Roasted carrots and potatoes make a nice, easy, yummy side.

1 ¾ pounds small red potatoes, halved
1 ½ pounds carrots, cut into 3-inch pieces
3 tablespoons olive oil
1 tablespoon honey
1 teaspoon lemon zest
½ teaspoon salt
½ teaspoon dried oregano
¼ teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Toss potatoes and carrots in a large bowl with olive oil. Add honey, lemon zest, salt, oregano, and pepper; toss to coat. Spread onto a large rimmed baking sheet.
  • Roast in the preheated oven, stirring occasionally, until tender, about 45 minutes.

Roasted Carrots With Turmeric and Cumin image

These are based on Suzanne Goin's turmeric-spiced root vegetables from her wonderful new book "The A.O.C. Cookbook." I use her technique for roasting the carrots, and use the same spices she uses, but I make the dish with a little less olive oil and butter. Suzanne serves her mix of carrots, turnips, parsnips and rutabagas with Greek yogurt seasoned with makrut lime juice and zest, and mint chutney. They are also delicious on their own.

10 medium carrots, peeled
2 tablespoons extra virgin olive oil
Salt and freshly ground pepper to taste
1 tablespoon fresh thyme leaves
1/2 teaspoon cumin seeds, lightly toasted
1/2 teaspoon coriander seeds, lightly toasted
2 tablespoons unsalted butter, at room temperature
1/2 teaspoon turmeric
1/2 teaspoon Aleppo pepper or mild chili powder
2 tablespoons chopped fresh mint

Steps:

  • Preheat the oven to 425 degrees. Cut the carrots in half lengthwise and crosswise. If the carrots are fat at one end, cut the fat half in half again lengthwise, so that the pieces are more or less equal in thickness. Place in a large bowl and toss with the olive oil, salt and pepper, and thyme leaves.
  • Heat a heavy baking sheet in the oven for 3 to 4 minutes. Remove from the oven and place the carrots on it in one layer. Roast for 20 to 25 minutes, stirring the carrots every 10 minutes. They should be slightly caramelized and tender.
  • While the carrots are in the oven place the cumin and coriander seeds in a mortar and pestle and grind. Add the soft butter, turmeric and Aleppo pepper or chili powder and stir with the pestle until well amalgamated. Transfer to a large pan.
  • Remove the carrots from the oven when done and add to the pan with the spice butter and the mint. Toss together, taste and adjust salt and pepper. Serve from the pan or transfer to a platter.

Arakas laderos is a Greek, vegan or Lenten dish, with peas, carrots, potatoes and herbs cooked, in a rich olive oil tomato sauce.

800 grams fresh peas or 500 grams frozen peas
1/4 cup olive oil
1 onion, finely chopped
1 clove garlic, finely chopped
1 - 2 potatoes, cut in small cubes (optional)
3 - 4 medium carrots, peeled and shredded
4 ripe tomatoes or 500 grams tomato passata
2 cups water
Salt and freshly ground black pepper, to taste
½ cup of parsley, finely chopped
¼ cup dill, finely chopped

Steps:

  • Heat the olive oil in a pot and sauté the onion until translucent and soft.
  • Add the garlic and sauté for a few seconds until fragrant.
  • Add the fresh or frozen peas (no need to thaw) and stir for 2 minutes.
  • Add carrots (and potato if added) and season with salt and freshly ground black pepper.
  • Add tomato purée and water, reduce heat and simmer until cooked, for about 45 minutes, stirring occasionally. Add more water if necessary, especially if adding the potato.
  • Five minutes before the end add the parsley and dill and mix.
  • Serve with Greek feta which is a must for all "ladera" dishes and crusty bread to mop up the delicious sauce.

A couple of small tips make all the difference in making the BEST roasted carrots! Roasted at a high temperature, these carrots are perfectly tender with beautiful caramelized edges. So many ways to flavor roasted carrots, whether you like them sweet or savory.

2 lb carrots (pealed and cut on the diagonal)
Extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
Kosher salt
Black pepper
Spices of your choice
1 garlic clove (finely minced)
1/2 lime (juice of)
Parsley for garnish

Steps:

  • Heat your oven to 400 degrees F.
  • Place the sliced carrots in a large mixing bowl, and add a generous drizzle of extra virgin olive oil (about 2 tbsp or so.) Season with kosher salt and black pepper. Toss to combine.
  • Transfer the carrots to a baking pan, making sure to spread them well in one single layer.
  • Roast in the heated oven for 20 to 30 minutes or until tender and slightly caramelized. Check part-way through and turn carrots over to get even color on both sides.)
  • Remove from oven. Transfer the roasted carrots to a serving bowl. Here, you can add flavor to your liking. To follow the recipe, season with turmeric and harissa spice blend. If you like, add a little minced garlic and a splash of lime juice. Toss to combine. Garnish with fresh parsley.

Often overlooked as a grilling veggie despite their deliciously sweet and smoky flavor on the grill, these simple grilled carrots are a favorite.

12 carrots (whole; peeled and washed)
3 tablespoons olive oil
1 dash kosher salt (or to taste)
1 dash freshly ground black pepper (or to taste)
1/2 teaspoon rosemary
1/2 teaspoon thyme

Steps:

  • Gather the ingredients.
  • Heat the grill to medium-high heat, 400 F to 425 F.
  • While the grill is heating up, trim the leafy tops and any fibrous ends of the carrots. Wash and peel the carrots, patting them with a paper towel to dry. You can cut big carrots in half lengthwise if thick enough to still be at least 1/2 to 3/4-inch thick.
  • Place a single layer of carrots in a baking dish and coat lightly with olive oil.
  • Sprinkle the oiled carrots with the desired amount of salt and pepper, then season with rosemary and thyme.
  • Once the grill is heated, place the carrots on the grill (cut-side down if cut in half lengthwise) and cook covered until the carrots develop grill marks, about 7 to 8 minutes per side.
  • Once flipped, you will know when the carrots are done when both sides are seared (or they begin to brown) and can be pierced with a fork with a soft crunch in the middle.

Best Greek potatoes with lemon and garlic!

1 tsp black pepper
1 tsp Sweet Paprika
1 tsp Organic Rosemary
4 large baking potatoes, peeled, washed, cut into wedges
8 large garlic cloves, chopped
4 tbsp Private Reserve Greek extra virgin olive oil
1 lemon, juice of
1 1/4 cup vegetable or chicken broth
1/2 cup grated Parmesan cheese
1 cup parsley leaves, roughly chopped

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, mix together spices. Set aside.
  • Place potato wedges in a large lightly-oiled baking dish (I used this one) and sprinkle with the spice mix. Toss potatoes together briefly to evenly distribute spices.
  • In a bowl, whisk together chopped garlic, olive oil, lemon juice and broth. Pour into baking dish with potatoes.
  • Cover the baking dish with foil and place in the 400 degree F-heated oven for 40 minutes.
  • Remove from oven briefly. Uncover and sprinkle Parmesan cheese on the potato wedges. Return to oven uncovered to roast for another 10-15 minutes or until potatoes are cooked through and have turned a nice golden brown with a little crust forming.
  • If needed, to add more color, you may place the dish under the broiler for 3 minutes or so, watching carefully.
  • Remove from oven. Garnish with fresh parsley before serving. Enjoy!

1 onion diced
2 carrots sliced
1 potato cut in bite size pieces
2 medium grated tomatoes or 10-12 ounce can of chopped tomatoes
⅓ cup olive oil
2-3 tablespoons chopped dill

Steps:

  • Heat olive oil in a medium sized pot.
  • Sauté onions until soft. Add carrots and potatoes and sauté 3-4 minutes more.
  • Add peas and heat and mix until all peas are covered in the olive oil.
  • Add the tomato, dill, pepper and a half teaspoon salt. Add enough hot water so that the peas are covered just a bit (about ¼ cup).
  • Mix well and bring to a boil. Then lower heat and simmer for 30 minutes, until peas are soft and water is gone-they should only be left with the olive oil.
  • Serve at room temperature with feta and bread. Add salt as needed.
