Greek Burgers with Tzatziki Sauce image

Hand pattied burgers with Greek seasonings topped with Tzatziki Sauce, onions, cucumber and tomato make these Greek Burgers the perfect summer dinner!

1 ½ lbs 85% lean ground beef (see Note)
½ medium yellow onion (peeled and grated)
2 cloves garlic (peeled and crushed)
2 Tbsp minced fresh parsley
1 Tbsp white wine vinegar
1 tsp salt
1 tsp dried oregano
½ tsp ground black pepper
½ tsp ground cumin
½ tsp ground coriander
¼ tsp crushed red pepper flakes
⅛ tsp ground allspice
4 burger buns
¼ red onion (thinly sliced)
1 tomato (thinly sliced)
¼ English cucumber (thinly sliced)
½ c. Tzatziki Sauce (homemade or store-bought)
4 Tbsp crumbled feta cheese
¾ c. plain Greek yogurt
¼ English cucumber (grated)
1 Tbsp fresh lemon juice
1 Tbsp extra-virgin olive oil
2 cloves garlic (peeled and crushed)
1 ½ tsp minced fresh dill
½ tsp salt
⅛ tsp ground black pepper

Steps:

  • Preheat a grill to medium-high heat.
  • Mix together all ingredients for the burgers in a large bowl. Shape the mixture into 4 equal patties.
  • Cook the burger patties until they're done to your preference, about 7 to 9 minutes per side, flipping once.
  • If desired, split the buns in half and toast them (cut side down) on the grill for a couple minutes.
  • To serve, put each burger on a bun. Top each burger with a slice of red onion, a slice of tomato, a few cucumber slices, 2 tablespoons Tzatziki Sauce, and 1 tablespoon crumbled feta.
  • Stir together all ingredients in a medium bowl.
  • Serve.

Add a Mediterranean twist to your chicken-spinach burger by using a pita bread, cucumber and tzatziki sauce - dinner ready in 30 minutes.

1 medium peeled or unpeeled cucumber
1/2 cup plain Greek yogurt (from 6-oz container)
2 tablespoons chopped onion
2 teaspoons chopped fresh mint
1 lb lean ground chicken
1 cup chopped fresh spinach
1/4 cup chopped pitted kalamata olives
1 tablespoon cornstarch
1 tablespoon chopped fresh oregano leaves
2 cloves garlic, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
2 whole-grain pita breads (6 inch), cut in half to form pockets
1/2 cup chopped fresh tomato

Steps:

  • Set oven control to broil. Chop enough cucumber to equal 1/2 cup; place in small bowl (slice 8 slices from remaining cucumber for sandwiches; set aside). Stir in remaining sauce ingredients; refrigerate until ready to use.
  • In large bowl, mix chicken, spinach, olives, cornstarch, oregano, garlic, salt and pepper. Shape into 4 oval patties, each about 1/2 inch thick. On broiler pan, place patties. Broil with tops about 5 inches from heat 10 to 12 minutes, turning once, until thermometer inserted in center of burgers reads at least 165°F.
  • Place burgers in pita pocket halves. To serve, top each burger with tomato, cucumber slices and about 3 tablespoons sauce.

  • TZATZIKI: Put the strainer over a medium bowl, then put the grated cucumber into the strainer and sprinkle on 1/4 teaspoon salt. Let it sit up to 30 minutes, pressing with the back of a spoon occasionally to squeeze out as much liquid as possible.
  • In the other medium bowl, stir together the strained cucumber, Greek yogurt, garlic, fresh dill, and lemon juice. Add more salt to taste, then stir in the olive oil and black pepper. Cover and keep chilled.
  • Shape the meat into 6 to 8 burger patties, folding 1 to 2 tablespoons of feta cheese in the middle of each (optional, but good). Grill the burgers to desired doneness.
  • Remove from the grill and cover with foil for a 2 to 3 minutes to seal in the juices. Assemble the burgers in the following order: bun bottom, burger patty, pesto, tzatziki, onion, bun top.
