Time 1h10m

Yield 4

Number Of Ingredients 10

4 large russet potatoes
Extra virgin olive oil (I used Private Reserve Greek EVOO)
Kosher salt
Black pepper
1-2 tsp dried oregano
Greek Tzatziki Sauce (I use this recipe)
1/2 cup chopped fresh parsley flakes
1 large tomato, diced
1/2 cup chopped pitted Greek olives
Crumbled feta cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • Wash and scrub the potatoes clean. Dry completely.
  • Poke holes all over the potato using a fork - about 5 to 6 times. Rub the potatoes with olive oil and sprinkle with kosher salt, and prick them in several places with the tines of a fork. Arrange the potatoes on a baking sheet, and bake for 1 hour or until potatoes are super soft and fork-tender and the skin is nice and crisp (can take up to 75 minutes).
  • While the potatoes are baking, make the Tzatziki sauce according to this recipe, if using, and prepare the remaining toppings.
  • When the potatoes are ready, remove from the oven and set aside to rest for 5 minutes. Slice each open wide, and scoop the potato flesh out into a bowl. Add 1 tbsp olive oil, salt and pepper, and dried oregano. Mash with a fork.
  • Now, scoop the mashed potatoes back into the skins. Using your hands, reshape the potatoes if needed, then top with the Tzatziki sauce and the remaining Mediterranean toppings to your liking. Enjoy!

GREEK POTATO AND TOMATO BAKE RECIPE - (4.4/5)

Greek Potato and Tomato Bake Recipe - (4.4/5) image

Provided by Pagingdrstarling

Number Of Ingredients 6

1/2 cup olive oil
1 large onion, finely chopped
4 large tomatoes, peeled, deseeded and chopped
2 1/4 pounds yukon gold potatoes, cut vertically into wedges
Fresh ground pepper and salt, to taste
Flat leaf parsley, to garnish

Steps:

  • Preheat oven to 400 degrees. Heat the oil in a saucepan over medium-high heat. Add the onion and cook until just tender, about 5 minutes. Add the garlic and cook for a minute to release the flavor. Place the tomatoes in the pan, season with the salt and pepper, and cook for another minute, stirring constantly. Add the potatoes to the pan and cook for about 10 minutes, stirring often. Take the pan off the stove and add the mixture to a greased casserole. Bake for 40 - 50 minutes until the potatoes are tender. You can serve immediately or store in the refrigerator for a day or two. When serving garnish with fresh parsley.

Time 1h30m

Number Of Ingredients 8

2 large yellow cipolline onions, cut into thin rounds
1 Kg (2 lbs) potatoes, peeled and thinly sliced into rounds
450 g (1 lb) harvest tomatoes, cut into thin rounds
6 Tbsp e.v.o. oil
115 g (1 cup) grated Parmigiano
Sea salt and freshly ground black pepper to taste
Handful fresh basil leaves, broken up by hand
Splash of water (2 oz)

Steps:

  • Preheat oven to 350 degrees F.
  • Brush a generous amount of olive oil in a 9x14" baking dish.
  • Arrange a layer of onions on the bottom.
  • Top that with a layer of potatoes.
  • Then a layer of tomatoes.
  • I find it best to season each layer with a splash of olive oil, salt and pepper.
  • Repeat this layer process until all the potato, tomato and onion are finished.
  • End with the top layer being overlapped.
  • Pour in the water, and finish by sprinkling the grated Parmigiano on top.
  • Drizzle some olive oil all through out.
  • Place into heated oven and bake for 1 hour or until potatoes are fork tender and top is nice and crispy golden brown.
  • Take out of oven.
  • Cut into desired portions.
  • Enjoy!

GREEK STYLE POTATOES

Greek Style Potatoes image

Greek Style Potatoes is a simple recipe, and the closest I can get to the real thing. The best is that it can be adjusted to your taste as you bake it. I sometimes add a little more lemon. The potatoes are moist, and great with green beans and baked chicken with a little salsa and feta on top.

BRIAM (GREEK BAKED ZUCCHINI AND POTATOES)

Briam (Greek Baked Zucchini and Potatoes) image

Briam is a traditional Greek roasted vegetable dish with potatoes, zucchini, tomatoes, and red onions with lots of olive oil. It is a typical example of Greek cuisine where a few simple ingredients are turned into an utterly delicious dish with little effort. It can be served as a main course. With olive oil as the only source of fat it is a quintessential example of the Mediterranean diet, and it is vegan to boot. If preferred, serve with a hearty chunk of feta on the side.
