SPINACH BEEF PIE

- In a large bowl, combine flour and oats; cut in the butter until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Roll out dough to fit a 9-in. pie plate. Transfer to plate; trim and flute edges., Preheat oven to 400°. In a large skillet, cook the beef, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. Stir in the ketchup and seasonings. Fold in the spinach; cool slightly. Stir in the eggs and 1 cup cheese until combined; spoon into crust., Bake until the center is set, 25-30 minutes. Sprinkle tomato and remaining cheese around edge of pie. Bake until cheese is melted, 5-10 minutes longer. Let stand for 5-10 minutes before cutting.

- For the filling:
- Combine the beef and lamb in a large skillet and cook over high heat until browned and well done. Drain and reserve the drippings. Place the meat in a medium mixing bowl.
- Using the same skillet, caramelize the onions in the meat drippings. When the onions are nice and brown, remove them from the drippings and mix into the meat mixture.
- While the onions are caramelizing, preheat a small skillet with the corn oil. Add the pine nuts and toast until golden brown (they burn quickly, so don't walk away from them). Add the nuts to the meat mixture along with the lemon juice, salt, cinnamon and nutmeg and combine well.
- For the dough:
- Dissolve the yeast, salt and sugar in 1 cup of the warm water. Stir to dissolve the yeast. Add the flour to a large mixing bowl, stir in the yeast mixture and combine well. Add additional water, as needed, to make a medium-sized, stiff dough ball. Knead thoroughly. Cut into 2 equal sized dough balls, cover and let stand for 15 minutes.
- Lightly flour a large work surface and roll out each dough ball until approximately 1/8-inch thick. Cut the dough into circles with a 5-inch round cutter. Cover and let stand a second time for 15 minutes. Try to get as many round dough pieces as you can. Any excess dough can be rolled up and saved for more meat pies.
- Preheat the oven to 350 degrees F. Coat 2 sheet pans with nonstick cooking spray.
- Working quickly, place 5 of the rounds, at a time, on a separate work surface. Spoon a heaping tablespoon of the meat filling into the center of each round. Grabbing the opposite sides of the circle, pinch together in the middle. Then, pinch the rest of the dough closed, forming a triangular pie. Place on the prepared sheet pans. When all the pies have been formed, place the pans in the preheated oven and bake until the edges and bottoms of each pie begin to brown. Rotate the pans from bottom to top during baking. Bake until the pies are golden brown. Remove to a serving platter and serve.

- For the filling:
- Heat the EVOO in a Dutch oven over medium-high heat. Add the meat, brown and crumble. Remove the meat and drain off the fat. Melt the butter in the same pot and add the zest, oregano, garlic, onions and some salt and pepper. Cook to tender, 12 to 15 minutes. Then add the fresh herbs, stir. Add the flour, stir a minute or so and then whisk in the stock. Cook to thicken a little. Add the meat back in along with the lemon juice and spinach. Combine. Turn off the heat, cool and store for a make-ahead meal. Reheat over medium heat until hot. Stir in the feta crumbles just before serving.
- For the puff pastry topper:
- Preheat the oven to 425 degrees F. Flour a work surface and lightly roll out the puff pastry. Cut the size and shape of 1 large casserole or up to 6 individual bowls or large ramekins, using sharp paring knife. Place the dough on a nonstick baking sheet and wash with egg. Bake until evenly puffed and deep golden brown in color.
- Serve the hot filling in a casserole dish or individual bowls topped with the pastry.
KREATOPITA (MEAT PIE WITH PHYLLO CRUST) RECIPE
This pie encased in a phyllo crust can be made with beef or lamb and calls for olive oil, wine, tomato paste, rice, onions, garlic, and herbs.

- Gather the ingredients.
- Sauté the onion and garlic in hot olive oil.
- When the onion softens, add the meat and brown well.
- Dissolve the tomato paste in the wine and stir in, along with salt, pepper, herbs, and water.
- Cover, reduce heat, and simmer for 1 1/2 to 2 hours until the meat is very tender and there's some liquid in the pan. (Cooking time and the amount of water needed will depend on the meat. If more water is needed during cooking, add boiling water.)
- Stir in rice and turn off heat. Prepare the phyllo.
- Preheat oven to 340F (170C). Oil a 16 1/2 x 12 inch pan (or equivalent).
- Place the bottom sheet of phyllo on the bottom and spread filling evenly.
- Place the smallest sheet of phyllo on top of the filling, brush with olive oil, and place the final sheet of phyllo on top, and brush with oil.
- Tuck or crimp edges of the dough, and bake at 340F (170C) for 1 hour.
- The kreatopita is done when the corners of the crust don't stick to the pan.
- Remove the pan from the oven and cover with a clean towel for 1 hour before serving.
- Cut into 4-inch pieces and enjoy!

- Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.

- Place chicken and water in a medium saucepan. Cover and simmer for 30 minutes until the chicken is cooked. Remove chicken from the pan and place on a plate to cool. Reserve one cup of chicken broth and set it aside. Once the chicken is cool enough to handle shred it with two forks. Place the shredded chicken in a large bowl and set it aside.
- While the chicken is boiling, prepare the béchamel sauce. Melt 2 Tbsp butter. Add the onions and garlic and sauté until softened over medium high heat, 3-4 minutes.
- Remove the pan from the heat and stir in 3 Tbsp of flour. Stir until the flour is moistened, then return the pan to the heat. Slowly add the warm milk, mixing continuously. Add 1 c of the chicken boiling liquid (or stock) and mix, heating, until the sauce thickens slightly. Remove the sauce from the heat and mix in the dill, salt, pepper, and nutmeg.
