GIGANTES PLAKI RECIPE (GIGANDES GREEK BAKED 'GIANT' BEANS)



Gigantes Plaki recipe (Gigandes Greek Baked 'Giant' Beans) image

Filling and super-healthy! A traditional Greek Gigantes beans recipe (gigantes plaki), made of 'giant' beans baked in a tomato sauce with plenty of fresh herbs, for a unique taste!

500g gigantes beans (17 ounces)
1/2 cup olive oil
1 small clove of garlic
1 large onion, finely chopped
4-5 tbsps parsley, finely chopped
1/2 tbsp celery, finely chopped
1/2 cup of hot water
400g (14 ounces) tinned chopped tomatoes or 600g (21 ounces) ripped fresh tomatoes, grated
1 tsp dried oregano
salt and freshly ground pepper to taste

Steps:

  • To prepare the gigantes (Gigsntes) plaki, start by soaking the gigantes beans overnight into plenty of water. Drain them into a colander and rinse with plenty of water.
  • Place the gigantes in a large pan with cold water, enough to cover them, add a pinch of sea salt and bring to a boil. Turn the heat down and simmer for 45 minutes, until tender but not cooked. Drain them in a colander and set aside.
  • In the meantime, pour into a large baking pan the olive oil, add the chopped onions, the whole garlic clove (peeled) and bake at 180C, until softened and slightly colored (approx. 15 minutes).
  • Turn the baking pan out of the oven. Add the gigantes beans (drained), the celery, the parsley, ½ cup of hot water and season with salt and pepper. Put back in the oven and bake for 30 minutes.
  • Turn the baking tray out of the oven, blend the gigantes beans lightly with a wooden spoon and pour in the grated tomatoes or plum tomatoes. Season with salt and pepper, add a pinch of oregano and bake the gigantes plaki further for 50-60 minutes at 180C, until the beans are soft and tender and the sauce thickens.
  • For an easier alternative, after soaking the gigantes beans overnight, drain and rinse them. Place in a large pan with enough water to cover them and bring to the boil. Boil for 5 minutes, drain them and place into a large baking pan, along with all of the ingredients, cover with some aluminum foil and bake at 180C for approx. 2 hours. The last 30 minutes, bake without the aluminium foil. Enjoy!

1 Tbsp olive oil, extra virgin
1 medium onion, diced
2 clove garlic, chopped
1 pinch red pepper flakes
28 oz can tomatoes, diced or 4 cups diced fresh tomatoes
1 lb green beans, trimmed and cut into bite size pieces
1/2 tsp oregano, dried
kosher salt and freshly ground pepper to taste
1 handful parsley, chopped
1 handful dill or fresh mint, chopped
1/2 c feta cheese, crumbled

Steps:

  • 1. Heat oil in a large saucepan over medium heat. Add onions and saute until tender, about 5-7 minutes.
  • 2. Add garlic and pepper flakes and saute until fragrant, about a minute.
  • 3. Add tomatoes, green beans, oregano; salt and pepper and simmer until the beans are soft; about 40 minutes.
  • 4. Remove from heat, mix in dill and parsley and serve garnished with feta cheese.

4 tablespoons extra-virgin olive oil (divided)
1 yellow onion (halved and thinly sliced)
3 cloves garlic (roughy chopped)
1 lb. fresh tomatoes (diced (see notes for canned))
1 lb. fresh green beans (trimmed and washed)
1 cup water
1/2 tablespoon kosher salt (plus more if needed)
1/4 teaspoon black pepper (plus more if needed)
juice of one lemon
1 tablespoon chopped fresh dill

Steps:

  • Heat 1 tablespoon of the olive oil in a large pot or dutch oven.
  • Sauté the onion in the oil over medium-high heat until softened and starting to brown (about 5 minutes).
  • Add the garlic and sauté until fragrant (about 30 seconds).
  • Add the tomatoes and stir together. Continue to cook until they start to soften and break down (about 2 minutes).
  • Add the green beans, water (1 cup), kosher salt (1/2 tablespoon), and black pepper (1/4 teaspoon). Stir just a bit to distribute the ingredients. Turn the heat to low, cover, and simmer for 30-45 minutes, or until green beans are tender to your liking. Stir occasionally to make sure the beans get equal times on the bottom and top of the pot.
  • Remove from heat and stir in lemon juice, fresh dill, and remaining 3 tablespoons extra-virgin olive oil. Season to taste and serve hot.

One of the absolute classics of Greek summer, but also delicious year-round, green beans yiahni are an easy, luscious casserole of fresh beans slowly cooked in olive oil, with tomatoes, onions, potatoes and herbs. All you need is a chunk of feta and a bit of good bread to complete this wonderful vegetarian main course.

2 pounds / 1 kilo fresh green beans
½ c olive oil (divided)
2 large red onions (chopped)
2 garlic cloves (minced)
2 large potatoes (peeled and cut into 1 ½ - 2-inch?4 - 5-cm cubes)
2 1/2 cups canned whole Santorini or other Greek tomatoes
1 whole chili pepper (optional)
Salt and pepper to taste
½ cup chopped fresh parsley
Feta cheese and good bread for serving

Steps:

  • Wash and drain the beans. Using a paring knife, snap or cut off the tips and remove any stringy fiber along the seams.
  • In a large pot over medium heat, warm half the olive oil and cook the onion until translucent. Stir in the garlic. Add the green beans, and toss to coat in the oil. Add the potatoes, chili pepper, tomatoes, salt and pepper. Add enough water to come about a third of the way up the contents of the pot.
  • Cover and simmer for 45 minutes, or until the beans are tender. Right before removing from the heat, stir in the parsley and adjust seasoning with additional salt and pepper as desired.
  • Add the remaining olive oil.
  • Serve with feta and good bread.

Steps:

  • In a medium pot, heat olive oil at medium to low heat. Sauté onion until soft.

  • Add hot water just enough to half cover the beans.

Greek extra virgin olive oil (I used Private Reserve Extra Virgin Olive Oil)
1 large yellow onion, finely chopped
5 garlic cloves, minced
1 tsp ground cumin
2 tsp dried oregano
1 28-oz can peeled whole tomato
1 cup water
1 bay leaf
1 1/2 lb fresh French green beans, trimmed and cut into 1 1/2-inch pieces (frozen green beans work wonderfully in this recipe)
3 Yukon Gold potatoes (about 1 lb), cut into small piece (1/2 to 3/4-inch pieces)
Salt and black pepper
lemon juice
1/2 cup chopped fresh parsley leaves

Steps:

  • Preheat the oven to 300 degrees F.
  • In a large Dutch Oven, heat 1/4 cup extra virgin olive oil over medium heat. Add the onions and cook until tender, stirring occasionally (about 5 mins). Then add the garlic, cumin, and oregano. Cook another 2 mins, stirring regularly, until fragrant.
  • Add tomatoes, water, bay leaf, beans, and potatoes. Season with salt and pepper. Raise the heat and bring to a high simmer for 15 minutes, stirring occasionally.
  • Cover and transfer to the heated oven. Cook until the sauce slightly thickens, and the beans and potatoes can easily be cut with side of your fork; about 35 minutes or so. (It's a good idea to check once partway through cooking, add a little bit of water if needed.)
  • Remove from oven and stir in 2 tbsp lemon juice and chopped fresh parsley. Stir in a generous drizzle of olive oil (at least another 1/4 cup).
  • Serve immediately with Greek pita bread or your favorite rustic bread to sop up the sauce!

1 pound fresh green beans, trimmed
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, chopped
1 tablespoon chopped fresh parsley

1 tablespoon white wine vinegar
1 teaspoon ground cumin
1 pinch white sugar, or to taste
salt and ground black pepper to taste

Steps:

  • Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
  • In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.

2 cups tomatoes, peeled and finely chopped
2 onions, finely chopped
1 cup olive oil
1 green pepper, thinly sliced

1 small sweet onion, chopped
1 large garlic clove, minced

  • Sautee the onion in the olive oil. Add the tomatoes and then the beans and sautee for a minute or two. Add water (sauce should cover beans) and bring to a boil. Stir in the parsley. Reduce heat, cover, and cook on low for 45 minutes. Sauce should have a thick and slightly oily consistency. Feel free to add potatoes or carrots to beef up the dish a bit!
