GREEK-STYLE PANCAKES WITH HONEY AND WALNUTS (TIGANITES)



Greek-style Pancakes with Honey and Walnuts (Tiganites) image

Make these delicious and fluffy Greek-style pancakes (tiganites) from scratch, in less than 30 minutes with ingredients you already have! Some Greeks believe the popular breakfast dish 'tiganites' was the first documented pancake in the world. I don't really know if it was the first, but it surely is the easiest!

2 cups all-purpose flour
1 tsp dry yeast
1/2 tsp salt
1 tsp sugar
2 cups of lukewarm water
1/2 cup warm honey
some chopped walnuts

Steps:

  • Pour in a large bowl the water and yeast. Stir with a fork, so that the yeast dissolves completely.
  • In the same bowl add the rest of the ingredients for the pancakes and whisk to form a smooth batter.
  • Cover with some plastic wrap and leave aside for 15-20 minutes, until the batter starts to bubble.
  • Heat a nonstick large skillet or griddle pan over medium heat and pour in enough corn oil to cover the bottom of the pan (approx. 2 tbsps).
  • Spoon 1-2 tbsps of the batter (depending on how large you want them) in the hot oil. Don't overcrowd the pan; fry the pancakes in batches (3-4 at a time). Fry until nicely coloured, flipping them occasionally.
  • Transfer to some kitchen paper, to absorb the oil and repeat with the rest.
  • Serve while still warm with a drizzle of warm honey and sprinkle with chopped walnuts. Enjoy!

The Greeks are very proud of their honey, particularly the kind flavoured by the nectar from wild thyme. A wide selection of flavoured honey is available in specialty and health stores.

4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
water
3 tablespoons lemon juice
1/4 cup brandy
corn oil (for deep frying)
1 cup flavoured clear honey
1 pinch cinnamon
1 teaspoon lemon juice
2 tablespoons water, about
1 cup finely chopped walnuts

Steps:

  • Mix flour, baking powder and salt in a large bowl. Add just enough water to form a smooth thick batter. Then blend in lemon juice and brandy. Allow batter to stand for 15 minutes.
  • Preheat deep fryer to 325°F or heat oil in a deep saucepan until it begins to smoke.
  • Drop batter, 1 teaspoons at a time, into oil, cooking 3 fritters at once. When fritters swell and turn golden brown remove and drain on paper towels in a warm oven.
  • Pour honey into an enameled saucepan, add cinnamon, lemon juice and enough warm water, about 2 tablespoons to form a syrup. Boil for 5 minutes.
  • Arrange fritters on a warm platter, pour a little honey syrup on each one and sprinkle with walnuts. Serve at once. Serves 6 or more.

225 ml water
2 tablespoons honey
oil (for frying)
15 g toasted sesame seeds

Steps:

  • Start heating the oil.15.
  • Mix the flour, the water and one spoon of honey and make a dough.
  • Heat 2 spoons oil in a frying pan and pour ¼ of the mixture.
  • When it thickens turn it upside down 2 -3 times to fry it in both sides. Prepare 3 more fritters following the given instructions.
  • Serve them hot, pour over the rest of the honey and dredge sesame seeds over them.

Tiganites pronounced tee-ghah-NEE-tess. This recipe intrigued me and I hope to try it when I'm no longer on a diet :). These light, crispy medallion-sized treats are a delight served with honey, Greek grape syrup called petimezi (Zaar doesn't recognize this as an ingredient), syrup or preserves. They can be eaten as a sweet snack, with breakfast, or as a brunch dish. They are favorites during The Great Lent as they contain no eggs or dairy products. 2 (8 ounce) bottles Sprite
1 teaspoon salt
1 cup water
2 teaspoons , raki (or water) or 2 teaspoons brandy (or water)
2 tablespoons lemon juice
3 teaspoons baking powder
4 1/2 cups all-purpose flour
olive oil (for frying)
syrup or preserves, to serve

Steps:

  • Using an electric mixer, beat the Sprite, salt, water, raki or brandy, and lemon juice on low speed.
  • Sift or whisk together the baking powder and flour then add slowly to the bowl, beating on high.
  • When all the flour has been added, continue to beat on high speed for 2 to 3 minutes until smooth.
  • Preheat 1/4 to 1/3 inch of olive oil in a heavy-bottomed frying pan or skillet over medium-high heat.

Steps:

  • In a bowl, mix well the onions, mint & flour. Add salt and pepper to your taste.
  • Slowly mix in enough water to make a thick batter.
  • Heat the oil in a deep frying pan. Drop teaspoons of batter into the oil. Fry until golden brown. (The oil should be the temperature you need to fry chips etc).
  • Drain the fritters well on kitchen towel and serve hot.
