours.).
  • Mix 3 tablespoons of olive oil with the lemon juice or zest and brush the steaks just before cooking.
  • Grill to taste over hot coals or Medium heat on a gas grill and brush with oil and lemon mixture a couple of times while cooking.
  • Serve with lemon wedges on the side.

Baby back ribs - 2 racks
Fresh thyme - approx ¼ cup (or more)
Fresh rosemary - approx ¼ cup (or more)
Fresh oregano - approx ¼ cup (or more)
Garlic - 4 cloves
Salt - 1 teaspoon
White or Black Pepper - ½ teaspoon
Olive Oil - approx ¼ cup
White wine vinegar - approx ½ cup

Steps:

  • Finely mince all the fresh herbs and the garlic. (I use a mini-food processor which turns it all into a sort of poultice together.) Mix in the salt, pepper, olive oil and half the white wine vinegar. Use a spoon to spread the herb mix on both sides of the ribs. Lay the ribs meat side down on the aluminum and fold the sides of the foil up to let the ribs brine inside. Pour the remaining vinegar (or more) into the aluminum container and cover the ribs loosely. Allow the ribs to brine for a few hours or overnight in the refrigerator. Cooking is a two-step process of slow, low-heat. Keep the ribs in their aluminum and lay them on a large baking tray that will catch any vinegar that spills out. Bake them for 2 hours at 200 degrees. Then remove the ribs from the aluminum foil and transfer them to the grill, also at 200 degrees. Turn the ribs every 15 minutes for 1 hour, and raise the temperature to 250-275 for the last 20 minutes to get a good crust. Squeeze fresh lemon juice on ribs before serving.

  • Prepare the marinade for the lamb kebab. In a large bowl add the olive oil, garlic, lemon juice, the herbs and spices and season with freshly ground pepper – don’t add salt yet.   • In the meantime prepare the tzatziki sauce. Pour in a blender the olive oil and grated garlic and blend until combined. Remove the skin and the seeds of the cucumber and grate it into a large bowl. Season with salt and pepper and leave aside for 10 minutes. Wrap the grated cucumber in a towel and squeeze, in order to get rid of the excess water. In a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 tbsps of red wine vinegar, a pinch of salt and blend, until the ingredients are combined. Store the tzatziki sauce in the fridge and always serve cold.
  • To assemble the lamb kebab you can either use wooden or metal skewers. For this lamb souvlaki recipe, you will need about 10 skewers, depending on the size of each souvlaki. If using wooden skewers, cut them to fit your griddle pan and soak them in water. (This will prevent them from burning.) Lift the chunks of lamb out of the marinade and thread the pieces, comfortably, on the skewers. At this point don’t forget to season your lamb souvlaki with salt.
