3 cups uncooked tricolor spiral pasta
1 medium tomato, cut into wedges
1 small sweet red pepper, julienned
1 small green pepper, julienned
4 ounces crumbled feta cheese
1/2 cup sliced ripe olives
DRESSING:
2/3 cup olive oil
1/4 cup minced fresh basil
3 tablespoons white vinegar
2 tablespoons chopped green onions
2 tablespoons grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano

Steps:

  • Cook the pasta according to package direction's rinse in cold water and drain. Place in a large serving bowl; add the tomato, peppers, feta cheese and olives., In a blender, combine the dressing ingredients; cover and process until smooth. Pour over salad; toss to coat. Cover and refrigerate for 2 hours or overnight. Toss before serving.

Steps:

  • To cook the pasta, bring 4 quarts water and 1 tablespoon salt to a boil.
  • Add pasta and cook according to package instructions, about 7 to 10 minutes.
  • Drain well and rinse with cold water.
  • Meanwhile, to make the dressing, in a small bowl whisk oil, vinegar, garlic, oregano, 1/4 teaspoon salt, and 1/8 teaspoon pepper.
  • In a large bowl, combine cooked pasta, cucumbers, onion, tomatoes, feta, and olives.
  • Drizzle with dressing.
  • Toss gently until uniformly combined and serve.

12 oz favorite pasta (elbows, penne, wagon wheels, bow-ties, etc.)
1 cucumber - peeled, quartered lengthwise, seeds removed and chopped
1 1/2 cup grape tomatoes, halved or quartered if extra large
1 1/2 cup olives, halved (Kalamata taste best, but black olives will work too)
8 oz feta cheese
1/3 cup and 1 Tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil,
3/4 tsp black pepper
3/4 tsp salt
3/4 tsp onion powder
3/4 tsp spicy brown mustard
1/2 cup and 2 tsp red wine vinegar (you can substitute up to half white vinegar without altering the taste)

Steps:

  • Mix ingredients for dressing in a jar or bowl and set aside.
  • In a large pot of boiling water, cook pasta until al dente. Drain and set aside to cool slightly.
  • Combine chopped cucumber, tomato halves and olive halves in a large bowl with the prepared Greek Dressing. Add cooled pasta and stir to combine flavors well.
  • Add feta cheese when the pasta is completely cooled. Refrigerate until ready to serve.
  • This dish can be made up to 24 hours in advance and stored in the refrigerator covered. Add cheese prior to serving.

1 tablespoon lemon juice

4 shallots, chopped (about 1/2 cup)
6 tablespoons olive oil (divided)
2 tablespoons lemon juice
3 tablespoons mayonnaise
1 tablespoon all purpose Greek seasoning
8 ounces penne pasta, cooked
5 ounces black olives, sliced
4 ounces diced pimentos (drain can)

Steps:

  • Heat 2 tbsp olive oil over medium heat in large skillet. Add sliced mushrooms and shallots, and saute over medium high heat for 7 - 8 minutes, or until tender. Remove from heat.

1 tablespoon walnut oil or 1 tablespoon other flavourful oil
salt and pepper

Steps:

  • Cook pasta according to package instructions until al dente (firm to the bite). In the last five minutes of cooking add spinach.
  • For the sauce combine kefir, oil, garlic, dill and lemon juice in a bowl. Season with salt and pepper to taste.

  • Prep the veggies: Slice all the veggies into bite-sized pieces. I like to have the olives halved but you can keep them whole. I have both cubed and crumbled feta in the salad to make sure every bite is a bit cheesy. Place all the ingredients in the large bowl with the cooled pasta.
  • Make the Greek salad dressing: Add all the dressing ingredients to a mason jar and shake well until everything is mixed well. Pour over the salad, and mix everything together well.
  • Finish the salad: Garnish with a sprinkle of oregano, crumbled feta, and some freshly cracked pepper.
