These easy tuna croissants are a quick and popular kids lunch idea, ready in 20 minutes.

8 small croissants (($4.00 / £1.60))
50g | ⅓c cooked broccoli, finely chopped (($0.34 / £0.08))
40g cheddar cheese, grated (($0.47 / £0.20p))
95g tinned tuna in water, drained (($0.90 / £0.64)*)
1 Tablespoon plain greek yogurt (($0.09 / £0.03))
1 egg, beaten (($0.35 / £0.18))
fresh black pepper (($0.01 / £0.01))

Steps:

  • Preheat the oven to 190˚C/375˚F
  • Slice the croissants down the middle.
  • Roughly mash the cooked broccoli, then mix with the grated cheese, tuna, greek yogurt, beaten egg and season with black pepper.
  • Take a croissant and slightly open the whole you have made. Spoon an eighth of the mixture into it, place on a baking tray, and then repeat with the rest of the croissants.
  • Place in the oven for 12-15 minutes, until the croissants are golden brown and the filling has melted.
  • Eat straight away.

This vibrant Italian Tuna Salad is one of the best things you can do with canned tuna. Easy, healthy recipe with Greek yogurt. No mayo needed!

1/3 cup finely chopped dry-packed sun-dried tomatoes or oil-packed sun-dried tomatoes*
1 15-ounce can cannellini beans (rinsed and drained, divided)
1/2 cup non-fat plain Greek yogurt
2 tablespoons extra virgin olive oil
Zest and juice of 1 small lemon (about ¾ teaspoon zest and 3 tablespoons juice)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon onion powder
12 ounces (dry weight) canned wild caught solid pack tuna in water
3 stalks celery (finely diced)
3 tablespoons capers (rinsed and drained)
2 tablespoons finely chopped fresh parsley
English muffins or whole grain bread (optional for serving)
Greens (such as spinach, arugula, or chopped romaine (optional for serving))

Steps:

  • Place the dry-packed sun-dried tomatoes in a small bowl and cover with hot water. Set aside to reconstitute while you prepare the rest of the salad.
  • To a food processor fitted with a steel blade, add 3/4 cup of the beans and the Greek yogurt. Blend until the beans start to become broken up and combined with the yogurt, stopping to scrape down the bowl as needed. Add the olive oil, lemon zest and juice, salt, pepper, and onion powder. Process until smooth, scraping down the bowl once or twice as needed.
  • In a large mixing bowl, flake the tuna, leaving it fairly chunky. Add the celery, capers, parsley, and remaining beans.
  • Drain the sun-dried tomatoes and pat dry. Add them to the bowl with the tuna mixture.
  • Pour the Greek yogurt dressing over the top. With a spatula, gently stir to combine. Switch to a fork, continuing to stir and using the fork to break apart any clumps of ingredients that are sticking together, until the ingredients are evenly distributed.
  • Serve however you like: open face on toasted English muffins or toasted bread topped with arugula (our favorite), on whole grain bread with arugula or spinach as a sandwich, over a bed of greens, or however you like.

1 4.5 ounce can tuna (in water) (drained)
1/4 cup carrots (minced)
1/4 cup minced celery
1 tbsp red onion (minced)
1 tbsp light mayonnaise (Hellman's Light)
1 tsp red wine vinegar
salt and pepper
2 slices whole wheat bread
2 slices 2% reduced fat cheddar or American cheese
2 slices tomato
oil spray (I used my Misto)

Steps:

  • Combine tuna, celery, carrots, onion, mayonnaise, vinegar, salt and pepper.
  • Heat a large skillet over low heat.
  • Spray skillet with oil, and place two slices of bread on top.
  • Top bread with cheese, then tuna salad and tomato. Cook on low heat until cheese melts and bread gets toasty.
  • Serve immediately.

2 cans (5 oz. Wild Selections Solid White Albacore Tuna in Water)
4 stalks of celery (chopped)
2-3 small pickles (chopped)
1 hard boiled egg (peeled and chopped)
2 tablespoons fresh parsley (chopped)
½ cup mayonnaise
1 tablespoon lemon juice
½ teaspoon kosher salt
¼ teaspoon black pepper
4 hamburger buns (sliced in half as you see in the photos (or your favorite toast))
8 slices of cheddar cheese (or provolone, mozzarella or Havarti would also work)
1 cucumber (sliced thinly)
1 ripe avocado (sliced)
1 large tomato (sliced)
½ cup salad greens (or arugula)
4 cornichon as garnish (optional)

Steps:

  • To make the tuna mixture: Mix together Wild Selections Solid White Albacore Tuna in Water, celery, pickles, egg, parsley, mayonnaise, lemon juice, salt and pepper in a bowl. Taste for seasoning and add in if necessary.
  • To make the sandwiches: Preheat the oven to 350 degrees.
  • Place 1 slice of cheese on the bottom half of a bun and top it off with ½ cup of the tuna mixture. Place another slice of cheese on the top bun. Place both of them (facing up) on the sheet pan. Repeat the same process with the rest of the buns.
  • Bake in the oven for 8-10 minutes or until cheese melts. Take it out of the oven and let it cool for a minute.
  • To Assemble: Layer each bottom bun (the one with the tuna mixture) with sliced cucumber, avocado, tomato, and a green salad leaf. Put the top bun.
  • If preferred, garnish with a cornichon (as seen in the photos) and serve.

1 Tbsp plain non-fat yogurt or light mayo
½ a lemon (juiced)
½ tsp dried oregano
Salt & pepper (to taste)
2 Tbsp red onion (finely diced)
5 cherry tomatoes (sliced)
3 baby carrots (thinly sliced)
5 grapes (thinly sliced)
1 Tbsp capers
1 Tbsp fresh parsley (chopped)
1 Tbsp hemp hearts (optional)
2 Tbsp crumbled feta
2 slices of bread (I used sourdough)
1 Tbsp butter of choice or 1/2 Tbsp olive oil

Steps:

  • In a bowl, mix drained tuna, yogurt, lemon juice, oregano, salt, and pepper. Use a fork to break up tuna into flakes.
  • Gently mix in red onion, cherry tomatoes, carrots, grapes, capers, fresh parsley, (optional hemp hearts), and crumbled feta. Taste and adjust seasonings if desired.
  • Spread the tuna salad on one slice of the bread. Top with the other slice to form a sandwich.
  • In a large skillet, heat butter or olive oil over medium heat. When heated, place the sandwich in the pan and cook until lightly toasted and crisp, about 2 - 3 minutes per side.
  • Cut in half and enjoy!

I invented this JUST now. I LOVED it! Great (and TASTY & SIMPLE) way to get rid of the extra hummus, capers, and sundried tomatoes that you don't know what to do with. Yummy! I used Laura Divine's Low Fat Hummus (40517). Can be easily multiplied and easily make substitutions (canned chicken, salmon, etc...or change the cheese, veggies, spices...the possibilities are endless! Maybe vegans can even sub tofu)

1/2 English muffins or 1/2 small pita bread
1 sun-dried tomato
1/4 cup canned solid white tuna packed in water, drained but still moist and flaked
3 teaspoons hummus
1/2 teaspoon jarred minced roasted garlic
1/2 teaspoon capers
1 sprig rosemary, chiffonaded
cracked black pepper, to taste
1 -2 dash paprika or 1 -2 dash cayenne
4 grape tomatoes, sliced crosswise
1/2 ounce fat free feta cheese, crumbled (President brand)
cracked black pepper, to taste
italian seasoning, to taste

Steps:

  • Toast bread to desired color.
  • Microwave some water in tupperware till boiling, place sundried tomato in and close the lid.
  • Let sit for 30 minutes to reconstitute.
  • Preheat oven to 350*F.
  • Once reconstituted, chop sundried tomato.
  • Mix the ingredients from tuna through paprika (as well as the chopped sundried tomato) together with a fork.
  • Spread evenly on toast.
  • Top with tomato slices, feta, pepper, and seasoning.
  • Place on a cookie sheet or pizza stone on top of parchment.
  • Bake for 20 minutes.
  • Serve with a salad and you've got a nice, light lunch bursting with flavor!

  • Preheat your oven to 450 degrees Fahrenheit. Line a baking sheet with foil, place the two pieces of bread onto the baking sheet, set aside.
  • Empty the can of tuna into a bowl (if using Wild Planet tuna I use the juices as they suggest. If using another brand that is stored in oil, discard the liquid.) Use your fork to break the tuna up slightly. Add the mayo, Dijon mustard, dill, salt, and pepper, chopped celery, and the white and lighter green parts of the green onion to the tuna. Stir to combine and taste to adjust the seasonings as needed. If the tuna seems a little dry add another tablespoon of the mayo and maybe another teaspoon of the mustard. Spread the tuna mixture evenly over the two pieces of the sandwich bread (see notes about saving for leftovers if you’re only making one tuna melt).
  • Pop the bread with tuna into the preheated oven for 10 minute. Remove and top with a slice of cheese. Pop back into the oven for another 1 to 2 minutes, or until the cheese has just melted.
  • Slice the tuna melts in half using a sharp knife. Transfer to serving plates and sprinkle with the reserved green onion for garnish, if desired. Enjoy while hot.
