GREEK LEMON CHICKEN AND POTATOES

Greek Lemon Chicken and Potatoes image

I don't have the energy or courage to cater for a living but, if I did, this Greek lemon chicken and potatoes would be one of my go-to entrees, and not just for big, fat weddings. It's a proven crowd-pleaser, simple to make, and easy on the wallet.

Time 1h

Yield 4

Number Of Ingredients 12

4 pounds skin-on, bone-in chicken thighs
1 tablespoon kosher salt
1 tablespoon dried oregano
1 teaspoon freshly ground black pepper
1 teaspoon dried rosemary
1 pinch cayenne pepper
½ cup fresh lemon juice
½ cup olive oil
6 cloves garlic, minced
3 russet potatoes, peeled and quartered
⅔ cup chicken broth, plus splash to deglaze pan
chopped fresh oregano for garnish

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly oil a large roasting pan.
  • Place chicken pieces in large bowl. Season with salt, oregano, pepper, rosemary, and cayenne pepper. Add fresh lemon juice, olive oil, and garlic. Place potatoes in bowl with the chicken; stir together until chicken and potatoes are evenly coated with marinade.
  • Transfer chicken pieces, skin side up, to prepared roasting pan, reserving marinade. Distribute potato pieces among chicken thighs. Drizzle with 2/3 cup chicken broth. Spoon remainder of marinade over chicken and potatoes.
  • Place in preheated oven. Bake in the preheated oven for 20 minutes. Toss chicken and potatoes, keeping chicken skin side up; continue baking until chicken is browned and cooked through, about 25 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Transfer chicken to serving platter and keep warm.
  • Set oven to broil or highest heat setting. Toss potatoes once again in pan juices. Place pan under broiler and broil until potatoes are caramelized, about 3 minutes. Transfer potatoes to serving platter with chicken.
  • Place roasting pan on stove over medium heat. Add a splash of broth and stir up browned bits from the bottom of the pan. Strain; spoon juices over chicken and potatoes. Top with chopped oregano.

GREEK CHICKEN AND POTATOES RECIPE

Greek Chicken and Potatoes Recipe image

This easy Greek chicken and potatoes recipe is a family favorite. The secret is in the lemon-garlic sauce, which doubles up as a marinade. Whether you choose to marinate the chicken for a couple of hours (I usually don't) or cook it right away, the flavors will surprise you in the best way possible.

Categories     Dinner

Time 1h15m

Number Of Ingredients 17

3 lb chicken pieces, bone in and skin on (I used 2 breasts and 3 legs)
Salt
4 gold potatoes (about 2 lb), scrubbed clean, cut into thin wedges
1 medium yellow onion, halved then sliced
1 tsp black pepper
1 lemon, sliced
1 cup chicken broth
6 to 12 pitted quality kalamata olives, optional
Fresh parsley, for garnish
1/4 cup extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
1/4 cup lemon juice
12 fresh garlic cloves, minced
1 1/2 tbsp dried rosemary (or dried oregano)
1/2 tsp ground nutmeg
Greek Salad
Tzatziki Sauce
Pita Bread

Steps:

  • Preheat oven to 350 degrees F.
  • Pat chicken dry and season generously with salt (lift the skins and apply salt underneath as well). (see optional step in notes)
  • Arrange potato wedges and onions in the bottom of a baking dish or pan. Season with salt and 1 tsp black pepper. Add the chicken pieces (see optional step in notes).
  • Make the lemon-garlic sauce. In a small mixing bowl, whisk together 1/4 cup extra virgin olive oil with lemon juice, minced garlic, rosemary, and nutmeg. Pour evenly over the chicken and potatoes.
  • Arrange lemon slices on top. Pour chicken broth into the pan from one side (do not pour broth over the chicken).
  • Bake in heated oven uncovered for 45 minutes to 1 hour, until chicken and potatoes are tender. (Chicken's internal temperature should register at 165 degrees F). If you like, place the pan under the broiler briefly to allow the chicken skins to gain more color (watch carefully).
  • Remove from heat and add kalamata olives, if you like. Garnish with a little bit of fresh parsley.
  • Serve with Greek salad Taztaziki sauce and a side of pita bread, if you like. Enjoy!

Steps:

LEMON OREGANO GREEK GRILLED CHICKEN

Lemon Oregano Greek Grilled Chicken image

Lemon Oregano Greek Grilled Chicken made with just four simple ingredients, is one of our summer favorites. Juicy and flavorful, this spatchcocked chicken is so easy to cook on the grill. The tart lemon halves only add to the the deliciousness of the chicken when squeezed over before serving.

Provided by Abbe Odenwalder

Categories     Main Course

Number Of Ingredients 5

3 whole lemons
5 cloves garlic, minced
3 T minced fresh oregano or 2 T dried (I used both)
1/4 c extra virgin olive oil
1 whole chicken 3 1/2 to 4 lbs

Steps:

  • In a large measuring cup grate 2 t zest from 1 of the lemons. Split that lemon in half and squeeze 3 T juice into the cup. Add garlic and oregano. Whisking constantly slowly drizzle in olive oil to make a vinaigrette. Season to taste with salt and pepper.
  • Pat chicken dry and place breast side down on large cutting board. Using sharp kitchen scissors, remove the backbone by cutting along either side of it. Turn chicken over and lay flat. Press firmly on breast to flatten the chicken. For added stability run one metal skewer through one thigh and through the breast. Do the same on the other side. Tuck wing tips behind back. Season generously with salt and pepper.
  • Pour half of vinaigrette into a large zip lock bag. Add chicken and massage vinaigrette into the chicken. Let marinate as long as you can.
  • If using charcoal start it now. If using gas which is what I have, preheat covered grill for 10 minutes at highest heat. Turn off half of the burners and place chicken on the cooler side of the grill with legs facing towards the hotter side. Cover grill. Cook until thermometer inserted into deepest part of the breast reads 120, about 30-45 minutes.
  • Carefully flip chicken and place skin side down on the hotter side of the grill with breasts pointed towards cooler side. Reduce heat to medium low. Press down firmly with a large spatula to increase contact between the bird and grill grates-to ensure a crispy skin. Cover and cook until thermometer registers 145 to 150, about 10 minutes longer. If chicken is not cooked all the way slide to cooler part of grill and cook until done. Do not leave lid off through this entire process unless checking temperature. If you do it will take longer to cook.
  • I also grilled some peppers and onions to go with my chicken. Add these if you'd like. When you remove the chicken from the grill add split lemon halves and place cut side down on the hotter part of the grill. Grill until well browned. Carve chicken and drizzle with remaining vinaigrette. Squeeze grilled lemon halves over and serve.

ONE-POT GREEK OVEN-ROASTED CHICKEN AND POTATOES

One-pot Greek Oven-Roasted Chicken and Potatoes image

Slow roasted one-pot Greek chicken with potatoes, lemon and oregano. An incredibly simple recipe that's delicious and meant for sharing.

Provided by Lucy Parissi | Supergolden Bakes

Categories     Main

Time 2h10m

Number Of Ingredients 10

1 large whole chicken without giblets (preferably free-range (about 1.5kg /3.3lbs))
120 ml | 1/2 cup chicken stock or white wine
4 floury potatoes (such as Maris piper, peeled and chopped into large cubes)
1 small red onion (peeled and halved)
4 large garlic cloves (peeled and crushed)
3-4 tbsp virgin olive oil (or more, as needed)
2 tsp dried oregano (or more, as needed)
2 bay leaves
1 lemon
salt and freshly ground pepper

Steps:

  • Preheat the oven to 170C (325F).
  • Pat the chicken dry with kitchen towels (see above) and then rub all over with olive oil. Season generously with salt and pepper and place on a large roasting tin or casserole.
  • Squeeze half the lemon over the chicken and place it in the chicken cavity together with the onion and one bay leaf. Sprinkle with the dried oregano and pour a third of the stock into the pan. Cover with foil and roast for 40 minutes.
  • Take the pan out of the oven and arrange the potatoes, garlic and other bay around the chicken, drizzling with extra olive oil and seasoning with salt, pepper and more dried oregano. Squeeze the other lemon half over the potatoes, place in the pan, and add a bit more stock to the pan if it is dry. Cover with the foil and roast for another 40 minutes.
  • Check the roast, turning the potatoes over. Add more stock if the pan is dry, cover and continue cooking for another 20-30 minutes or until the potatoes are fork tender and the chicken juices run clear. Increase the oven temperature to 220C (425F) and cook for a further 5-10 minutes or until the chicken skin crisps up.
  • Let the chicken rest, covered with foil, for 10 minutes before carving and serving with the potatoes and a Greek salad on the side.

GREEK OREGANO BRAISED CHICKEN DINNER

Greek Oregano Braised Chicken Dinner image

An easy weeknight dinner with chicken thighs, canned tomatoes, Greek oregano, kalamata olives, and feta cheese.

Provided by Joy the Baker

Categories     Dinner

Time 39m

Number Of Ingredients 11

3 tablespoons olive oil
2 pounds boneless skinless chicken thighs season with salt and pepper
1 large yellow onion, coarsely diced (about 1 1/4 cups)
3 cloves garlic, peeled smashed and coarsely chopped
1 cup chicken stock
1 (28-ounce) can whole or crushed tomatoes
Salt and pepper to taste
Kalamata olives, sliced in half
Feta cheese
Greek oregano
Rice or pasta or whatever starch you might like on the side

Steps:

  • In a large deep skillet heat olive oil over medium-high heat. Season chicken pieces on both sides with salt and pepper. Add chicken pieces and let brown, undisturbed for 5 minutes. Flip and cook for 3 minutes more. Some chicken pieces may not be cooked through and that's ok. Place chicken on a plate to the side.
  • Reduce heat to medium, add onions. Cook until translucent and just beginning to brown, about 4 minutes. Add the garlic and cook for 1 minute more. Try not to allow the garlic to burn.
  • Add the chicken stock and scrape any bits off the bottom of the pan. Add the canned tomatoes, using a large spoon to break the whole tomatoes into bit-sized bits. Add a sprinkle of salt, pepper and Greek oregano. Nestle the chicken pieces into the simmering tomatoes and pour in any juices that have accumulated on the plate. Cover, reduce heat to low and simmer for 20 minutes or until the chicken pieces are cooked through.
  • Once the chicken is cooked through, remove from heat and sprinkle generously with olives, feta, and oregano. Give it a taste and season with more salt and pepper or a splash of red wine vinegar as you'd like. Serve over a starch.

GREEK SALAD WITH OREGANO MARINATED CHICKEN

Greek Salad with Oregano Marinated Chicken image

Provided by Dave Lieberman

Categories     main-dish

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 19

1 lemon, juiced
2 tablespoons extra-virgin olive oil
1 teaspoon dried oregano
A couple good pinches salt
10 grinds black pepper
4 (6 to 7-ounce) boneless skinless chicken breasts
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 lemon, juiced
2 cloves garlic, smashed with the side of your chef's knife
1 teaspoon dried oregano
3 pinches salt
10 to 15 grinds black pepper
2 to 3 hearts romaine lettuce
1 English cucumber, peeled, cut in 1/2 lengthwise, then cut into 1/2-inch chunks
3 vine-ripened tomatoes (about 3/4-pound), cored and cut into 1/2-inch chunks
1/2 red onion, very thinly sliced
1/2 cup pitted kalamata olives, coarsely chopped
1/4 cup crumbled feta cheese

Steps:

  • To marinate the chicken: In a non-reactive dish, combine the lemon juice, olive oil, oregano, salt, and pepper and mix together. Add the chicken breasts to the dish and rub both sides in the mixture. Cover the dish with plastic wrap and let marinate in the refrigerator for at least 30 minutes and up to 4 hours.
  • To make the dressing: Combine all the ingredients in a resealable container and shake vigorously. Refrigerate until ready to serve, and then bring to room temperature before tossing salad.
  • Assemble the salad: cut off any dark tips and the bitter white bottoms from the romaine leaves. Cut the lettuce into 1-inch strips and place in a bowl that is large enough to hold all the salad ingredients comfortably. Scatter cucumbers, tomatoes, red onion, olives, and feta over the top. You can prepare the salad up to a few hours in advance. Cover it with a moist paper towel and refrigerate until 30 minutes before serving.
  • To cook the chicken: Heat a nonstick skillet or grill pan over high heat. Add the chicken breasts and cook, turning once, until well browned, about 4 to 5 minutes on each side or until cooked through. Let the chicken rest on a cutting board for a few minutes before slicing it into thin strips.
  • Give the dressing a good shake and pour it into a nice little serving bowl, using the lid to strain out the garlic.
  • Toss salad just before serving and fan chicken out on top.
