SAGANAKI (FRIED CHEESE) GREEK STYLE

Saganaki (fried Cheese) Greek Style image

This is wonderful to serve as an appetizer, serve lots of lemon wedges and I like crisp Pita Bread Pieces. If you cannot get the Greek cheese you may in a pinch use Italian Provolone - I had to use this because I didn't plan far enough ahead to get the good Greek Cheese. Evelyn/Athens posted a link to this recipe (off Zaar) and when I searced Recipezaar I could not find one like this. Thanks Evelyn. The recipe is simple and very good.

GREEK SCRAMBLED EGGS

Greek Scrambled Eggs image

For a fresh and bright variation on your morning eggs, try strapatsatha, a simple Greek dish of scrambled eggs with tomatoes. It's as simple as can be: The best, freshest tomatoes you can find are grated on a box grater and reduced a bit, then scrambled with eggs, a little olive oil and garlic. A handful of tangy feta crumbles finishes it off.

Provided by Mark Bittman

Categories     breakfast, brunch, easy, lunch, weekday, main course

Time 30m

Yield 2 servings

Number Of Ingredients 7

2 large, ripe, firm tomatoes
2 tablespoons extra-virgin olive oil
1 garlic clove, finely chopped (optional)
1 tablespoon fresh or dried mint or oregano
4 large eggs, slightly beaten
1/2 cup grated Greek kefalotyri or feta cheese
Salt and pepper, to taste

Steps:

  • Lop off a dime-size piece of the base of the tomato using a sharp knife. Grate the tomato from the base along the coarse side of an upright hand grater.
  • In a 10-inch frying pan over medium heat, warm the olive oil and add the garlic. Cook for a minute or so, careful not to burn. Add the tomatoes. Cook them until all their water has cooked off and all that's left is thick pulp, about 10 minutes.
  • Pour in the eggs and herbs. Season with salt and pepper. Stir all together with a wooden spoon. Remove when the eggs are cooked to desired doneness, anywhere between 5 and 8 minutes.
  • Transfer to serving plates and sprinkle with grated Greek kefalotyri cheese.

PARMESAN-OREGANO DEVILED EGGS

Parmesan-Oregano Deviled Eggs image

I've always marveled at how deviled egg recipes can be fiddled with and ingredients switched in and out, but they always still taste so good! I made this version last night for my fiance, and he loved the blend of sweetness and spiciness! These have oregano, Parmesan-Romano cheese, Dijon mustard, and a dash of hot sauce. I garnished them with a shredded Cheddar cheese blend and some paprika.

Provided by clairetastes

Categories     Appetizers and Snacks     Deviled Eggs

Time 45m

Yield 12

Number Of Ingredients 9

6 eggs
⅓ cup light mayonnaise
3 tablespoons Dijon mustard
1 tablespoon grated Parmesan cheese, or to taste
1 teaspoon dried oregano
1 dash hot pepper sauce
salt and ground black pepper to taste
2 tablespoons shredded Cheddar cheese, or as desired
1 pinch paprika, or as desired

Steps:

  • Place eggs in a saucepan; cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel.
  • Cut each egg in half lengthwise; place egg yolks in a bowl. Mash yolks with a fork; stir in mayonnaise, Dijon mustard, Parmesan cheese, oregano, and pepper sauce; season with salt and pepper.
  • Arrange egg whites cut-side up on a serving platter. Spoon yolk mixture into a resealable plastic bag; snip off one corner of the bag, and pipe filling into egg white halves. Sprinkle deviled eggs with Cheddar cheese and paprika.

FRIED EGGS WITH POTATOES AND FETA (GREEK STYLE) RECIPE

  • Prepare the potatoes: Peel the potatoes and then cut them in desired size. Bring a large pan of water to the boil, then cook the potatoes for 3 minutes. Drain, shake out onto a kitchen paper-lined tray and leave to cool.
  • How to fry the potatoes: Heat the oil in a large non-stick frying pan until the olive oil begins to sizzle. If your pan isn’t large enough, fry the potatoes in batches rather than crowding them. Add the potatoes in a single layer. Be careful not too tightly pack them in the pan. Turn the heat to medium-high, so that the potatoes sizzle, but don’t stir until their bottom starts to brown.
  • Turn them all 2 or 3 times until nicely browned all over for about 7 mins. Then lift them out and drain them on a plate coated with kitchen paper.

  • Once the oil has heated up, dip in the chopped potatoes. You can test if the oil is ready with a bamboo skewer/chopstick, bubbles will gather around it.
  • Dip the chopped potatoes low in the pot with a frying spoon (don’t throw them in, hot oil is extremely dangerous). Normally it takes 7-8 minutes to get golden coloured.

  • Crumble the feta cheese into a food processor, then pulse it a few times until it resembles fine crumbs. Then add the ricotta, oregano and lemon juice and process until it’s smooth and creamy. Add a drizzle of olive oil to help it loosen up if you think it needs it.
  • Blot your olives on kitchen paper if they’ve been stored in brine, then spoon the filling into a piping bag. Cut off the very end (to about the size of the hole in the olive), then pipe little bits of the feta mixture into each olive.
  • When all the olives are filled, begin heating your oil on a medium heat. While it heats up, put your flour, egg and breadcrumbs on three separate dishes. Roll the olives first in the flour, then dip them in the egg using a slotted spoon, then roll them in the breadcrumbs.
  • When the oil is hot enough (test with a cube of bread – it should brown within a minute or so if the oil is hot enough), fry the olives in batches for about 30 seconds or so or until they are a lovely golden brown. Fish them out with the slotted spoon and drain on kitchen paper for a couple of minutes before serving with cocktail sticks for popping them into your mouth!
