RIB-EYE STEAKS THAT ARE SUPERB



Rib-Eye Steaks That are Superb image

I saw this recipe on the Food Network and tried to write it down as closely as I can recall. Very simple to make and quick. I therefore did some experimenting and came up with, I am sure, the same method for cooking the Rib-Eye Steaks. These are the best steaks that I have made and I have made many others. Tender, succulent and so tasty.

32 ounces boneless rib eye steaks, 1 inch thick (4 steaks)
1 tablespoon freshly cracked black pepper, coarse
1 teaspoon granulated garlic powder (optional)
1 1/2 tablespoons kosher salt or 1 1/2 tablespoons coarse sea salt

Steps:

  • Remove steaks from the refrigerator and let them sit for about 30 minutes to take the chill out of the meat.
  • Now, coat both sides generously with coarse black pepper and granulated garlic powder.
  • Heat an iron skillet or a heavy bottomed frying pan until very hot on high heat.
  • For each steak, sprinkle onto the skillet, 3/4 teaspoon of coarse salt and allow salt to heat up for at least 1 minute.
  • Place the steaks on the coarse salt and cook for 3 minutes; DO NOT DISTURB at all, DO NOT LOOK or even move the steaks.
  • Turn the steaks over and cook for an additional 3 minutes; again DO NOT DISTURB at all.
  • The cooking time of 6 minutes gives you a medium-rare steak; DO NOT OVERCOOK.
  • If you desire to cook it to medium, then cook for an additional 30 seconds to 1 minute per side.
  • Remove steaks to a plate, cover with foil and let rest for 5 minutes, so that all juices are absorbed by the meat.
  • Scrape off any excess coarse pepper and salt if desired and discard.
  • I prefer to slice the steaks on an angle about 1/4 inch to 3/8 inch thickness.
  • Serve with freshly processed horseradish.
  • NOTE; Make sure that the heat is on as HIGH as possible without burning at all times during cooking the steaks. This will vary depending on your cooktop.
  • Do not use ordinary table salt.
  • Beef Tenderloin steaks are also real great cooked in this manner. If using a steak thicker than 1 inch, add 1 extra minute per side for medium-rare.

1-1/2 teaspoons garlic powder
1-1/2 teaspoons dried oregano
1-1/2 teaspoons dried basil
1/2 teaspoon salt
1/8 teaspoon pepper
2 beef ribeye steaks (1-1/2 inches thick)
1 tablespoon olive oil
1 tablespoon lemon juice
2 tablespoons crumbled feta cheese
1 tablespoon sliced ripe olives

Steps:

  • In a small bowl, combine the first five ingredients; rub onto both sides of steaks. In a large skillet, cook steaks in oil for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare a thermometer should read 135°; medium, 140°; medium-well, 145°). Sprinkle with lemon juice, cheese and olives. Serve immediately.

The steak lovers in my family can be a tough crowd. They know what they like and are quick to vocalize it! This recipe miraculously pleased every palette in the Test Kitchen! I grilled it on my stovetop grill (temps were in the low 20's outside), but can't wait for warm weather so I can grill it outside. Yum.

2 to 6 rib eye steaks
MARINADE
1 tsp oregano, dried
1/2 tsp basil, dried
1/2 tsp marjoram, dried
1/2 tsp thyme, dried
1/2 tsp garlic powder
1/3 to 1/2 c lemon juice fresh or real lemon
1 to 2 Tbsp olive oil
dash(es) salt and pepper

Steps:

  • 1. Place all ingredients except steaks in a sealable quart sized bag. (Use a gallon sized bag if making 3 or more steaks.) NOTE: You can use 1 1/2 tablespoons of dry Italian seasoning in lieu of the other herbs. Just add the garlic powder and a little additional Oregano.
  • 2. Set a small amount of the marinade aside for later use. Place steaks in bag and marinate from 30 minutes to 3 hours. The Lemon Juice begins to "cook" the steaks so they may not appear pink centered when cooked to rare or medium rare. The lemon juice also tenderizes the steaks. Discard excess marinade from bag or use immediately for baking Greek Potatoes. (See Note 2 below).
  • 3. After marinating, cook steaks in frying pan or grill them. When steaks are all but done, spoon on a little of the additional marinade you'd set aside and warm to finish.
  • 4. Note 2: A great accompaniment to this is Greek Potatoes: Wash and slice and cut potatoes in halves or quarters, peeled or not. Place in baking dish, utilize the reserved marinade used for marinating the steaks and add water to 1/2 the depth of potatoes. Bake for 40 minutes at 375 degrees or until fork tender.

For the Dry Rub
2 teaspoons fresh garlic (minced)
2 teaspoons black pepper (coarsely ground)
2 teaspoons​ dry mustard
2 teaspoons​​ paprika
2 teaspoons chili powder
1 teaspoon dried thyme leaves (crumbled)
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
For the Steaks
2 (12-ounce) beef rib-eye steaks (boneless​ and fat trimmed; 1-inch-thick)
1 tablespoon​ olive oil
Garnish: fresh thyme sprigs

Steps:

  • Gather the ingredients.
  • In a small bowl, mix the garlic, black pepper, mustard, paprika, chili powder, thyme, salt, and cayenne until well blended.
  • Brush the oil on both sides of the steaks and place each steak on a large sheet of plastic wrap.
  • Rub the spice mixture on both sides of steaks.
  • Wrap tightly and refrigerate at least 1 hour or up to 24 hours.
  • Heat a gas grill to high, prepare a hot charcoal fire until the coals form white ash, or heat a broiler.
  • Grill or broil the steaks 4 to 6 inches above the heat source for 5 to 7 minutes on each side for rare, 7 to 9 minutes for medium, or 9 to 11 minutes for well-done.
  • Remove the steaks to serving plates and garnish with thyme sprigs. Enjoy!

Posted for ZWT6 Greek Region. In Greek: Brizoles Mosharisies sta Karvouna. In Greece, butchers use the French style of cutting meat, and ribeyes are cut with the bone in, but boneless ribeyes work equally well. The recipe calls for a traditional beef marinade, and an oil and lemon basting sauce. Whether cooked on the grill or grilled in the oven, this is an easy and delicious dish. Using red drinking wine minimizes the acidity which toughens meat so it is highly recommended NOT to use red wine vinegar or lemon juice as that can create a tougher form of cooked meat.

4 rib eye steaks
1/2 teaspoon sea salt
1/4 teaspoon fresh ground pepper
1/2-3/4 teaspoon Greek oregano (Rigani)

  • Combine salt, pepper, and oregano in a small bowl. Whisk together the oil and wine and add to spices. Rub steaks on both sides with the mixture and place in a single layer in a shallow pan. Cover and marinate for at least one hour before cooking. (Steaks can be covered and marinated for up to 24 hours.).
  • Mix 3 tablespoons of olive oil with the lemon juice or zest and brush the steaks just before cooking.
  • Grill to taste over hot coals or Medium heat on a gas grill and brush with oil and lemon mixture a couple of times while cooking.
  • Serve with lemon wedges on the side.

1 kg top sirloin beef cut in chunks (35 oz.)
2 tsps mustard
1-2 tsps honey
juice of 1 lemon
zest of 1 lemon
1/2 tsp hot paprika
6 tbsps olive oil
salt to taste
freshly ground black and pink peppercorns (to taste)
1 tsp dried oregano
2 tsps fresh thyme
1 clove of garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 large onion, chopped
1 tbsp olive oil
salt and pepper
9-10 wooden skewers

Steps:

  • To prepare this Greek beef souvlaki recipe, cut the beef into equal sized (3 cm/1 inch) cubes and set aside.
  • Prepare the marinade for the beef kabobs. In a large bowl add all the ingredients for the marinade and the meat and blend to coat. Cover the bowl with plastic wrap and let them marinade for at least 1 hour in the fridge. Preferably leave them to marinade overnight so they soak up even more all those wonderful flavours.
  • When you are ready to cook the kabobs, prepare the vegetables. Cut the peppers and onion into 3-3.5 cm equal wide squares. Place them in a bowl, drizzle with 1 tbsp olive oil and season with salt and ground pepper.
  • For this Beef souvlaki recipe, you will need about 9-10 wooden skewers, depending on how big you want them to be. If using wooden skewers, soak them in water to prevent them from burning. And make sure to cut the tip so it fits your grill pan!
