LAMB KLEFTIKO RECIPE (GREEK LAMB COOKED IN PARCHMENT PAPER)

Lamb Kleftiko Recipe (Greek Lamb Cooked In Parchment Paper) image

The very best traditional Greek lamb kleftiko recipe (kleftico)! Juicy, tender, melt-in-the-mouth Greek lamb cooked in parchment paper with fluffy potatoes.

Provided by Eli K. Giannopoulos

Categories     Main

Time 4h30m

Number Of Ingredients 15

1-1.2 kg/ 35 oz. leg of lamb, boneless (approx. 2kg/ 70 oz. bone in)
2 small red onions
2-3 bell peppers (green, red, orange)
4 cloves of garlic (2 sliced and 2 whole)
2 tbsps mustard
juice of half a lemon
1 tbsp dried oregano
1/2 a cup olive oil
1/2 a cup dry white wine
200g kefalotyri or Graviera or any had yellow cheese, cut into cubes (7 oz.)
5 medium sized potatoes
1/2 ripe tomato, sliced
salt and freshly ground pepper
parchment paper
kitchen string

Steps:

  • To prepare this Greek lamb kleftiko recipe, start by washing thoroughly the lamb and cut into portions (approx. 5*6 cm). Place in a large bowl or basin and set aside.
  • Prepare the vegetables for the lamb kleftiko. Cut the onions in half and then in four wedges. Cut the peppers in 2-3 cm chunks and slice 2 cloves of garlic. Add the vegetables in the bowl with the lamb and pour in the olive oil, white wine and lemon juice. Add the mustard, 2 whole cloves of garlic, sprinkle with oregano and season with salt and pepper. Use your hands to blend all the ingredients together. Cover the bowl with plastic wrap, chill and let marinade for at least 2 hours. It's best to leave the meat for the lamb kleftiko marinade overnight, to soak up all the wonderful flavours.
  • Once the meat for the lamb kleftiko is marinated, return the lamb at room temperature. In the same bowl add the cheese (cut into 2cm cubes) and blend. Preheat the oven to 180C.
  • To prepare the potatoes for this lamb kleftiko recipe, peel the potatoes and cut in four pieces. (The lamb kleftiko will require about 2 1/2 hours baking, so it's best to cut the potatoes in large pieces, to keep their shape.)
  • Now it's time to wrap the lamb kleftiko in parchment paper. Lay 4 long pieces of parchment paper to form a star. Pop the potatoes in the centre of the parchment paper and season with salt and a pinch of oregano. Pour the marinade from the lamb over the potatoes and set the lamb and vegetables on top of the potatoes. Layer with the sliced tomato and enclose the lamb kleftiko into a pouch. To enclose the lamb kleftiko hold the parchment paper from the edges, crosswise and grab with your hand in the middle, just above the stuffing and squeeze. Use the kitchen string to tie tightly the whole thing together, just above the stuffing and lift into a roasting tin.
  • Roast the lamb kleftiko in the oven for about 1 hour 45 minutes until tender. Remove the tin from the oven and increase the temperature to 220C. Unwrap the lamb kleftiko and scrunch the parchment paper under the rim of the tin. Baste the lamb with the juices and return in the oven for a further 20 mins until browned. Remove the pieces of lamb from the pouch and wrap them in some foil to rest. Toss the potatoes and return in the oven for about 20 minutes, until nicely coloured.
  • Return the lamb pieces in the roasting tin and serve the lamb kleftiko as it is. Enjoy!

KREATOPITA (GREEK MEAT PIE USING PHYLLO PASTRY)

Kreatopita (Greek Meat Pie Using Phyllo Pastry) image

This is a yummy meat pie often enjoyed in Greece. Of course, every household has their own version - this one's mine. The mushrooms are not traditional at all. They're my way of making the pie even tastier and ensuring my kids enjoy a vegetable they wouldn't otherwise eat. This could be served either as a snack (as eaten as street food here in Greece) or as a main, accompanied by a nice salad. Great to bring along, fully-baked, to a picnic or potluck.

Provided by evelynathens

Categories     Savory Pies

Time 1h20m

Yield 20 serving(s)

Number Of Ingredients 13

olive oil
1 kg ground beef
350 g mushrooms, chopped fine, as for duxelles (optional)
2 large onions, small dice
2 garlic cloves, minced
2 tablespoons tomato paste
1 tablespoon dried oregano (Mediterranean is best)
1/2 teaspoon ground cinnamon (optional)
1 cup grated parmesan cheese or 1 cup kefalotiri
1 cup chopped minced parsley
4 eggs, beaten to blend
salt and pepper
500 g phyllo pastry

Steps:

  • In a large saucepan, coat bottom of pan with olive oil and add ground beef (and mushrooms, if using). Cook, breaking up meat with back of spoon, and stirring often until meat and mushrooms are browned and liquid emitted has evaporated (make sure all the liquid has evaporated - you don't want a soggy pita!).
  • Add onions, garlic, tomato paste, oregano and cinnamon and cook until liquid emitted from onions has evaporated, too.
  • Remove from heat and allow to cool for about 20 minutes, stirring a couple of times to bring hot filling up (to cool faster).
  • Add cheese, parsley and eggs to meat filling and combine thoroughly to blend. Taste filling and adjust seasoning to suit your taste.
  • In a 15 x 10 inch pan (or large pan), layer half the phyllo sheets, brushing each one generously with olive oil (use a pastry brush), before adding the next sheet of pastry.
  • Pour the meat filling into the phyllo-lined pan.
  • Layer the remaining phyllo sheets in the same way, over the filling, brushing each one generously with olive oil before adding the next sheet of pastry. When you reach the last sheet (the top one), brush this one slightly more generously than the rest, tuck in any overhang you have neatly into the pie and score pie, lengthwise, into 4, using the tip of a small, sharp knife and making sure you don't cut all the way through the bottom of the pastry (just the top crust and slightly into the filling).
  • Position baking rack in bottom third of oven and preheat to 190°C (375°F).
  • Bring your pan next to the sink and run the cold water tap. Wet the tips of your fingers and shake the water onto the pastry. Do this a few times to ensure droplets of water fall all over the pastry (this ensures a crisp crust upon baking).
  • Bake pie for approximately one hour, until you achieve a deep golden crust. If you have a flat-bottomed oven (no element), do put your pan on the floor of the oven for the last 20 minutes or so to ensure an even crisper bottom crust.
  • The pita is best slightly warm or at room temperature.
  • Enjoy!

GREEK LAMB PIE

Provided by JustJanS

Categories     Lamb/Sheep

Time 50m

Yield 4 serving(s)

Number Of Ingredients 11

peanut oil (for brushing)
1 lb lean ground lamb (I have used beef or chicken mince too)
1 medium onion
1 garlic clove, crushed
1 (14 ounce) can tomatoes
2 tablespoons chopped of fresh mint
1 teaspoon ground nutmeg
12 ounces fresh spinach leaves
1 (10 ounce) packet phyllo pastry
1 teaspoon sesame seeds
salt and black pepper

Steps:

  • Preheat your oven to 400°F.
  • Lightly grease a 8 1/2 in springform pan.
  • Fry the mince and onion in a dry nonstick pan until golden.
  • Add the garlic, tomatoes, mint, nutmeg and seasoning.
  • Bring to the boil, and simmer, stirring occasionally until most of the liquid has evaporated.
  • Wash the spinach and remove any tough stalks, then cook the leaves in only the water clinging to them for about 2 minutes.
  • Drain the leaves well and then mix through the meat mixture.
  • I sometimes add 1/4 lb of crumbled feta at this stage.
  • Lightly brush each sheet of phyllo pastry with oil and lay in overlapping layers in the tin, leaving enough over hanging to wrap over the top.
  • Spoon the meat and spinach mix in then wrap the pastry over to enclose.
  • Scrunch up any remaining pastry into balls, and place over the top of the pie.
  • Sprinkle with the sesame seeds and then bake for about 25-30 minutes or until golden.
  • I like to let this cool a little, and serve it with a green salad.

LEGENDARY LAMB PIE

Legendary Lamb Pie image

When it comes to a meat pie there is nothing that speaks more family nostalgia. We all remember that moment our mother has her hands cloaked in oven mitts nursing a Dutch oven or casserole steaming dish to the table. The smell has been traveling through the house for the better half the day and now its time to get out that deep spoon and scoop out all that is inside. This is one my favorite meals to make. Very happy to share it with you :)

Provided by Dan Churchill

Categories     Lamb/Sheep

Time 6h15m

Yield 6 serving(s)

Number Of Ingredients 15

3 tablespoons olive oil
2 lbs lamb shoulder meat, diced
1 pinch salt and pepper
1 onion, finely chopped
2 celery ribs, finely chopped
2 carrots, finely chopped
3 garlic cloves, finely chopped
1 cup red wine
34 ounces beef stock
2 bay leaves
3 sprigs thyme
2 rosemary, stalks
1 cup ricotta cheese
2 large sweet potatoes, peeled and chopped
1 tablespoon butter

Steps:

  • Preheat oven to 300 degrees F.
  • Season lamb meat with a pinch of salt & pepper, before adding 2 Tbsp of oil to a dutch oven on medium-high heat. Brown Meat until golden brown all over, you may do this in batches.
  • Remove meat from pan add remaining olive oil along with the onion, garlic, celery and carrots. Cook for 5-7 minutes or until browned.
  • Add meat back to the pan along with red wine, cook for 1-2 minutes until wine reduces to bubbles, pour in stock and add the bay leaves, thyme rosemary and a pinch of salt & pepper.
  • Bring to a boil cover with a lid and place in the oven to cook for 4-6 hours or meat falls apart. Remove from the oven and cook on stove top with lid off until sauce reduces by a third.
  • Meanwhile, bring another pot of water to a boil add a pinch of salt and cook potatoes for 8-10 minutes or until easily pierced with a knife. Drain and mix in a bowl with 1 tbsp of butter and season with salt and pepper.
  • Turn your broiler or grill on, spoon ricotta on top of lamb mix, followed by potato mix, and cook for 5-7 minutes or until slight little bits of golden color appear on the surface. Take straight to the table :).

  • 2. Place a large ovenproof casserole dish over medium heat. Add the olive oil then the onions and garlic cloves and cook until onions are soft and translucent. Add the lamb and brown on all sides. Add the remaining ingredients except the feta.
  • 3. Cover with a tight-fitting lid and place in the oven and cook for four to five hours or until the lamb is soft and pulls apart easily with a fork. Remove from the heat, place the lamb in a large bowl and shred with a fork. Place the shredded meat in a deep-sided pie dish (about 25cm round x 5cm deep) and add five to seven tablespoons of the cooking liquid – you don't want the mixture to be runny, but you do want some liquid so that the meat doesn't dry out when you bake the pie. Crumble the feta over the lamb mixture.
  • 4. Gently pull apart the kataifi pastry to loosen the strands, and place in a bowl. Add the olive oil and, using your hands, gently toss the strands to coat them in the oil. Arrange the kataifi pastry evenly over the lamb and feta, pat down lightly, cover with foil and bake for 20 minutes, then remove the foil and cook for another 10 minutes or until the pastry is golden. Serve hot, sprinkled with a few basil leaves (if using).

  • Heat the oven to 200°C/180°C fan/gas 6. Put the lamb neck fillet in the baking dish with the red onion and garlic, season well with salt and pepper, then drizzle with olive oil. Roast for 45 minutes, then set aside to cool.
  • Once cooled, chop the lamb into rough 2cm chunks and put in a large mixing bowl. Roughly chop the cooled onion, then add it to the lamb, along with the chopped garlic and cooked rice.
  • Wilt the spinach in its bag in the microwave on high for a few minutes (or wilt spinach in batches in a large pan – add a few drops of water, cover and put over a medium heat for 2-3 minutes). Tip into a colander, then use a wooden spoon to press out as much liquid as possible from the spinach. Put the drained spinach in a clean J-cloth or tea towel, then squeeze out as much water as you can. Roughly chop the spinach, then add to the bowl. Add the rest of the ingredients (except the filo, butter and sesame seeds) to the bowl and mix until well combined.
  • Unroll the filo pastry on a clean work surface and brush one sheet at a time with the melted butter (keep the remaining pastry covered with cling film or a slightly damp tea towel). Layer 5 sheets in the base of the buttered ovenproof frying pan, allowing the sheets to overhang the edge of the pan, giving the pan a quarter-turn as you work so the sheets overlap slightly. Push each new sheet into the sides of the pan. Reserve the remaining 2 sheets of filo for the top.
